This is a quick and easy snack or party dip. I believe it originally came from the Pace Website. Very versatile as far as adding green onions, black beans or whatever you like!

Ingredients

8 ounces cream cheese, softened
1 cup cheddar cheese, grated (I add a bit more)
1 cup picante sauce or 1 cup chunky salsa

Steps:

Spread cream cheese in a 9" microwave safe pie pan.
Sprinkle with cheddar cheese.
Microwave on high 2-3 minutes until cheddar cheese is melted.
Top with Sauce.
Serve with Chips.

Microwave on HIGH for 2 minutes or until the Cheddar cheese is melted. Top with the salsa. Serve with the tortilla chips.

Variations of this cool, creamy dip are served on many of the Caribbean islands, where mangos are a way of life. It's perfect for dipping fresh fruits and can also be spooned over other fruits, or over pancakes or waffles.

1 ripe mango, peeled and cut into chunks, seeds discarded
1 1/2 teaspoons firmly packed brown sugar
1/2 teaspoon lime juice
1/2 cup nonfat vanilla yogurt
1 dash nutmeg

Steps:

Place mango chunks in a blender container with brown sugar and lime juice. Blend until smooth.
Spoon into a bowl.
Stir yogurt into mango puree, stitting until blended.
Chill thoroughly.
Just before serving, sprinkle very lightly with nutmeg.

Serve in a small, attractive bowl placed in center of a large serving platter, surrounded with assorted cut-up vegetables and, if desired, baked tortilla chips.

Ingredients

3 oz sun-dried tomatoes (not packed in oil)
2 jar(s) (7-oz. each) roasted red peppers, drained
2 clove garlic, chopped fine
1 1/2 tsp ground cumin
1 tsp fresh lemon juice
1/4 c chopped fresh cilantro
1/4 c chopped green onion
4 oz neufchatel cream cheese
salt and pepper, to taste
tabasco or hot pepper sauce, to taste

Steps:

1. Soak dried tomatoes in hot water for 5 minutes. Drain well, reserving 3 tablespoons of the soaking liquid.
2. In a food processor, puree red peppers, tomatoes, garlic, cumin, lemon juice, cilantro and scallion until smooth and well-blended. Add cream cheese and puree, adding enough of the reserved tomato-soaking liquid to thin the dip to the desired consistency (scraping down the side of the bowl occasionally). Blend until smooth. Blend in salt, pepper and hot sauce to taste. Adjust seasoning, adding more garlic, cumin, or lemon juice if needed.
3. Transfer to a container with a cover. Cover and refrigerate for 24 hours before using. Bring dip to room temperature before serving.
