Time 1h20m

Number Of Ingredients 11

6-8 large apples (peeled, cored and sliced approximately 1/4" (approximately 9 cups of apples))
2/3 cup granulated sugar
1 tsp ground cinnamon
2 cups all-purpose flour
1 1/2 cup granulated sugar
2 large eggs
2 tsp baking powder
1 tsp cinnamon
3/4 tsp salt
2/3 cup butter, melted
ice cream & caramel sauce (if desired for topping)

Steps:

  • Preheat oven to 350 degrees F. Combine 2/3 cup sugar and 1 tsp cinnamon in a small bowl.
  • In a large bowl, mix apples with most of cinnamon and sugar mixture. Then place apples into a 13x9 inch baking dish. Sprinkle remaining cinnamon and sugar mixture over apples and gently mix to combine.
  • In a separate bowl, combine flour, sugar, eggs, baking powder, cinnamon and salt and mix with a fork until mixture looks like coarse crumbs. Sprinkle mixture over apples in baking dish.
  • Drizzle melted butter evenly over crumb mixture. Bake for 45-55 minutes or until starting to turn lightly golden brown. Remove from oven and allow to cool slightly.
  • Best served warm, with individual servings topped with a scoop of ice cream and caramel sauce.

Time 1h35m

Yield 4 to 6 servings

Number Of Ingredients 12

1 cup all-purpose flour
1 tablespoon baking powder
1/2 teaspoon kosher salt
1 1/2 cups granulated sugar
1 cup half-and-half
1/2 cup (1 stick) unsalted butter, melted
2 cups mixed berries (blackberry, raspberry and blueberry work well)
1/2 cup brown sugar
1 tablespoon freshly squeezed lemon juice
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
3 small Golden Delicious apples, peeled and sliced (about 3 cups)

Steps:

  • Preheat the oven to 375 degrees F.
  • Whisk together the flour, baking powder, salt and 1 cup granulated sugar in a bowl. Stir in the half-and-half, mixing just until combined.

APPLE COBBLER FOR TWO

Apple Cobbler for Two image

You won't have days and days of leftover cobbler with this perfectly scaled-down recipe. It makes just enough for two!

Provided by Food Network Kitchen

Categories     dessert

Time 1h15m

Yield 2 servings

Number Of Ingredients 12

1 large Honeycrisp or 2 Gala apples (about 12 ounces), peeled, cored and cut into 1/4-inch pieces (2 generous cups)
2 heaping tablespoons plus 1 teaspoon sugar
1 teaspoon all-purpose flour
1/4 teaspoon ground cinnamon
1/8 teaspoon freshly grated nutmeg
1 tablespoon cold unsalted butter, cut into small pieces
1/4 cup all-purpose flour
Heaping 1/4 teaspoon baking powder
Pinch fine salt
2 teaspoons sugar
3 tablespoons heavy cream
2 small scoops vanilla ice cream, for serving

Steps:

  • For the filling: Preheat the oven to 400 degrees F. Toss the apples with 2 heaping tablespoons of the sugar, the flour, cinnamon and nutmeg. Add the butter, and toss. Divide the filling between two 6-ounce, 3 1/2-inch ramekins, tent each loosely with foil and bake until the apples are tender and the juice is bubbling, about 35 minutes. Remove the ramekins from the oven, remove the foil, give the apples barely a stir with a fork and press the top into the juices.
  • For the topping: Whisk together the flour, the baking powder, salt and 1 teaspoon of the sugar in a small bowl. Quickly stir in the heavy cream, then work the dough with your fingers as if you were working butter into pie dough, to make moist, slightly flattened chunks of dough.
  • Top each ramekin with dough, dividing evenly. Sprinkle each with 1/2 teaspoon of the remaining sugar, and bake until the topping is browned and crisp, 12 to 15 minutes. Let cool slightly, top with ice cream and serve.
