CHRISTMAS MUFFINS

Christmas Muffins image

These muffins are perfect for Christmas. They're chockful of festive ingredients and flavors: Fresh cranberries, zucchini, apples, orange zest ... top with a little orange-vanilla glaze and add red and green sprinkles and you've got just the thing for Christmas morning.

Provided by Kare for Kitchen Treaty

Time 40m

Number Of Ingredients 27

Muffins
2 cups all-purpose flour (or sub 1 cup whole wheat flour for 1 cup of the white)
1 cup quick-cooking oats
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1 cup buttermilk*
2/3 cup applesauce
1/2 cup white sugar
1/2 cup packed brown sugar
1/3 cup canola 0r vegetable oil
1 egg
1 teaspoon vanilla extract
1 teaspoon orange zest
1 cup fresh or frozen (and then thawed cranberries, cut in half)
1 cup diced tart apple (like Granny Smith)
1 1/2 cups grated zucchini
Vanilla-Orange Glaze
1 1/4 cup powdered sugar
1/4 teaspoon vanilla extract
1/2 teaspoon orange zest
1 tablespoon milk
1 tablespoon fresh squeezed orange juice
Sprinkles (if desired)

Steps:

  • Heat oven to 400 degrees.
  • Line 15 standard muffin cups with cupcake liners, or grease them.
  • In a large bowl, mix together the flour(s), oats, baking powder, baking soda, cinnamon, cloves, and nutmeg.
  • In a medium bowl, whisk together the buttermilk, applesauce, sugar, brown sugar, canola or vegetable oil, egg, and vanilla extract. Mix in the cranberries, apple, and zucchini.
  • Add the wet ingredients to the dry ingredients, and whisk together just until incorporated.
  • Divide between 15 or so muffin cups - approximately a scant 1/2 cup each.
  • Bake at 400 degrees for about 20 minutes, or until the tops spring back when touched.
  • Line the counter with a couple of paper towels, and place a wire rack on top. Once the muffins are cool enough to touch, move them to a wire rack.
  • Allow the muffins to cool to room temperature, or close - about 20 minutes.
  • Meanwhile, mix together the glaze. Simply whisk the powdered sugar, vanilla, orange zest, milk and orange juice together until it's glaze consistency.
  • Drizzle the glaze over the top of the muffins. If desired, top with sprinkles while the glaze is still wet (c'mon! It's Christmas! Go for it!)

CHRISTMAS QUINOA MUFFINS

Christmas Quinoa Muffins image

A great way to use leftover plain quinoa that makes fluffy, but hearty, filling, healthy muffins that I call Christmas muffins because of the red and green. I make quinoa in my rice cooker the night before (1:2 ratio) (also great for fluffy pancakes).

Provided by healthyrecipenut

Categories     Breads

Time 50m

Yield 16 muffins, 16 serving(s)

Number Of Ingredients 14

2 cups cooked quinoa, cooled
1 1/2 cups white whole wheat flour
1/2 cup almond flour
3/4 cup brown sugar
1 1/2 teaspoons baking powder
1 teaspoon kosher salt
1/2 cup Greek yogurt, with fruit on bottom (I used FAGE Cherry)
1 cup milk (I used Almond)
1 egg
1 teaspoon vanilla
1/4 cup vegetable oil (I used Grapeseed)
1/4 cup pumpkin seeds
1 cup fresh cranberries (Chopped)
2 tablespoons unbleached cane sugar

Steps:

  • Preheat oven to 400 degrees.
  • Add cane sugar to chopped cranberries ( I find chopping frozen cranberries much easier).
  • Mix first 6 dry ingredients together.
  • In a separate bowl whisk remaining wet ingredients (yogurt, milk, egg, vanilla and oil) together.
  • Fold wet ingredients into dry until just combined. Do not overmix.
  • Fold in sugared cranberries and pumpkin seeds
  • Line muffin tins with parchment cups or grease with oil of choice. I used parchment.
  • Use regular size ice cream scoop to fill muffin cups.
  • Bake for 30 -40 minutes until tops are brown and toothpick comes out clean. Toothpick will come out clean after 20 minutes but its worth waiting until muffins actually brown on top for better texture.
  • Notes: Batter is fairly dense. Adjust with milk to your liking. Muffins are minimally sweet so adjust sugar as well. I love a just slightly sweet muffin and you can't beat fresh cranberries. Enjoy!
  • As with all healthier muffins these stay/store best in freezer in a ziploc freezer bag once they've completely cooled. Perfect defrosted in microwave at power level 3 for 1 min (flipping it at 30 seconds).

