SUPER SIMPLE VEGAN BLACK BEAN BURGERS



Super Simple Vegan Black Bean Burgers image

This is a low-calorie quick black bean burger and they are super cheap to make. This is loosely based on the Black Bean Burgers from Lindsay Nixon's Happy Herbivore website.

Number Of Ingredients 7

2 2/3 cups cooked black beans or 15 1/2 ounces canned black beans, drained and rinsed
1/3 cup old-fashioned oatmeal, coarsely ground or 1/3 cup instant oatmeal
1/2 tablespoon fiesta uncle chris' gourmet steak seasoning or 1/2 tablespoon steak seasoning, of your choice
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon liquid smoke

Steps:

  • Preheat Oven to 425°F.
  • Use either the cooked black beans or 1 15.5 oz can but not both and use either instant oatmeal or coarsely grind the old-fashioned oats in a food processor or coffee grinder and use those.
  • Drain and rinse the black beans.
  • Mash the black beans coarsely. You want some half beans and bean pieces left. If you mash them too much your burgers will fall apart.
  • Add the spices and liquid smoke and mix to combine.
  • Add the oatmeal and mix until it has a uniform texture.
  • Measure 1/3 cup portions and shape into patties.
  • Place your patties on a greased or parchment paper lined cookie sheet.
  • Bake for 7-10 minutes until color changes and they appear crispy.
  • Carefully flip burgers.
  • Bake until remaining side appears crispy. It should take about 7-10 minutes.

Try making these satisfying veggie burgers as a meat-free treat - they freeze well and are perfect for grilling on the barbecue

1 tbsp olive oil, for frying
½ leek, chopped
5 mushrooms, chopped
30g thyme, leaves picked
140g firm tofu, chopped
handful of kale leaves
1 tbsp Dijon mustard
2 tbsp tamari
240g canned black beans, drained
3 tbsp oat bran
2 tbsp cooked brown rice
2 tbsp chopped hazelnuts or walnuts
40g gram flour (optional)
4-6 burger buns
4 tbsp vegan mayo
1 tsp tomato ketchup
1 tbsp chopped cornichons
pinch of cayenne pepper
sliced tomatoes and red onion
lettuce leaves

Steps:

  • Heat the oil in a large pan and fry the leek, mushrooms, thyme, tofu and kale for about 5 mins. Add the mustard, tamari and half of the black beans and give it a good stir. Transfer the mixture to a blender and pulse a few times - don't over-blend, it needs to be quite chunky in texture. Scoop into a bowl and add the rest of the black beans, the oat bran, rice and chopped nuts, then mix well.
  • Divide the mixture into 4-6 evenly sized portions and shape into patties using your hands. Tip the gram flour onto a plate, if using, then roll the patties in the flour to coat.
  • To make the burger dressing, mix all ingredients together in a bowl and set aside. Fry the patties for 4-5 mins on each side until crisp on the outside.
  • Slide the patties into the buns with the tomato, onion, lettuce and a dollop of burger dressing.

  • If cooking on stovetop, preheat a large pan sprayed with cooking spray or olive oil over medium heat. If baking, preheat oven to 350F and line a baking sheet with parchment paper.
  • Place beans in a large bowl. Mash with a potato masher or fork until most beans are broken up, leaving some whole beans in tact. Add breadcrumbs, onion powder, garlic powder, cumin, chili powder, smoked paprika, salt, pepper, sriarcha, and flax mixture. Stir until well combined.
  • Form into 5-6 tightly-packed patties. You can refrigerate them until you are ready to cook (for up to 3 days) or cook them right away.

  • Place a rack in the center of your oven and preheat to 350 degrees F. Line a baking sheet with parchment paper or a silpat mat.
  • Place the red pepper and onion in the bowl of a food processor fitted with a steel blade. Pulse until minced. Transfer the mixture to a large mixing bowl.
