BEST EVER SWEET PICKLES
I pack away homegrown cucumbers every summer. This recipe is based on the pickled veggies in Brown Eggs and Jam Jars by Aimee Wimbush-Bourque, but I've made it less mustardy and more garlicky to fit my family's tastes. This method keeps them incredibly, refreshingly crunchy. -Ellie Martin Cliffe, Taste of Home Digital Deputy Editor

SWEET PICKLE RELISH
After much experimentation with ingredients and ratios, this is my favorite sweet pickle relish. I usually can it when the burpless cukes from the garden get away from me.

Steps:
- Combine cucumbers, onions, red bell pepper, and green bell pepper in a large bowl; add salt and pour in enough cold water to cover. Allow to soak for 2 hours. Thoroughly drain in a colander.
- Pour vinegar into a large, heavy stainless steel pot; add celery seed and mustard seed. Stir sugar into mixture and bring to a boil, stirring until sugar is dissolved, 2 to 3 minutes. Add the drained vegetable mixture and return to a boil, about 10 minutes. Remove pot from heat.
- Sterilize the jars and lids in boiling water for at least 5 minutes. Pack relish into hot, sterilized jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
- Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 10 minutes.
- Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

SWEET-AND-SOUR QUICK PICKLES
Inspired by classic bread-and-butter pickles, these sweet-and-sour pickles are a bit more sour than sweet with a hint of mustard and dill. Apple cider vinegar lends a fruitier flavor to the no-cook brine than white vinegar, which is often used for making cucumber pickles.

- Pickled Okra. This easy pickling recipe is very forgiving. You'd have to work to mess it up. If you've got tiny okra, then use half-pint jars instead.
- Pickled Green Tomatoes. Enjoy the summer's bounty of beautiful green tomatoes long after the temperature drop. All it takes is an easy brine made up of six simple ingredients.
- Quick Pickled Radishes with Lemon, Ginger, and Maple. Flavored with lemon, maple syrup, and grated fresh ginger, these pickled radishes are a bright addition to any sandwich or party platter.
- Kosher Dill Pickles. These classic pickles are crisp, sour, and a sandwich's best friend. Like most pickles, they'll reach their best flavor and texture after three weeks in the jars.
- Pickled Beets. Remove skins from roasted beets while they're still warm by gently wiping them with a paper towel. To create a brine, use dried oregano, thyme, and tangy apple cider vinegar.
- Basic Pickle Brine. Four ingredients are all you need to transform cherry tomatoes, cucumber, zucchini, okra, or red onions. You name it, and this brine can transform any vegetable into a delicious, tangy treat.
- Quick Pickled Slaw. The ultimate way to add color and texture to any meal, the veggies in this slaw will soften just a bit but retain a satisfying crunch.
