I have to try this one when my tomatoes come in this Summer. **Can also add sliced cucumbers along with tomatoes.**

6 medium tomatoes, homegrown and sliced
2/3 cup olive oil
1/4 cup wine vinegar
1/4 cup fresh parsley, finely chopped
1/4 cup green onion, finely chopped
1 garlic clove, minced
1 teaspoon salt
1 teaspoon dill weed
1 teaspoon basil leaves, chopped
1/4 teaspoon pepper

Steps:

  • Arrange tomato slices on a serving dish.
  • Combine remaining ingredients mixing well and pour over tomatoes.
  • Cover and refrigerate for 1-2 hours occasionally spooning dressing over tomatoes.

This is a very simple and yummy side dish. I learned in while living in France from an old Mediterranean lady. This is always a hit!

Number Of Ingredients 5

5 medium whole (2-3/5" dia) (blank)s fresh tomatoes
5 each shallots, coarsely chopped
½ cup olive oil
¼ cup balsamic vinegar
1 loaf French bread, for dipping

Steps:

  • Core and slice the tomatoes, and arrange them in a serving dish. Sprinkle the shallots over the tomatoes. Whisk the olive oil and balsamic vinegar together with a fork, then pour over the tomatoes. Let stand for 5 minutes before serving, or refrigerate, covered, for up to 3 days. Eat with French bread, and dip the bread in the marinade when finished with the tomatoes.

2 lb ripe tomatoes, cut crosswise into 1/2-inch-thick slices
1 scallion, thinly sliced diagonally

Steps:

  • Whisk together oil, vinegar, brown sugar, salt, and pepper in a small bowl. Arrange one third of tomatoes in 1 layer on a large plate, then drizzle with some dressing and sprinkle with some scallion. Make 2 more layers of tomatoes, drizzling each with dressing and sprinkling with scallion.

  • Preheat the oven to 400°F. To form tomato shells, with a serrated knife, slice off the tops of the tomatoes and remove their cores. Using a melon baller or a spoon, scoop out the seeds and pulp of the tomatoes to create a shell, transferring the juices and pulp to a small bowl. Using your hands, squish the pulp and seeds until smooth but slightly chunky. Set aside.
  • Meanwhile, to make the filling, spray a large skillet with nonstick cooking spray and place over medium heat. Add the onion and cook until translucent, about 3 minutes. Add the garlic and cook until fragrant, 45 to 60 seconds. Add the vegetables and cook, stirring occasionally, until just tender, about 8 minutes. Add the reserved tomato mixture and cook until it’s absorbed into the corn and the skillet is dry, stirring occasionally, about 3 minutes. Add the cheese and stir to combine. Taste and adjust for seasoning with salt and pepper.
  • Arrange the tomato shells, cut-side up, in a small casserole dish. Spoon some of the filling into the prepared tomatoes. (You’ll probably have left over; it can be eaten separately as a side dish.) Sprinkle over the benne seeds. Bake until the tomatoes are heated through, about 10 minutes. Scatter over the chopped herbs and serve immediately.
