3/4 pound sushi-grade tuna steak, sliced 3/4 inch thick
Good olive oil
Kosher salt and freshly ground black pepper
Grated zest of 1 lime
3 tablespoons freshly squeezed lime juice
1 1/2 teaspoons soy sauce
6 dashes Tabasco sauce
1/4 cup minced scallions, white and green parts (2 scallions)
2 teaspoons minced fresh jalapeño pepper, seeds removed
1 ripe Hass avocado
1 shallot, halved lengthwise and thinly sliced crosswise
2 tablespoons good red wine vinegar
2 tablespoons unsalted butter
6 top-split hot dog buns, such as Pepperidge Farm
Chipotle Mayonnaise, recipe follows
1 cup good mayonnaise, such as Hellmann's
1 canned chipotle pepper in adobo sauce
2 teaspoons adobo sauce (from the can of chipotles)
1 teaspoon freshly squeezed lime juice
Kosher salt

Steps:

  • Heat a medium (10 to 11-inch) dry cast-iron skillet over high heat for 3 minutes. Brush the tuna all over with olive oil and sprinkle it generously with salt and black pepper. Sear the tuna in the skillet for exactly one minute on each side. (The inside will be raw.) Transfer to a cutting board, cut into 1/2 to 3/4-inch dice, and set aside.
  • In a large bowl, combine 1/4 cup olive oil, the lime zest, lime juice, soy sauce, Tabasco, 1 1/2 teaspoons salt, and 1 teaspoon black pepper. Add the tuna, scallions, and jalapeño. Cut the avocado in half, remove the pit, peel, and cut 1/2 to 3/4-inch dice. Carefully stir the avocado into the tuna mixture and set aside for 20 minutes.
  • Meanwhile, combine the shallot and vinegar in a small bowl and set aside.
  • Place the butter in a large (12-inch) sauté pan over medium-high heat and heat until the butter sizzles. Without opening the buns, toast them on each side for one minute, until nicely browned. Line the buns up on a platter, cut sides up, and spoon the tuna mixture into the buns. Drizzle with the Chipotle Mayonnaise and sprinkle on the pickled shallots. Serve while the buns are warm.
  • Place the mayonnaise, chipotle pepper, adobo sauce, lime juice, and 1 1/4 teaspoons salt in the bowl of a food processor fitted with the steel blade. Process until smooth. Refrigerate for up to a week.

Super easy and super delicious! Once you master the art of rolling, I guarantee you will never want to go out and pay top dollar for your sushi fix again! Depending on how big you roll your sushi, you may need more or less sushi rice. Serve with soy sauce and wasabi paste.

⅓ cup Japanese sushi-style rice
⅓ cup water
2 ¼ teaspoons rice vinegar
2 ¼ teaspoons white sugar
1 teaspoon salt
4 ounces sashimi-grade yellowfin tuna, cut into small chunks
⅓ cup mayonnaise
3 tablespoons chile oil, or more to taste
1 tablespoon sesame oil
1 tablespoon sriracha sauce
1 green onion, diced
3 sheets nori, cut in half
½ small ripe avocado, thinly sliced
¼ English cucumber, cut into matchsticks

Steps:

  • Rinse rice in a strainer until water runs clear.
  • Combine rice and water in a saucepan; bring to a boil. Reduce heat to low, cover, and cook until rice is tender and water is absorbed, about 20 minutes.
  • Combine rice vinegar, sugar, and salt in a small saucepan over low heat; stir until sugar is dissolved, 1 to 2 minutes. Pour over rice; stir until rice cools and looks dry.
  • Mix tuna, mayonnaise, chile oil, sesame oil, sriracha sauce, and green onion in a bowl with a fork, mashing to break up some of the chunks. Leave a few chunks intact for texture.
  • Cover a bamboo sushi rolling mat with plastic wrap. Lay 1 nori sheet, shiny-side down, on the mat. Spread a thin layer of rice over the nori. Layer avocado slices across the rice. Flip nori sheet so avocado is against the mat. Spread a generous layer of tuna mixture 3/4 of the way down the back of the nori; top with cucumber matchsticks.
  • Roll up sushi using the rolling mat, tucking in ends with the plastic wrap. Remove plastic wrap and place sushi roll on a plate. Repeat with remaining nori, rice, avocado, tuna mixture, and cucumber.

Inside-Out Avocado Rolls With Chives and Cashews image

The nutty, salty cashews and creamy avocado make this sushi roll great. Use Easy Sushi Rice (In Rice Cooker) #315511, you will need about one-third of this recipe, prep time does not include cooking the rice.

1 large avocado (or 2 small avocado)
2 teaspoons lemon juice
2 tablespoons mayonnaise (preferably Japanese)
1/4 teaspoon sea salt
1 teaspoon wasabi paste (optional)
3 ounces cashews (roasted, salted cashews work well)
3 -4 chives
2 sheets nori, seaweed cut in half
2 cups cooked rice, seasoned with sushi vinegar seasoning (see #315511 Easy Sushi Rice)
1/4 cup rice vinegar

Steps:

  • Peel the avocado and cut into small chunks. Put in a bowl with the lemon juice, mayonnaise, salt and wasabi, if using. Toss and mash slightly, but not until mushy. Divide into 4 portions.
  • Chop the cashews very finely and put in a bowl. Chop the chives very finely and mix with the cashews. Divide into 4 portions.
  • Divide rice into 4 portions.
  • Mix 1 cup water with the rice vinegar in a small bowl and set aside to use as hand vinegar, to rinse your hands and keep the rice from sticking.
  • Put a sheet of plastic wrap on the rolling mat. Put 1/2 sheet of nori on top, rough side up with the long edge towards you. Dip your fingers in the hand vinegar, take 1 portion of the seasoned, vinegared rice and spread it out in a thin layer over the nori, leaving about 3/4" bare on the far edge.
  • Sprinkle one portion of the nut and chive mixture on top of the rice and press it in gently with your fingers.
  • Carefully lift the whole thing up and flip it over so the rice is face down on the plastic wrap. To make this easier, you can lay another piece of plastic wrap on top of the rice, flip everything over, and remove the extra piece of plastic wrap next to the nori.
  • Put 1 portion of the avocado in a line along the long edge of the nori closest to you.
  • Using the rolling mat, carefully roll it up, then cut in half, then cut each half into 3 pieces, giving 6 pieces.
  • Repeat to make 4 rolls, for a total of 24 pieces.

