CINNAMON BUTTER
I found this "clone" recipe at recipegoldmine.com. It is very similar to the cinnamon butter served at Texas Roadhouse restaurants in Dallas. They bring it to you to serve on their in house dinner rolls. (Please see recipe I posted for these rolls (Texas Roadhouse Buttery Dinner Rolls), just recently. I love how easy this is to mix up and serve, probably with ingredients you already have on hand. Cook time is prep. time.

BEST CINNAMON BUTTER
The first time I ever tried cinnamon butter was at an overnight camp when I was 13. Since then, I've tried countless combinations of sugar and cinnamon to match its creamy yet gritty perfection, if attainable at all. Fortunately, I think I've got it. It tastes delicious on any type of bread, toasted or not. It's fantastic for breakfast, and is super easy to prepare. Just beware that once you've tried it, it will be appearing in your kitchen much more frequently. Enjoy!

- Make sure butter is at room temperature. If not, microwave for 20 seconds, taking it out to check it every 5 seconds. You want it to be soft, not melted.
- Using the back of a spoon, mash the butter until it's smooth and creamy.
- Add the cinnamon, white sugar and brown sugar to the butter. Make sure the brown sugar is not in clumps when you add it to the butter.
- Mix well, until everything is combined. Serve chilled or at room temperature on bread or toast.

- Preheat oven to 300°F
- In a small bowl combine sugar and cinnamon for topping; set aside.
- In a medium bowl combine flour, soda and salt. Mix well with a wire whisk; set aside.
- In a large bowl blend sugars with an electric mixer set at medium speed.
- Add the butter and mix to form a grainy paste. Scrape sides of bowl, then add eggs and vanilla extract.
- Mix at medium speed until light and fluffy. Add the flour mixture and blend at low speed just until combined. DO NOT OVERMIX.
- Shape dough into 1-inch balls and roll each ball in cinnamon-sugar topping.
- Place on ungreased cookie sheets, 2-inches apart.
- Bake for 18-20 minutes or until done.
- Immediately transfer cookies with a spatula to a cool, flat surface.
- (I'm not sure of the yield, so I've just included an estimate).

CINNAMON SUGAR BUTTER
Use this sweet spiced butter for the most amazing cinnamon toast. After you toast the bread of your choice, spread on some cinnamon butter and stick it under the broiler for a few seconds to melt. Store the cinnamon sugar butter in the refrigerator for a week or freeze it for several weeks.

- Cut the butter in 1-inch pieces and place the pieces into the work bowl of a mixer fitted with the paddle attachment. Add the sugar and cinnamon. Starting on slow speed, beat until the ingredients begin to incorporate.
- Turn up the speed to medium-high and whip until all the ingredients are well incorporated. The outside of the mixing bowl should feel cool. If the bowl begins to get too warm, stop the mixer and refrigerate the bowl for 15 minutes before continuing.
- When all the ingredients are well mixed, use a spatula to scrape the butter onto a large piece of parchment paper or wax paper. Roll the butter into a long tube that is 1 or 2 inches in diameter, and twist the ends to seal in the butter. Chill for at least several hours. Alternatively, scrape the butter into a ramekin and cover it with plastic wrap before chilling.
- When you are ready to serve the butter, cut it into rounds and remove the parchment paper. Alternatively, simply put it on the table in its ramekin.
BROWN SUGAR N CINNAMON BUTTER
This recipe is listed in my most recent Penzy catalog and no only does it sound simple with only 3 ingredents but also yummy. They recommend spreading it on slices of Apple Bread, but I can also see it being awesome on pancakes. Cooking time is freezer time.

- Place butter, brown sugar and cinnamon in a medium bowl.
- Mix until thoroughly blended.
- Place on edge of a sheet of parchment or wax paper (about 1 foot long) and roll tightly.
- Twist both ends of paper and place in freezer until firm, about one hours.
- After 30 minutes, it will be easier to get a more perfect cylinder shape by re-rolling the half firm butter in the paper and popping back in the freezer.
