2 loaves pita bread
Extra virgin olive oil
Kosher salt
2 tsp sumac, divided, more as needed
1 heart of Romaine lettuce, chopped
1 English cucumber, cut in half, seeds scraped, then chopped or sliced into half moons
5 Roma tomatoes, chopped
5 green onions (both white and green parts), chopped
5 radishes, stems removed, thinly sliced
2 cups chopped fresh parsley leaves, stems removed
1 cup chopped fresh mint leaves (optional)
Juice of 1 lemon or 1 1/2 limes
1/3 cup extra virgin olive oil
1 to 2 tablespoons pomegranate molasses, optional
Salt and pepper
1 tsp sumac
1/4 tsp ground cinnamon
scant 1/4 tsp ground allspice

Steps:

  • Break the pita bread into small bite-size pieces. Heat 3 tbsp of olive oil in a large pan until shimmering, and add the pita bread. Fry briefly until browned, tossing frequently. Using a pair of tongs, transfer the fried pita chips to a plate lined with paper towel to drain. Season with salt, pepper and sumac.
  • In a large mixing bowl, combine the chopped lettuce, cucumber, tomatoes, green onions with the sliced radish and parsley.
  • To make the dressing, in a small bowl, whisk together the lemon or lime juice, olive oil, pomegranate molasses (if using), salt, pepper and spices.
  • Pour toss lightly. Finally, add the pita chips, and more sumac if you like, and toss one more time. Transfer to small serving bowls or plates. Enjoy!

2 large pita breads (or see Variation)
1 heaping cup cherry or grape tomatoes, halved
1 medium cucumber, peeled, quartered lengthwise, and sliced
2 scallions, thinly sliced
1/4 cup chopped fresh parsley and/or fresh mint leaves to taste
1/4 cup thinly sliced red onion
Several radishes, thinly sliced
2 tablespoons olive oil, preferably extra virgin
Juice of 1 lemon
2 to 3 big handfuls of baby greens or 1/2 small head shredded dark green lettuce
Salt and freshly ground pepper to taste

Steps:

  • Cut the pita breads into 1 inch or so squares with kitchen shears or a sharp knife. Toast in a 375º F. oven or toaster oven until golden and turning crisp, about 8 to 10 minutes.
  • Combine the remaining ingredients in a serving bowl. Add the cut pita and toss again. Serve at once.

1 head romaine lettuce, chopped
4 radishes, diced
1 English cucumber, sliced
1 tomato, diced

salt and ground black pepper to taste
¼ cup lemon juice
¼ cup olive oil
1 tablespoon ground sumac

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place pita bread on a baking sheet.
  • Bake in the preheated oven until the bread is a light brown, 5 to 7 minutes. Remove from the oven and allow to cool, 1 to 2 minutes. Break toasted bread into bite-size pieces.
  • Combine lettuce, radishes, cucumber, tomato, garlic, green onions, parsley, mint, and salt and pepper together in a bowl; toss until salad is well mixed.

  • Arrange the romaine lettuce on 2 serving plates and spoon cucumber mixture on top.
  • Garnish each plate with a scoop of hummus.

It is a spice that is made from the dried, powdered berries of the sumac tree. It was my first time trying Saumac and I really enjoyed it, next time I would add one more teaspoon of the Saumac. This was used as a side salad for Recipe #218539 . This recipe comes from a book called "The Lebanese Cookbook" by Hussien Dekmak

1/2 cup fresh parsley
1 garlic clove (chopped)
2 tablespoons extra virgin olive oil
1 cucumber (seedless or with seeds)
1 red bell peppers or 1 green bell pepper
4 celery ribs
1/2 large red onion
2 tomatoes
1/2 lb feta cheese (crumbled)
1/2 cup kalamata olives or 1/2 cup manzanilla olives
6 pepperoncini peppers (light green peppers)
2 lemons, juice of (just need the juice)

Steps:

  • Pre-heat oven to 375 degrees F.
  • Arrange torn up pieces of pita bread on baking pan and toast for 5 minutes.
  • While pitas toast, cut up cucumber, bell pepper, celery, red onion, tomatoes, olives,and hot peppers into bite-sized pieces.
  • Through all veggies into a big bowl and add garlic, parsley, and feta cheese to the pile.
  • Squeeze the lemons to spread juice over entire bowl.
  • Drizzle the 2 tablespoons of Extra-virgin olive oil onto salad.
  • Toss the salad in bowl to coat everything!
  • Add the toasted pita pieces to the salad and toss everything again!
  • Suggest pairing with the Mediterranean burgers for a healthy dinner!
