Tender, juicy, bone-in glazed pork chops are seared and coated in a lip-smacking maple balsamic vinegar sauce. Perfect for a weeknight dinner, or a party!

4 bone-in, center cut pork chops
olive oil
salt and pepper (to taste)
1/4 cup maple syrup
3-4 Tbsp balsamic vinegar
2 Tbsp beef broth
1 1/2 tsp Dijon mustard
1 clove garlic (smashed)
1 sprig fresh rosemary
1 sprig fresh thyme
salt and pepper (to taste)

Steps:

  • In a small saucepan, combine all glaze ingredients. Heat over MED heat until it reaches a low boil. Cook until sauce reduces down, about 3 minutes, stirring occasionally. Set aside.
  • Place cast iron skillet in oven and preheat oven to 400 degrees F.
  • Pat chops dry with a paper towel, then rub with olive oil and sprinkle with salt and pepper.
  • Remove skillet from oven and place on burner over MED-HIGH heat. Place chops in the skillet, you should hear them sizzle immediately. Let cook 2-3 minutes to sear. Brush pork with glaze.
  • Flip pork chops over, brush the other side with the glaze, and transfer skillet back to the hot oven. Bake until a thermometer inserted into the center reads 140 degrees F (about 5-8 minutes, depending on the thickness of your pork chops).
  • Transfer pork chops to a plate, tent loosely with aluminum foil and let rest for 5 minutes.
  • Serve pork chops with a bit of the glaze drizzled over the top if desired.

¼ cup real maple syrup
¼ cup water
¼ cup chopped onion
1 tablespoon white vinegar
1 tablespoon Worcestershire sauce
½ teaspoon chili powder
salt and ground black pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat a skillet over medium-high heat. Sear the pork chops in the preheated skillet until browned, 2 to 3 minutes per side. Arrange seared chops into a casserole dish.
  • Whisk maple syrup, water, onion, vinegar, Worcestershire sauce, chili powder, salt, and pepper together in a bowl to dissolve the chili powder; pour over the pork chops.

4 pork chops
2 tablespoons butter or extra virgin olive oil
1/4 cup minced onion, plus 1 medium onion sliced (sliced onion optional)
1 tablespoon apple cider or white vinegar
1 teaspoon chili powder
1/2 teaspoon pepper
1/4 cup maple syrup
1/4 cup water
1-2 tablespoons Worcestershire sauce
Salt to taste
About 1 tablespoon flour to thicken the gravy

Steps:

  • Brown the pork chops: Preheat the oven to 400°F. Sprinkle both sides of the pork chops with a little salt. Heat the butter or oil in a large sauté pan on medium high heat. Pat dry the chops with paper towels and place in sauté pan. Cook (without moving) enough to brown well, then flip over and brown the other side. Remove the chops from the pan and place into a high-sided baking dish or roasting pan. (If your pork chops are very thin and have cooked through at this point, skip the oven step and tent them loosely with aluminum foil while making the sauce.)
  • Make the sauce: Add the minced onion to the sauté pan in which you browned the pork, and sauté for 2-3 minutes, until the onion begins to brown. Add the vinegar, chili powder, pepper, maple syrup, water, and Worcestershire sauce to the pan and bring to a boil.
  • Bake: Pour the sauce over the pork chops in the baking dish. Lower the heat to 350°F and bake uncovered for 10-15 minutes for thick (1-inch thick) chops, 5-10 minutes for thin (1/2-inch thick) chops, or until the interior temperature of the pork reaches 145°F.
  • Brown sliced onions (optional): In the same sauté pan that you used to make the sauce, add a little oil and heat to medium high. Cook the sliced onions in the pan, allowing the onions to pick up any sauce remaining in the pan. Cook until lightly browned, while the pork chops are baking.
  • Thicken gravy with flour: Place the pork chops on a serving platter and loosely tent with foil. Pour the sauce into the saucepan you seared the chops in and whisk in 1 tablespoon flour to thicken the gravy. Salt to taste, and serve the gravy over the chops and (optional) onions.

