BAKED PARMESAN TOMATO SLICES



Baked Parmesan Tomato Slices image

This is wonderful to make with your garden-ripe summer tomatoes! To save time prepare the mayonnaise mixture up to a day in advance. Since we love lots of spice, I use Tabasco brand spicy brown mustard but any brand brown mustard will do for this recipe, I also add in a pinch of cayenne pepper too! Recipe can easily be doubled.

3 large firm ripe tomatoes (sliced about 1/2-inch thick or a bit smaller)
4 tablespoons mayonnaise
5 tablespoons parmesan cheese (can use a bit less)
1 tablespoon Dijon mustard
1 tablespoon brown mustard
1 teaspoon dried oregano (or to taste)
salt and pepper
1/2 cup grated mozzarella cheese (or to taste)
chopped fresh parsley

Steps:

  • Set oven to 350°F.
  • Lighly grease a large baking sheet.
  • In a small bowl combine the mayonnaise, Parmesan cheese, Dijon mustard, brown mustard and oregano; mix well to combine then season with salt and pepper to taste (I use seasoned salt for this).
  • Using a spoon top each tomato slice with a small amount of mayo mixture.
  • Sprinkle each slice with mozzarella cheese, then sprinkle with chopped parsley.
  • Bake for about 10-15 minutes or until golden brown.

4 medium potatoes, peeled (1 pound)
1 egg
3 tablespoons Dijon mustard, Grey Poupon Country Dijon
1 tablespoon butter or 1 tablespoon margarine
1/4 cup heavy cream
6 medium tomatoes
buttered bread crumb

Steps:

  • In medium saucepan, cook potatoes until tender.
  • Drain.
  • Mash.
  • Add egg, mustard, butter and heavy cream.
  • Continue mashing until smooth.
  • Slice tops from tomatoes.
  • Scoop insides to form shell.
  • Arrange in shallow baking pan.
  • Fill with potato mixture.
  • Sprinkle with crumbs.
  • Bake in preheated 450ºF oven 8 to 10 minutes.

  • Combine remaining ingredients.
  • Spread sauce on tomatoes.
  • Bake in preheated 500ºF oven 5 to 8 minutes or until heated thoroughly.

4 ripe tomatoes, sliced
4 tablespoons mayonnaise
4 tablespoons Parmesan cheese
1 tablespoon Dijon mustard
1 tablespoon brown mustard
1 teaspoon dried oregano
salt and pepper to taste
1 teaspoon chopped fresh parsley
¼ cup shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Arrange tomato slices in a single layer on a baking sheet. In a small bowl, mix together mayonnaise, parmesan, Dijon mustard, and brown mustard. Season with oregano, and salt and pepper to taste. Use a spoon to top each tomato slice with a small amount of the mayonnaise mixture. Sprinkle with mozzarella , and then top with parsley.
  • Bake in preheated oven for approximately 15 minutes, or until golden brown. Serve immediately.

FRIED GREEN TOMATOES WITH DIJON PEPPER DIPPIN' SAUCE



Fried Green Tomatoes with Dijon Pepper Dippin' Sauce image

This recipe is a new twist on one in The Lady & Sons Savannah Country Cookbook. Dip into the Dijon sauce with care-it's a little on the hot side. We like to put a small dollop of roasted red pepper vinaigrette on each tomato slice.

Number Of Ingredients 15

3 or 4 large firm green tomatoes
Salt
2 cups vegetable or peanut oil for deep-frying
1 cup buttermilk
2 cups self-rising flour
Dijon Pepper Dippin' Sauce (recipe follows)
1 cup Dijon mustard
1/2 cup mayonnaise
2 tablespoons balsamic vinegar
1 tablespoon white pepper
4 tablespoons coarsely ground black pepper
1/2 cup vegetable oil
1 tablespoon red pepper flakes
1 tablespoon whole peppercorns
(makes 2 cups)

Steps:

  • Slice the tomatoes 1/4 inch thick. Lay them out in a shallow baking pan and sprinkle with salt. Place the tomato slices in a colander and allow time for the salt to pull the water out of the tomatoes (30 minutes should do it).
  • In a skillet heat the oil for deep-frying over medium-high heat.
  • Dip the tomatoes into buttermilk, then dredge them in flour. Deep-fry until golden brown.
  • In the bowl of a food processor, combine the mustard, mayonnaise, balsamic vinegar, white pepper, and 1 tablespoon of the black pepper, and beat until just blended; set aside. In a small saucepan combine the oil, the remaining 3 tablespoons of black pepper, the red pepper flakes, and the whole peppercorns. Heat the oil until hot, then reduce the heat to low and simmer for 20 minutes. Allow to cool, then strain. With the food processor running, drizzle the oil into the mayonnaise mixture. Continue processing for 2 minutes.
