1 large onion, finely chopped

2 cups soft bread cubes or 2 cups whole wheat bread cubes, toasted
1 cup chopped walnuts
2 tablespoons dried whole-leaf sage
1/2 teaspoon dried rosemary
1/2 teaspoon dried thyme
1 large egg, beaten
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Melt butter in a small skillet over medium-high heat; add onion and celery, and cook, stirring constantly, until tender.
  • Combine apples, bread cubes, and next 4 ingredients in a large bowl; stir in vegetable mixture, egg, and remaining ingredients.
  • Spoon into a lightly greased 11x7x1 1/2-inch baking dish.

Steps:

Steps:

  • In a large skillet, heat 1 tablespoon oil over medium-high. Add onions and celery; season with salt and pepper. 1 lb package Ritz Crackers
1 can (14 ounce) chicken broth
1/2 tsp poultry seasoning
1/4 tsp paprika
1/4 tsp garlic powder
salt and pepper to taste

Steps:

  • Saute onion, celery, and mushrooms in a few Tbsp. vegetable oil or cooking spray in a large non-stick skillet.
  • Lightly break up crackers in their packs, then open and place in a large bowl. Add can of broth and seasonings, mix well. Saute cracker mixture with vegetables until lightly browned about 5 minutes, stirring as you go.
  • Stuff in 12 lb. turkey like you would for bread stuffing or heat in a casserole to serve on the side.

This portobello mushroom-based stuffing has all the amazing flavors of a hearty stuffing without the bread. It is so easy, rich, and delicious, my family eats it as a side dish for any type of meat, any time of year.

½ medium eggplant, cut into 1/2-inch slices
salt and freshly ground black pepper to taste
1 medium sweet onion, chopped
½ cup chopped walnuts
1 stalk celery, diced
1 clove garlic, crushed
3 large portobello mushrooms, diced
1 cup diced mixed mushrooms (such as shiitake, maitake, oyster, beech, and/or chanterelles)
4 (3.5 ounce) links sweet Italian sausages
1 cup chicken stock
2 tablespoons red wine, or to taste
2 tablespoons butter, divided, or more to taste
2 teaspoons dried oregano
1 teaspoon dried rosemary
1 teaspoon dried sage
2 large red apples, diced

Steps:

  • Sprinkle each eggplant slice generously with salt and sandwich between paper towels. Place a heavy pan on top of the eggplant slices and set aside for 30 minutes.
  • Combine onion, walnuts, celery, and garlic in a bowl. Mix all mushrooms in a second bowl.
  • Heat an oven-safe skillet over medium-low heat. Squeeze sausage meat without the skin into meatball-sized segments and add to the skillet. Cook in its own juices until browned, breaking up sausage into bite-sized pieces while cooking, 3 to 5 minutes. Add onion mixture to the skillet and saute until soft, about 10 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Meanwhile, rinse off salt and any accumulated liquid from eggplant slices. Don't be afraid to twist and squeeze the slices. Dice eggplant and add with mushrooms to the skillet. Continue to cook stuffing over low heat until mushrooms have softened, about 10 minutes. Add chicken stock, red wine, and 1 tablespoon butter. Season with oregano, rosemary, sage, salt, and pepper. Mix in diced apples. Place remaining butter in thin pats on top of the stuffing and transfer skillet to the preheated oven.
  • Cook stuffing until browned on the top, about 15 minutes.

SEAFOOD STUFFING (AND MAKE-AHEAD STUFFED MUSHROOMS)



Seafood Stuffing (and Make-ahead Stuffed Mushrooms) image

This is a basic New England style seafood stuffing using Ritz crackers that can be used to stuff mushrooms, seafood, or even as a topping for baked fish. I incorporated some of my favorite ingredients from different recipes. I've included a recipe for stuffed mushrooms that can be prepared and refrigerated for up to 2 days before, or frozen for up to a month, since the mushrooms are pre-cooked. Using small mushrooms, this recipe will fill about a pound of mushrooms, about 20-25 if you use small appetizer-sized ones. You can include the chopped mushrooms stems if you like, but I usually leave them out, and use them another time. Time is for making the stuffing only, since the mushrooms have some variations. Amount is approximately for stuffing.

