1 head cauliflower
1 tablespoon olive oil
½ cup flour
1 teaspoon garlic salt
½ cup whole milk
1 teaspoon hot sauce

Steps:

  • Preheat oven to 450˚F (230˚C).
  • Cut the head of cauliflower in half. Pluck bite-sized florets from each half. Trim bottoms of florets as necessary.
  • In a medium bowl, mix the batter ingredients.
  • Add cauliflower to the batter. Stir so each floret is fully coated.
  • Line a baking sheet with parchment paper. Spread cauliflower florets on the baking sheet and drizzle with olive oil.
  • Bake for 20 minutes.
  • Remove the cauliflower from the oven and toss with buffalo sauce.
  • Return cauliflower to oven and bake for an additional 10 minutes until browned to your liking.

A vegetarian twist on a classic dish. These baked Buffalo cauliflower bites pair the great taste of Buffalo sauce with a tangy blue cheese dressing.

¼ cup sour cream
3 tablespoons Stella® blue cheese crumbles
1 tablespoon whole milk
1 pinch garlic powder
1 pinch onion powder
1 pinch salt
¼ cup whole milk
¼ cup lager beer
½ cup all-purpose flour
1 teaspoon garlic powder
¼ teaspoon onion powder
½ teaspoon baking powder
¼ teaspoon salt
1 small head cauliflower, trimmed and cut into florets
Cooking spray
2 tablespoons unsalted butter
½ cup Buffalo wing sauce
6 celery stalks, trimmed and cut into 6-inch pieces, or more to taste

Steps:

  • To make the sauce, combine the sour cream, blue cheese, whole milk, garlic powder, onion powder, and salt in a medium bowl. Cover with plastic wrap and transfer to the refrigerator until serving.
  • Preheat the oven to 450 degrees. Line a baking sheet with parchment or foil and set aside.
  • In a medium bowl, add the whole milk, beer, all-purpose flour, garlic powder, onion powder, baking powder, and salt; mix until everything is just combined, being sure to not overmix.
  • Dip each cauliflower floret into the batter, allowing any excess to run off, and transfer to the baking sheet. Repeat dipping process until you've worked your way through all of the florets.
  • Spray the tops of the florets with cooking spray; this will help with the crisp factor. Transfer the baking sheet to the oven and bake for 15 to 20 minutes, until the tops are lightly golden brown.
  • Meanwhile, in a medium saucepan, melt the butter and pour in the Buffalo wing sauce. Mix until combined. Remove the cauliflower from the oven and drizzle half of the sauce atop the florets. Return the cauliflower to the oven and bake for an additional 5 minutes.
  • Using a pair of tongs, add the cauliflower florets to the saucepan with the Buffalo mixture and gently toss, until all of the florets are completely coated in sauce.
  • Transfer to a large plate and serve alongside the dipping sauce and freshly cut celery.

These baked buffalo cauliflower bites will have you asking, "who needs chicken when there's cauliflower?!" They're that good! My favorite way to eat these is simple: dipping them in ranch dressing! But they also make a great taco filling if you cut the cauliflower into smaller pieces.

1 head cauliflower (Cut into approx. one inch pieces. I try to remove as much of the stem as possible. )
2 tbsp butter (melted)
3/4 cup milk (I use skim but whatever you have will work. )
1/4 cup water
3/4 cup flour
1 cup panko breading ((divided into 3/4 cup and 1/4 cup))
2 tsp garlic powder
1 tsp onion powder
1-2 tsp paprika
3/4 to 1 cup buffalo sauce (If you want a saucier dish, use a full cup. For a lighter coating, 3/4 of a cup will work)
1 tbsp olive oil
½ tsp salt (or more, to taste)

Steps:

  • Preheat your oven to 350F. Wash your cauliflower and cut into approx. one-inch sized pieces. I like to remove as much of the stem as I can so it really feels like a little piece of "meat" but you can definitely keep the stems longer if you want. (If you're going to be using the buffalo cauliflower bites as taco filling, I recommend chopping the pieces quite small)
  • Melt the butter in the microwave. Toss the cauliflower pieces with the melted butter.
  • In a large mixing bowl, add flour, paprika, onion powder, salt, and garlic powder. Stir to combine.Add milk and water to the flour mixture and whisk until mostly smooth, without big clumps left over.
  • Add the cauliflower into the flour/milk mixture. Toss with your hands or tools to make sure the pieces are evenly coated in the batter!
  • In a separate bowl, add 3/4 cup of your panko breading. Pour the coated cauliflower into the panko breading and gently toss with your hands, making sure each piece is evenly coated. Then, add your other 1/4 cup of panko to the cauliflower. (Doing this in two steps help make it more evenly-coated).
  • Place parchment paper on a large baking sheet. Place the coated cauliflower on the baking sheet, and spread evenly so the pieces aren't clumped together. Or, you can place a wire rack over your baking sheet (spray it with oil if you use a wire rack instead of placing the cauliflower bites directly on the baking sheet)Add to heated oven and bake for 20 minutes, stirring the cauliflower halfway through so the pieces cook evenly.
  • While the cauliflower bakes, add your buffalo sauce and olive oil and stir to combine.When the cauliflower has baked for 20 minutes, remove from oven (but keep the oven on).Take the cauliflower from the pan and add it to the bowl with the buffalo sauce. Mix well (careful - it will be hot!) until the pieces are evenly coated.
  • Return the buffalo cauliflower to the oven and bake for another 25-30 minutes (stirring halfway through) OR until pieces are crisped to your liking!Serve and enjoy! (Toss with more buffalo sauce before serving if you want them extra saucy)

1/2 cup Frank's red hot sauce
1 tablespoon packed dark brown sugar
2 teaspoons cider vinegar
1 -2 quart peanut oil or 1 -2 quart vegetable oil
3/4 cup cornstarch
1/4 cup cornmeal
1/2 teaspoon salt
1/4 teaspoon pepper
2/3 cup coconut milk or 2/3 cup reduced-fat milk
1 tablespoon Frank's red hot sauce
1 lb cauliflower floret, cut into 1 1/2 inch pieces
ranch dressing or blue cheese dressing

Steps:

  • Buffalo Sauce: Melt coconut oil in small saucepan over low heat. Whisk in hot sauce, brown sugar, and vinegar until combined. Remove from heat and cover to keep warm; set aside.
  • For the Cauliflower: Line platter with multiple layers of paper towels. Add oil to large Dutch (about 6 quart and cast iron works great) oven until it measures about 1 1/2 inches deep and heat over medium-high heat to 400 degrees. While oil heats, combine cornstarch, cornmeal, 1/2 teaspoon salt and 1/4 teaspoon pepper in small bowl. Whisk coconut milk and hot sauce together in large bowl. Add cauliflower; toss to coat well. Sprinkle cornstarch mixture over cauliflower; fold with rubber spatula until thoroughly coated.
  • Fry half of cauliflower, adding 1 or 2 pieces to oil at a time, until golden and crisp, gently stirring as needed to prevent pieces from sticking together, about 3 minutes. Using slotted spoon, transfer fried cauliflower to the paper-lined platter.
  • Return oil to 400 degrees and repeat with remaining cauliflower. Transfer 1/2 cup sauce to clean large bowl, add fried cauliflower and gently toss to coat. Serve immediately with dressing and remaining sauce.
