1 cup chopped pecans
1 (18 ounce) package yellow cake mix with pudding (2-layer size)
3 eggs
1/2 cup vegetable oil
1/2 cup triple sec or 1/2 cup other orange-flavored liqueur
2 teaspoons orange zest
1/4 cup orange juice
1/4 cup water
1/2 cup butter or 1/2 cup margarine
1/4 cup orange juice
3/4 cup sugar
1 teaspoon orange zest
1/2 cup triple sec or 1/2 cup other orange-flavored liqueur

Steps:

  • Sprinkle pecans in bottom of a greased and floured 10-inch Bundt pan.
  • Set aside.
  • Combine remaining ingredients except Glaze in a large mixing bowl.
  • Beat 30 seconds at low speed of electric mixer, then 2 minutes at.
  • medium speed.
  • Pour into prepared pan.
  • Bake at 325 degrees for 1 hour or until a wooden pick inserted in.
  • center comes out clean.
  • Cool in pan 10 minutes; remove and let cool.
  • completely on wire rack.
  • Using a wooden pick, pierce cake at 1-inch intervals.
  • Spoon Glaze over cake.
  • Glaze: Melt butter in heavy saucepan.
  • Stir in orange juice and sugar.
  • Bring to a boil.
  • Boil 5 minutes, stirring constantly.
  • Remove from heat and stir in orange peel and liqueur.
  • Makes 1 1/4 cups.

7 to 8 ounces almond paste
1/4 pound (1 stick) unsalted butter, very soft
1 cup sugar
2 tablespoons orange liqueur (such as Grand Marnier or triple sec)
Grated zest 1 orange, or 1/2 teaspoon orange extract
5 large eggs, at room temperature
1/2 cup cake flour
1 teaspoon baking powder
Confectioner's sugar for dusting

Steps:

  • Preheat the oven to 325 degrees. Butter and flour a 9inch springform pan and set it aside.
  • Break up the almond paste and place it in the container of a food processor. Process for a few seconds until it is grainy, like the texture of cracked wheat. Set aside.
  • In a large bowl, using an electric mixer, beat the butter and sugar together until very fluffy, at least 3 minutes. Add the almond paste, orange liqueur, and orange zest. Beat until perfectly blended, another 2 minutes or so.
  • One by one beat in the eggs until the mixture is very smooth and fluffy, about 2 minutes. Sprinkle on the flour and baking powder and beat just until combined, 30 seconds or so.
  • Scrape the batter into the prepared pan. Bake 55 minutes, or until a knife inserted in the center of the cake comes out clean, and the sides of the cake have begun to shrink away from the pan. Cool on a wire rack for 10 minutes. (The cake might sink a little in the center.)
  • Remove the outer ring of the pan. Place a plate over the cake and invert it. Remove the bottom of the pan. Invert again onto a wire rack and cool the cake completely. Serve dusted with confectioners sugar.

1/2 pound (2 sticks) unsalted butter, at room temperature
2 1/2 cups granulated sugar, divided
4 extra-large eggs, at room temperature
1/3 cup grated orange zest (6 oranges)
3 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon kosher salt
3/4 cup freshly squeezed orange juice, divided
3/4 cup buttermilk, at room temperature
1 teaspoon pure vanilla extract
1 cup confectioners' sugar, sifted
1 1/2 tablespoons freshly squeezed orange juice

Steps:

  • Heat the oven to 350 degrees. Grease and flour two 8 1/2 x 4 1/2 x 2 1/2-inch loaf pans. Line the bottoms with parchment paper.
  • Cream the butter and 2 cups of the granulated sugar in the bowl of an electric mixer fitted with the paddle attachment for about 5 minutes, or until light and fluffy. With the mixer on medium speed, beat in the eggs, one at a time, and the orange zest.
  • In a large bowl, sift together the flour, baking powder, baking soda, and salt. In another bowl, combine 1/4 cup of the orange juice, the buttermilk, and vanilla. Add the flour and buttermilk mixtures alternately to the batter, beginning and ending with the flour. Divide the batter evenly between the pans, smooth the tops, and bake for 45 minutes to 1 hour, until a cake tester comes out clean.
  • While the cakes bake, cook the remaining 1/2 cup of granulated sugar with the remaining 1/2 cup orange juice in a small saucepan over low heat until the sugar dissolves. When the cakes are done, let them cool for 10 minutes. Take them out of the pans and place them on a baking rack set over a tray. Spoon the orange syrup over the cakes and allow the cakes to cool completely.
  • To glaze, combine the confectioners' sugar and orange juice in a bowl, mixing with a wire whisk until smooth. Add a few more drops of juice, if necessary, to make it pour easily. Pour over the top of one cake and allow the glaze to dry. Wrap well, and store in the refrigerator.

