CHOCOLATE-ALMOND CUPCAKES WITH FLUFFY COCONUT FROSTING

Steps:
- Preheat oven to 350°F. Butter muffin cups.
- In food processor, process almonds and 1/2 cup sugar until finely ground. Add 2 loosely packed cups shredded coconut and pulse twice to chop slightly. Transfer mixture to medium bowl and whisk in flour, cocoa, baking powder, baking soda, and salt.
- In metal bowl set over pan of barely simmering water, melt chocolate, stirring until smooth. Remove from heat and set aside.
- Using electric mixer, beat butter and remaining 1 cup sugar at high speed until fluffy, about 5 minutes. Beat in eggs 1 at a time, beating well after each addition. Add melted chocolate and beat at moderate speed until incorporated. Add 1/2 of flour mixture and mix at low speed until nearly smooth. Add coconut milk and vanilla and mix at low speed until blended. Add remaining flour mixture and mix at low speed until smooth.
- Spoon batter into prepared muffin cups, filling almost to top. Bake until tester inserted in center of 1 cake comes out clean, about 25 minutes. Cool in pans on racks.
- Pour remaining shredded coconut into 9-inch-square baking dish. Run small knife around edges of pans and unmold cakes. Spread frosting on cakes and invert each into coconut to coat frosting liberally. Garnish with Jordan almonds, if desired.

- In a medium bowl, whisk together all wet ingredients. It helps to measure the oil first, then the honey in the same 1/4 measuring cup. The honey will slide right out thanks to the oil! When measuring the canned coconut milk, be sure to shake the can really well before measuring so the white part and the more watery part are well combined to create a smooth milk. Some brands don't shake easily, so just add to a separate bowl and whisk together before measuring if needed.
- Add in the dry ingredients, making sure to spoon and level the flour, starch and cocoa powder. Whisk to combine until completely smooth. It might seem thick at first, but as the eggs break up it'll become like a normal cake batter.

- Cream the butter and sugar on low with a hand mixer or stand mixer fitted with paddle attachment. After 1 minute, increase the speed to medium-high and continue beating for 2 minutes until creamy and light. Add eggs, one at a time, beating well after each addition. Add sour cream and extracts; mix well. In a separate bowl, whisk the flour, cocoa, baking soda and salt; add to the creamed mixture alternately with buttermilk, beating on low after each addition. Use a spatula to fold the mixture (scooping along the bottom especially) to incorporate everything *just until you don't see any streaks* but avoid over-mixing.
- Spoon the fluffy batter into the cupcake liners only halfway (this is imperative! Only halfway!). Bang the tray hard on the counter to release any air pockets. Bake on the middle rack until a toothpick inserted in the center comes out clean, 19-21 minutes. Cool completely before frosting.
- For frosting, cream butter, powdered sugar and extracts together over low speed for about 1 minute. Add the milk to form a thick, smooth frosting. Spread with an offset spatula or pipe over cupcakes just before serving.
