BBQ MEATLOAF WITH GROUND TURKEY

BBQ Meatloaf with Ground Turkey image

BBQ meatloaf made with ground turkey is a healthy comfort food dream come true. It's tender, flavorful, and easy to put together, with only 10 minutes of hands-on time. Weeknight friendly, but totally dinner party-worthy, too.

Provided by Carolyn Gratzer Cope

Categories     Turkey

Time 50m

Number Of Ingredients 10

1 tablespoon olive oil
1 medium yellow onion, diced small
2 teaspoons fine sea salt, divided
2 eggs
1/2 cup dry Italian breadcrumbs
1/2 cup BBQ sauce, divided (bottled or homemade)
1/4 cup whole milk
2 tablespoons Worcestershire sauce
1 tablespoon herbs de Provence
2 pounds ground turkey

Steps:

  • Preheat oven to 350°F with a rack in the center.
  • Warm the olive oil in a medium frying pan over medium heat.
  • Add the onion and 1/2 teaspoon of the salt and cook, stirring occasionally, until it starts to become translucent, about five minutes. Cool slightly.
  • In a large mixing bowl, lightly beat the eggs. Add the remaining salt, the breadcrumbs, 1/4 cup of the BBQ sauce, the milk, the Worcestershire sauce, the herbs, and the cooked onions. Mix well.
  • Add the ground turkey. Use a rubber spatula to gently but thoroughly fold the ingredients together, mixing without compressing the meat. This will help keep the meatloaf light and tender.
  • Line a rimmed half sheet pan or other large baking dish with parchment.
  • Turn out the meatloaf mixture into the center of the pan and shape it into an even loaf.
  • Spread the remaining 1/4 cup of BBQ sauce over the top of the loaf.
  • Bake for about 40 minutes, until the internal temperature is 160°F.
  • If you like, spread a few more tablespoons of BBQ sauce over the cooked loaf.
  • Let rest for at least five minutes before slicing and serving.

1 1/2 pounds ground dark meat turkey
3/4 cup seasoned breadcrumbs
1/4 cup ketchup
1 large egg, whisked
Salt and freshly ground pepper
BBQ Glaze, recipe follows
6 slices bacon
One 14-ounce bottle ketchup
One 12-ounce bottle chili sauce
1/2 cup packed brown sugar
1 teaspoon dry mustard

Steps:

Let rest for 5 minutes before serving.
  • Stir together the ketchup, chili sauce, brown sugar, dry mustard and 1/3 cup water in a large saucepan. Bring to a boil, stirring to dissolve the sugar. Remove from the heat and set aside.

BBQ TURKEY MEATLOAF - 5 INGREDIENTS

BBQ Turkey Meatloaf - 5 Ingredients image

The secret to this tender, flavor-packed BBQ meatloaf is the boxed cornbread stuffing mix! Beginning cooks will love the convenience, but so will any cook with a keen eye for a healthy, quick entree. TIP: We eat one meatloaf for dinner, and I freeze the second one for another meal.

Provided by CookinDiva

Categories     Poultry

Time 1h10m

Yield 8 serving(s)

Number Of Ingredients 5

16 ounces ground turkey
8 ounces turkey sausage (casings removed)
1 cup seasoned stuffing mix (StoveTop type, dry, I like "Cornbread" type)
1 egg, beaten with fork
1 1/4 cups barbecue sauce (like KC Masterpiece Original)

Steps:

  • Crumble ground turkey into large mixing bowl. If sausage is in links, remove casings and crumble sausage into bowl.
  • Add 1 cup dry stuffing mix (about half a box), egg and 1 cup of the barbecue sauce (save 1/4 cup to glaze tops of meatloaves).
  • Mix gently; divide in two. Pat into two loaves in a greased/sprayed 9x13 pan (see photo provided).
  • Use remaining 1/4 cup BBQ sauce to spoon over tops of loaves. Bake uncovered at 350 degrees for one hour.
  • Option: this meatloaf could easily be made with lean ground beef and sausage, but it is SO delicious with the lower-fat ingredients that you should give it a try!