3/4 cup fresh-squeezed orange juice (don't take the easy way out and use store-bought - it won't be the same)
1/4 cup fresh-squeezed lemon juice
2 teaspoons cornstarch
1/2 cup butter, melted
6 tablespoons sugar
3 eggs, plus
1 egg yolk, room temperature
4 egg yolks, room temperature
11 tablespoons sugar
2 tablespoons orange liqueur (like Cointreau or Grand Marnier)
1 tablespoon hot water
1 teaspoon vanilla
3/4 teaspoon grated orange zest
3/4 teaspoon ground cardamom
8 drops almond extract
5 egg whites, room temperature
1 pinch salt
1 pinch cream of tartar
1/2 cup sifted all-purpose flour
1/2 cup sifted cake flour
2 tablespoons butter, melted and cooled
6 tablespoons orange liqueur
1 1/2 cups whipping cream
2 tablespoons icing sugar
3 tablespoons candied orange peel (optional)

Steps:

  • For orange curd: Mix juices with cornstarch in saucepan until dissolved.
  • Whisk in butter, sugar, eggs and yolk until smooth.
  • Place over low heat and stir until mixture is thickened to consistency of thin yoghurt, 15-20 minutes.
  • DO NOT LET BOIL.
  • Place a piece of plastic wrap directly on the surface of the curd and cool, then refrigerate overnight; if butter begins to separate, whisk to reblend.
  • For cake: Position rack in center of oven and preheat to 350F.
  • Line bottom of 2, 9 inch round cake pans with parchment.
  • Combine yolks, 3 tblsps sugar, liqueur, hot water, vanilla, orange zest, cardamon and almond extract in large bowl and beat about 8 minutes.
  • Beat whites in a separate bowl, with clean beaters, adding a pinch of salt and another of cream of tartar, until soft peaks form.
  • Add remaining 8 tblsps sugar, one at a time, and beat until meringue is quite stiff and glossy.
  • Resift flours together.
  • Gently fold ¼ of meringue mixture into yolks.
  • Scrape yolk mixture over remaining meringue with spatula, then sift ¼ of flour over top and fold in.
  • Repeat until all flour is folded in, being careful not to deflate mixture or allow any lumps to remain.
  • Drizzle butter over and gently fold in using 3-4 strokes.
  • Pour into pans.
  • Bake until tops spring back when touched, 20-25 minutes, rotating cakes once.
  • Cool.
  • To assemble: Loosen cakes from pans and peel off paper.
  • Turn right side up.
  • Using long, serrated knife, halve cakes horizontally to make 4 layers.
  • Arrange 1 layer, cut side up, on platter.
  • Sprinkle with 1 tblsp liqueur; spread with 1/3 of curd.
  • Repeat 2 more times.
  • Top with last layer, flat side up.
  • Press gently to align.
  • Wrap cake in plastic wrap and refrigerate overnight.
  • Whip cream with 2 tblsps icing sugar and 2 tblsps liqueur to stiff peaks.
  • Reserve 2/3s cup cream.
  • Spread remaining cream smoothly over top and sides of cake.
  • Spoon reserved cream into pastry bag fitted with star tip and pipe decoratively around sides of cake.
  • Garnish with candied orange peel, if you wish and serve at room temperature.

4 eggs
1/2 cup sugar
1/2 cup all-purpose flour
1/2 cup butter, melted
2 medium oranges
3 egg yolks
1/2 cup sugar, plus
1 tablespoon sugar
3 tablespoons cornstarch
2 tablespoons all-purpose flour
2 cups milk
5 tablespoons Cointreau liqueur (or other suitable orange liqueur)
2 cups whipped cream

Steps:

  • For genoise: Preheat oven to 375°F.
  • Lightly butter and flour a 9 inch cake pan.
  • Beat eggs and sugar in large, heatproof bowl until well-blended.
  • Place bowl over low heat and whisk mixture by hand 40 times (about 1 minute).
  • Return bowl to mixer and beat until cool and quadrupled in volume.
  • Gently fold in flour, then butter, do not overmix.
  • Pour into prepared pan.
  • Bake until cake begins to pull away from side of pan and top feels springy to the touch, 20-25 minutes.
  • Invert onto rack and let cool.
  • For custard: Finely grate zest off the 2 oranges; reserve oranges.
  • Blend yolks, sugar, cornstarch and flour in medium bowl of mixer until smooth and lemon-coloured.
  • Scald milk.
  • Whisk thin stream of hot milk into yolk mixture and pour custard back into saucepan.
  • Cook over low heat, stirring constantly, until thick and smooth, about 10 minutes.
  • Add peel.
  • Place plastic wrap directly onto surface and cool completely.
  • To assemble: Cut cake into 3 even layers using a long, serrated knife.
  • Brush each layer with some of the Cointreau.
  • Set 1 layer on a cake plate and spread with half of custard.
  • Repeat with second layer.
  • Add third layer.
  • Frost top and sides with whipped cream.
  • Thinly slice and remove membranes from sections of reserved oranges.
  • Try to make attractive pieces.
  • Decorate top of cake with these if desired.
  • Refrigerate until ready to serve.