6 ounces round buttery crackers (ritz -- see note)
1 tablespoon dried parsley flakes (or 3 tbs. fresh -- minced)
1 tablespoon olive oil
5 tablespoons butter, divided
2 tablespoons finely minced celery
1/4 cup carrot, finely chopped or coarsely grated
1/4 cup finely chopped green onion, green & white parts
1/4 cup finely chopped green pepper
1 teaspoon finely minced garlic
4 ounces cooked chopped seafood (shrimp, crabmeat, artificial crab, scallops, lobster, or a mixture of any of the above)
1 teaspoon Old Bay Seasoning or 1 teaspoon other seafood seasoning
3/4 teaspoon nutmeg
1 tablespoon madeira wine or 1 tablespoon marsala
1 tablespoon Worcestershire sauce
1/2 cup vegetable broth or 1/2 cup clam juice
fresh ground black pepper
salt, if desired
paprika
1 lb mushroom (small or large)
1 1/2 teaspoons olive oil
1/4 teaspoon salt
lemon wedge (to garnish)

Steps:

  • In a large bowl, finely crush the crackers and mix in the parsley flakes.
  • Set aside.
  • Heat the 1 tbs.
  • olive oil and 3 tbs.
  • butter on a medium to high heat, watching carefully.
  • When hot and just starting to bubble, add the celery and carrots.
  • Cook, stirring occasionally, for one minute.
  • Add the onions and green peppers (and mushrooms if using-- see directions for make-ahead mushrooms below) and cook for another minute.
  • Add the garlic and cook for another 1/2 minute to a minute until vegetables are tender.
  • Remove from heat and pour entire vegetable and butter mixture into crushed crackers.
  • Add the chopped seafood, old bay seasoning, netmeg, sherry, worcestershire sauce, clam juice, and pepper to taste.
  • Mix well so the seasonings are evenly distributed.
  • Taste for seasoning and adjust if necessary.
  • I find the salt in the crackes and other ingredients is enough, but if you prefer you can add some additional salt at this time.
  • Makes about 2 to 2 1/2 cups stuffing.
  • To prepare Make-Ahead Stuffed Mushrooms: Preheat oven to 425.
  • Remove stems from mushrooms and wash the mushrooms.
  • (Save stems for another use, or you can chop them finely and add to the stuffing if desired by adding them along with the onions and green pepper to the butter. If doing so, add another 1/2 tbs. butter. However, I think this stuffing is better without them).
  • Toss mushrooms with 1 1/2 tsp.
  • olive oil and salt and place them in a shallow baking pan in one layer.
  • Bake for 8-10 minutes (depending on size of mushrooms) and remove from oven to cool.
  • Stuff the mushrooms evenly with the stuffing.
  • Place in a shallow baking dish and sprinkle evenly with paprika.
  • At this point you can refrigerate the mushrooms for up to 2 days, or freeze them for up to a month; thaw at least partially before cooking.
  • When ready to serve, melt the remaining 2 tbs.
  • of butter.
  • Drizzle evenly over the mushrooms.
  • If the mushrooms are room temperature, just broil them until the tops are crispy and they are heated through.
  • If they are refrigerated or partially frozen, bake at 350 until heated through, then just run under the broiler for a few seconds to crisp the top, if necessary.
  • Serve garnished with lemon wedges.

1 cup diced onion

12 cups dried bread crumbs
1 ½ cups hot chicken broth
2 eggs, beaten
2 cups diced apple without peel
¼ cup chopped parsley

Steps:

  • Butter one 9x13 inch casserole dish. Preheat oven to 375 degrees F (190 degrees C).
  • Rinse, pat dry and quarter mushrooms. In large skillet heat butter and add mushrooms, onion and celery; saute 5 minutes and remove from heat. Stir in poultry seasoning, salt and pepper.
  • In large mixing bowl, combine bread crumbs with broth and eggs, add mushroom mixture, apples and parsley; mix well. Turn into casserole dish.
  • Cover and bake at 375 degrees F (190 degrees C) for about 45 minutes. Remove cover and bake 15 minutes longer to brown top.

2 cups yellow onions, diced
4 apples, diced
2 cloves garlic, minced
2 cups celery, diced
1 tablespoon fresh thyme, chopped, or 1/4 teaspoon dried thyme
5 tablespoons unsalted butter
Turkey heart, liver and gizzard, trimmed
2 cups chicken or turkey stock
10 cups fresh white bread crumbs
1 1/2 cups walnut meats, lightly toasted and chopped
4 tablespoons chopped parsley
2 tablespoons chopped sage
Coarse salt and freshly ground pepper to taste

Steps:

  • Soften the onions and the apples with the garlic, celery and thyme in four tablespoons butter.
  • In a separate pan, brown the giblets in the remaining tablespoon butter. Remove the liver and add the stock. Simmer over low heat for 45 minutes, or until the heart and gizzard are tender. Reserve the cooking liquid. Dice the heart, gizzard and liver and set aside.
  • Place the bread crumbs in a large bowl. Add the onion-celery mixture and the giblets. Add the walnuts, parsley and sage and add enough stock to moisten the stuffing. Season to taste with salt and pepper.
