400g new potatoes , cut into small cubes
140g frozen peas
good handful baby spinach leaves
1 tbsp white wine vinegar
2 tsp olive oil

Steps:

  • Heat grill to medium and line the grill pan with foil. Beat the egg white on a plate with a little salt and pepper. Tip the parmesan onto another plate. Dip the chicken first in egg white, then in the cheese. Grill the coated chicken for 10-12 mins, turning once until browned and crisp.
  • Meanwhile, boil the potatoes for 10 mins, adding the peas for the final 3 mins, then drain. Toss the vegetables with the spinach leaves, vinegar, oil and seasoning to taste. Divide between four warm plates, then serve with the chicken.

Kosher salt and freshly ground black pepper
1 cup all-purpose flour
2 large egg whites
Extra-virgin olive oil
8 (4-ounce) boneless, skinless chicken breast halves (each 1/2 inch thick)

Steps:

  • Arrange an oven rack in the lowest position. Preheat the oven to 425°F.
  • Using a box grater, grate half of the cheese on the small holes and the rest on the large holes. Put all the cheese in a shallow dish, along with 1 teaspoon salt and 1/2 cup of the flour. Toss until evenly mixed. Spread the remaining flour in an even layer in another shallow dish. Whisk the egg whites in a shallow bowl until foamy.
  • Coat a large rimmed baking sheet with oil to a depth of 1/8 inch. Lightly season the chicken breasts with salt and pepper. Dredge the flat, smooth side of each chicken breast in the plain flour, shake off the excess, then dredge in the egg, and finally press into the Parmesan mixture. Put the chicken, Parmesan side down, in the pan, spacing the breasts apart.
  • Bake until the crust is golden brown and the meat between the tender and breast is still rosy, about 10 minutes. Remove from the oven, carefully flip the breasts in the pan, and let stand for 2 minutes. Serve immediately.

4 slices firm white sandwich bread, torn into large pieces
1/2 cup grated Parmesan cheese
2 tablespoons coarsely chopped fresh parsley
Coarse salt and ground pepper
1 large egg, lightly beaten
4 boneless, skinless chicken breast cutlets (4 to 6 ounces each)
2 tablespoons olive oil
2 tablespoons fresh lemon juice
1 tablespoon Dijon mustard
2 tablespoons cold butter, cut into small pieces

Steps:

  • In a food processor, pulse bread, Parmesan, parsley, and 1/4 teaspoon each salt and pepper until fine crumbs form. Transfer mixture to one shallow bowl; place egg in another.
  • One at a time, dip each chicken cutlet into egg; let excess drip off, then dip into breadcrumb mixture. Press on crumbs firmly.
  • Heat 1 tablespoon oil in a large nonstick skillet over medium heat. Cook cutlets, two at a time, adding remaining tablespoon oil for second batch, until cooked through, 2 to 3 minutes per side.
  • Wipe skillet clean. Add lemon juice and 1/4 cup water; cook over low until steaming, 1 minute. Add mustard. Remove pan from heat, and stir in butter until combined. Serve cutlets with sauce.