CHRISTMAS MUFFINS

Christmas muffins image

Make these zesty, spiced muffins ahead of Christmas Day, then begin the festivities by handing them out while everyone opens their gifts under the tree

Provided by Cassie Best

Categories     Breakfast

Time 50m

Number Of Ingredients 14

125g unsalted butter
250g self-raising flour
1 tsp bicarbonate of soda
200g golden caster sugar
2 tsp cinnamon
¼ nutmeg, freshly grated
150g natural yogurt
1 tsp vanilla extract
2 medium eggs
1 orange, zested and juiced
150g chocolate (white, milk or dark), chopped
50g dried cranberries
50g icing sugar
2 tbsp pearl sugar (optional)

Steps:

  • Heat the oven to 180C/160C fan/gas 4 and line a 12-hole muffin tray with paper muffin cases.
  • Melt the butter in the microwave or a small pan over a low heat, then set aside to cool for 10 mins. Meanwhile, mix the flour, bicarb, sugar, cinnamon and nutmeg in a large bowl with a pinch of salt.
  • Add the yogurt, vanilla and eggs to the cooled butter and mix well. Pour the wet ingredients into the dry ingredients along with the orange zest, chocolate and dried cranberries. Mix well until there are no pockets of flour.
  • Divide the mixture evenly between the paper cases, then bake for 30 mins until risen and golden. Check they're cooked by inserting a cocktail stick into the centre of one of the muffins (choose one in the centre of the tray). If any wet cake batter clings to the skewer, return to the oven for 5 mins.
  • Remove the muffins from the oven and leave to cool in the tin for at least 10 mins. Meanwhile, mix the icing sugar with enough of the orange juice to make a loose icing. Brush the orange glaze over each muffin, then sprinkle with a little pearl sugar, if using. Leave to cool before eating. Will keep in an airtight container for up to five days, or frozen for up to two months.

  • Coffee Cake Muffins. Coffee cake is a terrific sweet treat to have as a naughty breakfast or mid-morning snack. Unfortunately, as soon as you take that first slice, the clock starts ticking.
  • Banana Chocolate Chunk Muffins. In my opinion, these are the king of all muffins. No flavor combination holds a candle to sweet bananas and rich dark chocolate, and when mixed into a muffin batter, it’s downright irresistible.
  • Starbuck’s Hot Cocoa Chocolate Chip Muffins. These amazing muffins are made using hot cocoa instead of regular cocoa powder, and as the title suggests, you’ll need Starbucks Hot Cocoa.
  • Bacon Maple Muffins with Brown Sugar Crumble. I love everything about that title other than the implied calories! Since these babies have bacon right in the muffin, they’re just the right amount of salty and sweet.
  • Gingerbread Muffins with Lemon Glaze. The first time I made these, I wasn’t sure about the lemon with gingerbread. So, I made half a batch of lemon glaze and half a batch of orange.
  • Christmas Chocolate Chip Muffins Recipe. When it comes to making Christmas treats, there is one sure-fire way to ensure whatever you’re baking is festive.
  • Snickerdoodle Muffins. You know the holidays are close when you walk into Michael’s, and all you can smell is cinnamon. Suddenly it’s everywhere, and I just love it!
  • Pecan Pie Muffins. If like me, you wish you could have a slice of pecan pie for breakfast, you’re in luck! These muffins combine the sweet nuttiness of pecan pie with a lighter muffin base.
  • Peppermint Mocha Muffins. Mint and chocolate is such a yummy flavor combination, and I wish we didn’t just save it for the holidays. Although, it does make a nice change to all those spiced baked treats and pumpkin-spice-everything!
  • Fresh Cranberry Eggnog Christmas Muffins. I was a little surprised at how lovely these muffins came out since I’d never thought to put tart cranberries with creamy eggnog before.
