These Best Ever Double Chocolate Muffins are moist and chocolatey, and packed with chocolate chips! Easy to make in only one bowl!

1 1/2 cup all purpose flour
1/2 cup cocoa powder
3/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup chocolate chips
1 cup milk
2 eggs
1/2 teaspoon vanilla extract
1/3 cup vegetable oil

Steps:

  • Preheat your oven to 350 degrees Fahrenheit and prepare a 12-cup muffin tin with paper liners.
  • In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, and salt, along with the chocolate chips, reserving a few chocolate chips for topping the muffins (optional).
  • Into a large liquid measuring cup or bowl, add the milk, eggs, vanilla and oil. Whisk together with a fork.
  • Add the liquid ingredients and mix everything together just until no streaks of flour remain.
  • Divide the batter evenly between the 12 muffin cups and top with the remaining chocolate chips (optional).
  • Bake at 350 degrees Fahrenheit for about 23-25 minutes, or until a toothpick inserted into the centre of one of the muffins comes out clean.

2 cups all-purpose flour
½ cup white sugar
3 teaspoons baking powder
½ teaspoon salt
¾ cup milk
⅓ cup vegetable oil
1 egg
¾ cup mini semi-sweet chocolate chips
3 tablespoons white sugar
2 tablespoons brown sugar

Steps:

  • Heat oven to 400 degrees F (205 degrees C). Grease bottoms only of 12 muffin cups or line with baking cups.
  • In a medium bowl, combine flour, 1/2 cup sugar, baking powder, chocolate chips, and salt; mix well. In a small bowl, combine milk, oil and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy.)
  • Fill cups 2/3 full. Sprinkle tops of muffins before baking with a combination of 3 tablespoons sugar and 2 tablespoon brown sugar.
  • Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 1 minute before removing from pan. Serve warm.

1/3 cup brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup milk (I use rice milk)
1/2 cup butter, melted
2 eggs, beaten
1 teaspoon vanilla extract
1 1/2 cups semi-sweet chocolate chips

Steps:

  • Preheat oven to 400 degrees F and line a 12-cup muffin pan with paper cups, or grease the pan.
  • In a large bowl, combine all dry ingredients.
  • In another bowl, mix melted butter, beaten eggs, milk, and vanilla.
  • Pour the wet ingredients into the dry and mix until just combined.
  • Stir in chocolate chips.
  • Divide into 12 muffin cups.
  • Sprinkle a little granulated sugar on top of each muffin for a little sparkle and crunch (optional).
  • Bake at 400 for 15-20 minutes or until a toothpick inserted into middle of muffin comes out clean.

1/4 cup prune
1/2 cup brown sugar
4 tablespoons trans-fat free margarine
3/4 cup low-fat buttermilk
3/4 cup semi-sweet chocolate chips
1 large egg white
2 teaspoons vanilla
2 cups whole wheat pastry flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup toasted wheat germ

Steps:

  • Preheat oven to 350°F.
  • Coat a 12 cup muffin tin with cooking spray or line with paper baking cups.
  • Put prunes in a blender with 1/4 cup hot water and puree until smooth.
  • In a large mixing bowl, beat the brown sugar and margarine with a wooden spoon until creamy. Stir in buttermilk, chocolate chips, prune puree, egg white, and vanilla.
  • Add the flour, baking powder, baking soda, and salt, and stir until just combined; do not overmix. There should be some lumps in the batter.

250g self-raising flour
1 tsp bicarbonate of soda
150g chocolate chips, milk, white, dark or a mix of all three
100g golden caster sugar
2 eggs, lightly beaten
150ml natural yogurt
100g unsalted butter, melted

Steps:

  • Heat oven to 200C/180C fan/gas 6 and line a 12-hole muffin tin with paper cases. Sift the flour and bicarbonate of soda into a large bowl, then stir in the chocolate chips and sugar. Add the beaten eggs, yogurt and butter, and stir to combine. It doesn't matter if the mixture looks a bit lumpy, it's more important not to overmix or the muffins will turn out tough.
  • Fill the paper cases and bake for 20-25 mins until risen and golden brown. Transfer to a rack to cool - or eat slightly warm. Will keep for three days in an airtight container.
