SHEILA'S COUNTRY KITCHEN MEATLOAF
Steps:
- Mix all ingredients except cheese & bacon.
- Shape into 2 meatloaf pans, make well the length of each loaf & fill with cheese. Pull meatloaf up over the cheese & seal. Cover with tomato juice. Place 2 strips of bacon on each loaf.
- Bake at 350°F for 45 minutes-1 hour.

Steps:
- Take all ingredients except soup and mix in a large bowl.form into a loaf and transfer to a glass casserole dish or loaf pan with plenty of room for juices.
- Place meatloaf in oven and cook for approx.. 1 hr or until juices run clear, when juices run clear drain off some of the juice, then take the mushroom soup and spoon over the meatloaf and return to the oven for 15-20 minutes or until the soup is heated through.
- Remove the meatloaf from the oven stir to mix the remaining juices and soup together to make a nice rich gravy, slice the meatloaf and serve, spoon gravy over meat.
OUR FAVORITE MEATLOAF
This ultimate meatloaf recipe took rounds and rounds of testing to get just right. Our final version incorporates an ideal blend of seasoned ground beef and pork, aromatics, and breadcrumbs and bakes in a freeform loaf on a baking sheet instead of in a loaf pan for maximum browning. The result is a loaf that is savory, tender, and juicy, yet holds together well when sliced.

Steps:
- Position rack in center of oven; preheat to 350°F. Line a rimmed baking sheet or 13x9" shallow baking dish with foil. Soak breadcrumbs in milk in a large bowl until ready to use.
- Pulse onion, celery, and garlic in a food processor until finely chopped. (Alternatively, you can finely chop by hand.)
- Heat oil in a large skillet over medium. Add onion mixture, 1 tsp. salt, and 1/2 tsp. pepper. Cook, stirring occasionally, until softened, 5-7 minutes. Remove from heat, stir in Worcestershire, and scrape into bowl with breadcrumb mixture. Add beef, pork, eggs, 1/4 cup ketchup, and remaining 1 1/4 tsp. salt and 1 tsp. pepper, then mix with your hands to combine.
- Form meatloaf mixture into a long, well-packed, approximately 5"-wide loaf shape on prepared baking sheet. Brush top of loaf with 1/4 cup ketchup. Bake meatloaf until an instant-read thermometer inserted into the center registers 155°F, 60-75 minutes. Let rest 15 minutes before slicing. Serve with more ketchup alongside.

- Meatloaf can be made 3 days ahead; wrap in foil and chill, or freeze for up to 3 months.
SHELIA'S ITALIAN MEATLOAF
This is comfort food at its best with an Italian twist. It is savory, delicious, and filling. My mother always made meat loaf with these seasonings and I learned it this way and this is the only meat loaf I make. It has been a favorite in our family for many years. I've been making this for so long that I can dump and pour and it always turns out good, however, I made the meatloaf using these measurements so I could share the recipe and it turned out perfect.

Steps:
- Crumble meat into a large bowl, add the next 11 ingredients and mix well I use my hands, until the ingredients are thoroughly incorporated. Spray the loaf pan with cooking spray. Shape the meat mixture into the loaf pan leaving space between the inside walls of the pan and the meat. Place in a preheated 350 degree oven. Cook for 40 to 45 minutes. Remove and pour the tomato sauce over the cooked meat. Return to the oven and cook an additional 10 minutes.

Steps:
- Boil macaroni to desired doneness, app. 7 minute Drain when done.
- While macaroni is cooking, melt butter over low heat, stir in flour.
- Raise heat to allow mixture to bubble (but not brown), stirring constantly.
- Add milk, mustard and onion.
- Stir over medium heat until mixture thickens.
- Add cheese-stir until blended.
- Add drained macaroni.
- Turn into casserole dish and sprinkle with breadcrumbs.
- Bake in a 400 degree oven for app. 30 minutes.
- Let cool slightly before serving.