This recipe tastes very similar to the spicy tuna rolls found in Japanese restaurants, but the best part is that you use canned tuna rather than raw tuna. Don't get me wrong, I love raw tuna; I just don't feel comfortable playing with it at home. I created this recipe when I wanted sushi rolls but didn't have a lot of fresh ingredients on hand. This can also be adapted to use in an asian salad. I plan on putting up that recipe at a later time. Note: the sumeshi (the term for cooking rice in the japanese style) portion of the recipe is copied from Sushiday.com.

1 1/2 cups uncooked short-grain rice
1 1/2 cups water
6 tablespoons rice vinegar
5 tablespoons sugar
2 (6 ounce) cans tuna (albacore or regular)
1/3 cup mayonnaise
1 tablespoon chili paste
2 teaspoons chili oil
1/2 teaspoon garlic powder
1/2 teaspoon ginger powder (if using fresh ginger use 1/4 tsp)
1/2 teaspoon sesame oil
4 green onions, chopped
8 -10 lettuce leaves

Steps:

  • Sumeshi: Rinse the rice thoroughly to drain some of the gluten from the rice.
  • Cook the rice, using equal parts rice and water. I use a rice cooker, but you can also cook it on the stove if you don't have a rice cooker.
  • Put the rice vinegar and sugar in a small pot over medium heat.
  • Stir until the sugar has melted into the rice vinegar.
  • Once the rice is finished cooking, take the rice out of the pot and put it in the hangiri (japanese wooden bowl), or a large bowl if you don't have a hangiri.
  • Cool the rice and rice vinegar mix, then slowly pour the rice vinegar mix over the rice, using a cutting motion to mix it into the rice with the rice paddle (or wooden spoon). Keep a little leftover to use in the sushi preparation.
  • To Prepare the sushi: Drain your tuna and mix all of the tuna salad ingredients together.
  • Now take one piece of nori and place it on your sushi roller (recommended for getting tight rolls but in a fix you could use a stiff towel). Wet your fingers with the cooled rice vinegar mixture and press a fairly thin sheet of rice onto the bottom 3/4 of the sheet, leaving room at the top of your roll to seal it.
  • Using a spoon, place a generous line of tuna a little lower than the half way point on your rice square. Then add a line of your lettuce leaves on top of the tuna.
  • Begin rolling from the bottom, tucking firmly with each roll to tighten it. Be careful not to smoosh it though, it's a delicate balance but you'll get the hang of it after awhile.
  • Once you've gotten to the blank top of your roll take a little of the rice vinegar mixture and apply it to the inside, roll it up and use a little more on the closed roll if it's not fully sealed.
  • Using a sharp, wet knife cut into bite sized pieces. You can serve this with the traditional wasabi-soy sauce mixture but it's so flavorful it's not necessary.

This is a simple roll to introduce the technique for uramaki, also known as inside-out rolls. These types of rolls are commonly found in sushi restaurants in the United States, although not in Japan. The technique allows for slightly more room inside the roll to add ingredients of your choice. Try scallion, cucumber or sprouts! The sesame seeds give a nice nutty flavor (and some calcium) to the roll but can be omitted if desired.

4 half sheets sushi nori
3 cups prepared sushi rice
2 teaspoons toasted sesame seeds, optional
6 ounces fresh sushi-grade tuna, sliced into 1/4-inch-thick pieces, each about 4 inches long
1 medium avocado, sliced into 1/8-inch-thick pieces
Soy sauce, for serving, optional
Pickled ginger, for serving, optional
Wasabi, for serving, optional

Steps:

  • Lay a half nori sheet textured-side up (smooth/shiny-side down) on a cutting board with one of the longer sides closest to you. Dip your fingertips in a small bowl of ice water and moisten the sheet just until lightly coated with water.
  • Using your fingertips, gently spread 3/4 cup of prepared sushi rice evenly over the entire sheet. Sprinkle 1/2 teaspoon of sesame seeds onto the rice. Flip the nori over, keeping the long side of the sheet closest to you.
  • Place 1 1/2 ounces of tuna lengthwise down the nori. Place 2 to 3 slices of avocado next to the tuna (make sure the avocado is snug next to the fish). Moisten your fingers and use your fingertips to gently lift the edge of the nori closest to you and tightly roll it over the top of the tuna and avocado. Tuck the edge of the nori around the tuna and avocado and continue rolling the sushi roll over until the seam is on the bottom of the roll.
  • Place the roll on a makisu (sushi rolling mat) wrapped in plastic wrap and use the makisu to lightly press to shape the roll.
  • Dip the tip of a knife into the bowl of ice water and allow the water to run down the blade. Slice the roll into 8 even pieces. Repeat with the remaining ingredients, making a total of 4 rolls.
  • Serve with soy sauce, pickled ginger and wasabi if desired.