1 medium onion, chopped
4 teaspoons canola oil, divided
1 tablespoon minced fresh gingerroot
1 teaspoon chili powder
1/2 teaspoon salt

4 bone-in pork loin chops (6 ounces each)
1/2 cup reduced-sodium chicken broth
1/4 cup maple syrup
2 cups hot cooked rice

Steps:

  • In a small skillet over medium-low heat, cook onion in 2 teaspoons oil until golden brown and very tender, about 10 minutes. Add ginger; cook and stir 2 minutes longer., Meanwhile, combine the chili powder, salt, pepper and cinnamon; rub over both sides of pork chops. In a large skillet over medium heat, brown chops in remaining oil for 2-3 minutes on each side., Add the broth, syrup and onion mixture. Bring to a boil. 1/4 cup onion, chopped
1 tablespoon vinegar
1 teaspoon chili powder
1/2 teaspoon pepper
1/4 cup maple syrup
1/4 cup water
1 tablespoon Worcestershire sauce
salt
flour (as needed to thicken the gravy)

Steps:

  • Preheat the oven to 400°F.
  • Lightly brown the pork chops in a small amount of oil, then place them in a flat baking dish with sides.
  • Combine the other ingredients in a small saucepan and heat until warm; pour over chops.
  • Cover and bake for 45 minutes, basting occasionally.

1 teaspoon ground ginger
1 teaspoon freshly cracked black pepper
1/2 teaspoon ground mustard
3 tablespoons plus 1 teaspoon sugar
Four 1-inch-thick bone-in pork chops
1 tablespoon unsalted butter
1 tablespoon olive oil
1/2 cup ginger beer or ginger ale
3 tablespoons Dijon mustard
2 tablespoons chopped fresh parsley

Steps:

  • Mix together the salt, ginger, pepper, mustard and 1 teaspoon sugar in a small bowl. Sprinkle the pork chops with the spice mix. Rub on both sides.
  • Heat the butter and oil in large, heavy-bottomed skillet over medium-high heat. Once the butter has melted, add the pork chops. Cook on one side until deep brown on the bottom, 4 to 5 minutes. Flip and cook until the internal temperature reaches 140 degrees F, another 3 to 4 minutes. Remove the pork chops to a plate to rest.
  • Meanwhile, pour the ginger beer into a small skillet and bring to a simmer over medium heat. Steps:

  • Pour 4 tbsp olive oil into large frying pan (preferably NOT non-stick) over a medium heat. Season the pork chops with 2 tsp salt and add to pan when oil is hot.
  • Cook for 3-5 mins on each side until nicely browned all over and cooked through. Transfer cooked chops to warmed plate, cover with foil and keep warm.
  • If very little oil left add an extra tbsp and fry the onions and thyme leaves. Season with salt and stir fry for 3 mins until onions have softened but not browned. Pour in the vinegar and using a wooden spoon deglaze pan scraping any browned residue from the chops. Bring to a simmer for 2 mins then stir in maple syrup and 1 tsp pepper.
  • Bring back to simmer, cook for 7-10 mins until the sauce has reduced to a sticky glaze. Check for seasoning then pour sauce over the pork chops and serve.

8 boneless pork loin chops, pounded to 1/3 inch thickness
2 tablespoons minced fresh sage
salt
pepper
2 tablespoons butter
1 cup chicken broth
2 tablespoons pure maple syrup
2 tablespoons coarse grain mustard

Steps:

  • Sprinkle pork loins with 1 tablespoon of fresh or 1 teaspoon of dried sage, salt and pepper.
  • Melt butter in large skillet over high heat.
  • Add pork and cook until browned on both sides and cooked through, about 1-1/2 minutes per side.
  • Transfer pork to plate.
  • Add broth, maple syrup, mustard and remaining sage to drippings in skillet.
  • Boil until syrupy, scraping up browned bits, about 5 minutes.

4 boneless pork chops, about 1/2-inch thick
4 tablespoons rubbed sage (enough to rub both sides of the chops, you may not need to use all of it)
salt and pepper, to taste
2 tablespoons butter
1/4 cup minced shallots or 1/4 cup green onion
2 teaspoons Dijon mustard
1 cup chicken broth
4 tablespoons maple syrup
3 tablespoons balsamic vinegar
2 tablespoons capers

Steps:

  • Pound meat to 1/4 inch thick. Season both sides with rubbed sage and pepper.
  • Melt butter in heavy skillet, over medium high heat.
  • Add pork and sauté until brown and cooked through, about 3 minutes per side. Transfer to plate.
  • Add shallots to same skillet, and cook about 30 seconds.
  • Mix in mustard and chicken broth, and simmer for about 5 minutes.
  • Stir in maple syrup and vinegar. Simmer until mixture is reduced to sauce consistency, about 5 minutes.
  • Add capers to sauce.
  • Return pork and juices to skillet. Cook until just heated through, about 1 minute.
  • Arrange pork on platter and spoon sauce over.
