FIERY ANGEL HAIR PASTA

- Bring a large pot of salted water to a boil. Add the angel hair pasta and cook until tender but still firm to the bite, stirring occasionally, about 6 to 8 minutes. Drain, reserving 1 cup of the pasta water.
- Stir the oil, parsley, lemon juice and lemon peel in a large serving bowl. Add the cooked pasta and toss with enough reserved pasta water, 1/4 cup at a time, to moisten. Season the pasta with salt and red pepper flakes, to taste. Sprinkle grated lemon peel over pasta for extra flavor and texture. Sprinkle with the Parmesan and serve.
- Combine the oil and crushed red pepper flakes in a heavy small saucepan. Cook over low heat until a thermometer inserted into the oil registers 180 degrees F, about 5 minutes.
- Remove from heat. Cool to room temperature, about 2 hours. Transfer the oil and pepper flakes to a 4-ounce bottle. Seal the lid. Refrigerate up to 1 month.

- Pour olive oil into skillet, add salmon fillets and cook over medium heat about 5 minutes ( or until fish flakes easily) Remove from pan, wrap in foil to keep warm. Pour 1 Tablespoon broth into skillet and heat over medium high heat. Add garlic and cook 1 minute. Pour remaining broth into skillet and boil. Add spinach, reduce heat; cover and simmer 3-4 minutes. Slice salmon into bite size chunks. Combine pasta, sauce and salmon in large bowl or serving platter; toss lightly to mix. Sprinkle with Parmesan and sseve.
SALMON PICCATA WITH HERBED PASTA
Steps:
- Bring a large pot of water to a boil, then add a small handful of salt. Add the pasta and cook according to the package directions until al dente. Drain the pasta and reserve the pot.
- While the pasta is cooking, melt 1 tablespoon of the butter in 2 tablespoons of the oil in a large skillet. Season the salmon with salt and pepper, then dust with flour. Add the salmon to the skillet and cook over medium-high heat, flipping occasionally, until golden on the outside and just cooked through, about 8 minutes.
- In the reserved pot, melt 3 tablespoons of the butter in the remaining 4 tablespoons olive oil over low heat. Return the pasta to the pot, add all but 2 tablespoons of the herbs and toss well to coat. Season with salt and pepper.
- Transfer the salmon to a plate; tent with foil to keep warm. Add the chicken broth, lemon juice and capers to the skillet. Simmer over high heat, scraping up any browned bits from the bottom of the skillet, until the liquid is slightly thickened, 3 to 5 minutes. Remove from the heat and gradually swirl in the remaining 2 tablespoons butter until emulsified. Stir in the reserved 2 tablespoons herbs and season with salt and pepper.
- Add the salmon to the sauce and turn to coat. Divide the pasta among plates, top with the salmon and sauce and serve right away.

- Warm your oven: Set the oven to its lowest setting (mine is 150°F) to keep the salmon warm once it's cooked.
- Start the water for pasta: Bring a large pot of salted water to boil.
- Sear the salmon: Heat 1 tablespoon of the olive oil over medium-high heat in a large sauté pan (preferably nonstick). Once the oil starts to ripple in the pan, place the salmon fillets into the pan, skin-side up. Press the fillets down gently to make sure the entire surface makes contact with the pan. Sear the salmon fillets for 3 minutes, or until the flesh turns an opaque pink 1/4 of the way up the sides of the fillets.
- Reduce the sauce and cook the pasta: Reduce the sauce in the pan by half by maintaining a boil. This should take 3 to 4 minutes.
- Cook the pasta: By now, your pasta water should be at a rolling boil. Add generous tablespoon of salt to the boiling water and drop the pasta into the middle of the pot. Stir the pasta immediately to separate the noodles. Lower the temperature slightly to prevent the water from boiling over and cook the pasta for 4 to 5 minutes, until al dente (or according to package directions). Drain the pasta.
SPINACH WITH ANGEL HAIR PASTA
This recipe sounded very good and it's really simple too. Also a weight watcher meal with 5 points. It only makes one serving, so if you need to make more, just add up the ingredients for amount you need.

- In 10-inch non stick skillet heat oil. add garlic; cook over medium heat, stirring frequently, until softened, about 30 seconds.
- Add spinach; cook, tossing gently until wilted, 2-3 minutes.
- Sprinkle spinach with lemon juice, then add pasta. Cook, tossing mixture, until heated through, 1-2 minutes.

- Heat oil in a medium frying pan over high heat. Add salmon and cook for 15 seconds each side for rare or to your liking. Remove salmon and place on a plate.
- Add spinach to the same frying pan and cook for 2-3 minutes or until wilted. Transfer spinach to a plate.
- Reduce heat to low, add cream and lemon juice to the same frying pan, over low heat reduce for 2 minutes or until sauce reduces slightly.
- Cook pasta following packet directions. Drain.
- Return to saucepan. Add salmon, spinach and cream sauce. Toss to combine. Season with salt and pepper. Serve.
