SWEET AND SOUR CABBAGE BORSCHT

Sweet and Sour Cabbage Borscht image

This is like have stuffed cabbage in a soup and it is super easy and can be made in your crockpot. It is no secret that Jews love sweet and sour and I think that is why so many of us love chinese food! Using a cheap piece of beef and ingredients you probabaly have already on hand you can fill those stomachs quite easily and they...

Categories     Vegetable Soup

Time 8h15m

Number Of Ingredients 9

2 lb boneless chuck roast, cut into 2 or 3 inch chunks
2-4 qt water, 2 for crockpot method, 4 for stovetop method
1 Tbsp salt
1 large head of green cabbage, about 3 lbs.
1 1/2 c ketchup (trust me, it works great)
1-6 oz can tomato paste
2 Tbsp sugar
1/2 tsp (or more) freshly ground pepper
1-2 Tbsp fresh lemon juice ( to taste)

Steps:

  • 1. Crockpot method: Core your cabbage and slice to ¼-½ thickness. Dump everything except lemon juice, (make sure you only add the 2 quart amount of water) into a large crockpot and cook, on low 10-12 hours or on high, 4-6 hours. Turn off heat and let rest for several hours. Skim off most of the fat that rises to the top. Even better refrigerate overnight and remove the congealed fat and then reheat on the stove (never reheat something in a crockpot). Add the lemon juice to the flavor you like. This is wonderful with homemade bread of your choice.
  • 2. Oven method: combine meat, water and salt in a 5-quart pot. Bring to a simmer over high heat. Lower heat and simmer, uncovered, for 1 hour. After the hour, add your cored and sliced (see above) cabbage, ketchup, tomato paste, and sugar to the pot. Return to a simmer and cook, covered, for 2 hours longer, till meat is falling apart. Turn off heat and let rest for several hours. Skim off most of the fat that rises to the top. Even better refrigerate overnight and remove the congealed fat and then reheat adding the lemon juice to your taste. This is wonderful with homemade bread of your choice.

SWEET AND SOUR GERMAN GREEN CABBAGE RECIPE, HEALTHY VEGAN SIDE DISH

Sweet and sour German green cabbage recipe, healthy vegan side dish image

Provided by Rok

Categories     Main Course     Side Dish

Time 45m

Number Of Ingredients 14

1 head cabbage, approx. 42 oz. cut into strips
2 medium onions, chopped
1 tsp garlic, finelly chopped
2 tsp cumin, whole seeds
1 leaf bay leaf
1 tsp salt
1/2 tsp black pepper, ground
2/3 cup tomato sauce
1 tsp paprika
1 tbsp sugar
1 tbsp all purpose flour
2 tbsp parsley, chopped
2 tbsp olive oil
2 1/2 cup water

Steps:

  • The first thing you need to do is add oil and onions into a quite large pot. Fry the onions for about five minutes until they are soft and start to caramelize just a bit.
  • Next, add the salt to soften the onions, pepper, and bay leaf to enhance the flavors. To get most out of cumin flavor, fry it together with the onions. We are actually making sort of a paste here, which will be a base for the cabbage.
  • Next is garlic. It would be best if you didn't fry the garlic for a long time. It is enough just to smell the aroma of the garlic after you put it in - that's after a few seconds. Now comes the sweet in the cabbage part, so add the sugar. You should just slightly caramelize it for about a minute and not brown it.The sweetness of the paprika and tomatoes will add the aroma and color. Cook all these ingredients for about 15 minutes, so you get a nice and smooth paste and then add shredded cabbage.
  • First, you need to coat the cabbage with a paste. There is quite a lot of cabbage at the beginning, but after you sauté it for a few minutes, the cabbage will shrink, and you will be able to mix everything easily. To help the cabbage sauté, just add about half a cup of water, cover the pot with a lid and let it sauté for a few minutes. Then add the flour, mix a bit and sauté for a minute or two. Then comes the parsley, another mix, about 2 cups of water and another mix. Cover it with a lid and cook on low to medium temperature until the cabbage is soft, that's about 20 minutes to half an hour, mixing a few times in between.
  • This dish goes perfectly together with mashed potatoes, or you can eat it for the main course.
  • Enjoy

SWEET AND SOUR BORSCHT SHOOTERS

Sweet and Sour Borscht Shooters image

This is the classic sweet and sour summer beet soup served as a shooter any time of the year. You can add a little vodka to it if you like, but I usually leave it out. The piquant taste is enough for us. Fix a tray of shooters at once so people can just help themselves.

  • Preheat the oven to 400°. In a shallow baking dish, cover the beets with foil and bake until tender, about 1 hour. When cool enough to handle, peel the beets and cut them into 1/2-inch dice.
  • Meanwhile, season the meat with salt and pepper and toss with flour just until lightly coated. In a large enameled cast-iron casserole, heat 1 tablespoon of the oil. Add half of the meat and cook over moderately high heat until browned all over; transfer to a bowl with a slotted spoon. Repeat with 1 tablespoon of oil and the remaining meat.
  • Add the remaining 1/4 cup of oil to the casserole. Stir in the red cabbage, onions, fennel, garlic and paprika. Cook over moderate heat, stirring occasionally, until the vegetables begin to soften, about 10 minutes. Add the vinegar and honey and cook over moderately high heat until the vegetables start sticking to the casserole and browning lightly, about 3 minutes. Add the beets, browned meat, chicken broth and thyme sprigs and bring to a boil. Cover and simmer over low heat until the meat is very tender, about 1 hour and 15 minutes.
  • In a medium bowl, mix the sour cream with the horseradish and chives and season with salt and pepper.

  • Prepare your vegetables. Wash beets and potatoes carefully with soapy water. Peel the carrots.
  • Place a large pot on the stovetop and heat to medium-high heat. Once warm, add a tablespoon of vegetable oil to the bottom.
  • Grate, finely dice or shred the beets and carrots (you can use a food processor). This stage sparks controversy and bitter arguments among many, but here are my two cents: grating really does produce the best results, and it’s what most Russian babushkas would do. However, I really am lazy and prefer to shred my root vegetables in a food processor, while as many a fine borscht contains finely diced vegetables. To each their own, and I encourage you to try all three methods and pick your favourite.
