SICILIAN-STYLE GRILLED TUNA STEAKS

4 tuna steaks (,about 6 ounces each and 1 inch thick (swordfish makes a great substitute))
Extra virgin olive oil for brushing
Kosher salt and freshly ground black pepper
1 tablespoon extra virgin olive oil
2 cloves garlic (minced)
1 cup diced fresh tomatoes
1 cup dry white wine
2/3 cup sliced firm green olives ((I used Lindsay Sicilian-style Olives))
1/4 cup capers (,drained (I used Lindsay))
1 1/2 tablespoons fresh lemon zest
2 tablespoons fresh lemon juice
2 teaspoons chopped fresh thyme
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup chopped fresh parsley

Steps:

  • Brush the tuna with some oil and sprinkle with salt and pepper. Heat the grill and brush the cooking grates with oil.
  • Heat the oil in a small skillet over medium heat and cook the garlic for a minute. Add the tomatoes and cook for another couple of minutes. Add the wine and bring to a rapid boil for two minutes. Add all remaining ingredients except for the parsley and simmer uncovered for 5 minutes. Stir in the parsley and remove from heat.
  • Sear the tuna steaks over high, direct heat for 1-2 minutes on each side. (For the best texture and to prevent becoming dried out tuna should be rare to medium rare on the inside.)
  • Serve the tuna steaks immediately topped with the sauce.

2-4 tuna steaks
⅓ cup olive oil
1 tablespoon honey
1 tablespoon minced garlic
1 tablespoon finely chopped cilantro
1 tablespoon finely chopped parsley
1 teaspoon salt
½ teaspoon cumin
½ teaspoon coarsely cracked black pepper (or ¼ teaspoon ground pepper)
½ teaspoon smoked paprika
juice of half a lemon (about 2 tablespoons)

Steps:

  • Combine all of the marinade ingredients and whisk vigorously.
  • Place tuna steaks in a gallon ziploc bag. Add the marinade, toss to coat the tuna steaks, press out excess air and seal (if using ziploc bag).
  • Transfer to the fridge and chill for 30 minutes.
  • Grill 6-8 minutes on each side until easily flaked with a fork and center of tuna steak is just barely pink. Internal temperature should read 90-95 degrees when done. Alternately, steaks can be seared in a skillet over medium-high heat, or broiled in the oven at 400 degrees.

3 tablespoons salted butter
2 tablespoons jarred capers, drained
1/4 cup fresh Italian flat-leaf parsley, finely minced
1 whole garlic clove, peeled and smashed
1/2 teaspoon Dijon mustard
1 pinch kosher salt
4 steaks (1 pound) high quality ahi tuna (sashimi grade recommended; wild caught if you can find it*)
1 tablespoon neutral oil
1 1/2 teaspoons kosher salt
Fresh ground black pepper

Steps:

  • Allow the tuna steak to come to room temperature by letting it stand for at least 20 minutes. (Use this time to prep the ingredients for the sauce!)
  • Pat the tuna dry. Sprinkle it liberally with kosher salt and fresh ground black pepper on both sides to get a nice even coating.
  • Heat the oil in a medium skillet over medium high heat. Add the tuna steaks and cook 1 to 2 minutes per side, until lightly browned on the outside but still rare the inside. The tuna will continue cooking while sitting. For a medium-rare tuna steak, the internal temperature should be 130 degrees Fahrenheit when measured with a food thermometer at the thickest point.
  • Allow the tuna to cool for 3 minutes while you make the sauce.
  • Melt the butter in a small saucepan or skillet over low heat. Once melted, add the capers (whole or chopped for a smoother sauce), finely minced parsley, the smashed garlic clove, Dijon mustard, and salt and cook until fragrant, about 3 minutes. Remove from heat and remove garlic clove.
  • Slice the tuna against the grain into ½-inch slices and serve immediately with a few drizzles of the sauce.

3 sprigs fresh rosemary, about 2 tablespoons leaves stripped from stem
Handful flat leaf parsley
3 cloves garlic, crushed

Extra-virgin olive oil, for cooking
Mixed green salad dressed with oil and vinegar
Stuffed portobellos, recipe follows
2 tablespoons balsamic vinegar
1 large lemon, juiced
2 teaspoons Worcestershire sauce
2 tablespoons extra-virgin olive oil, plus more, for drizzling
4 medium to large portobello mushroom caps

2 (5 ounce) tuna steaks
salt and ground black pepper to taste
⅓ cup fat-free half-and-half
¼ cup garlic-and-herb spreadable cheese (such as Alouette®)
1 teaspoon lemon juice
2 cups fresh spinach

Steps:

  • Heat a nonstick skillet over medium heat. Melt butter in the hot skillet. Season tuna steaks with salt and pepper and place in the skillet. Cook for 3 to 4 minutes per side. Remove to a serving plate and keep warm.
  • Add half-and-half and spreadable cheese to the same skillet and stir until incorporated. Add lemon juice. Set 2 tablespoons of the sauce aside. Add spinach to the remaining sauce in the skillet and cook until wilted, 1 to 2 minutes.
  • Divide spinach between 2 plates and place tuna steaks on top. Serve reserved sauce over the steaks.

3 zucchini, ends trimmed
4 (3 ounce) cans tuna, drained and flaked
¼ onion, grated
1 tomato, finely chopped
1 cup dry bread crumbs
1 egg, beaten
salt and ground black pepper to taste
1 tablespoon olive oil

Steps:

  • Fill a large pot with salted water, place the zucchini into the pot, and boil over medium heat for about 5 minutes to soften. Remove the zucchini, slice in half lengthwise, and allow to cool.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
  • Scoop out the flesh from the zucchini halves, leaving a 1/2-inch shell. Set aside the scooped out flesh in a bowl.

6 medium garlic cloves, thinly sliced

1 pint cherry tomatoes, halved or 1 (28-ounce) can whole, peeled tomatoes, chopped

1 large onion, sliced (about 1 cup)

Steps:

  • 1. In a medium skillet over moderately high heat, warm the oil. Season the tuna with salt and pepper and sauté, turning once, until golden on both sides, 3 to 4 minutes total. Remove the tuna and set aside. Do not clean the pan.
  • 2. In the same pan over low heat, sauté the onion, stirring frequently, until just tender, about 1 minute. Add the garlic, capers, olives, raisins, and tomatoes, and continue cooking, stirring, until heated through, about 2 minutes. If the tomatoes don't release much juice, add the fish stock or water to give the sauce some body.
  • 3. Return the tuna to the pan and cover it with a tight-fitting lid. Cook over moderate heat until the tuna reaches the desired doneness, 2 to 3 minutes for medium.
  • 4. Add the parsley and basil and stir to incorporate, then season to taste with salt and pepper. Serve the fish with the sauce spooned over the top; garnish with pine nuts.

An Asian flavor that is very unique and delicious. This is one of those recipes that looks fancy but is actually quite easy to prepare. I used pre-bagged mixed greens, found near the bagged salads in the grocery store. You can make this in your broiler or on the grill!

1 1/2 cups mesclun or 1 1/2 cups other mixed greens, torn
2 (3/4 lb) tuna steaks
1 clove garlic, minced
1 teaspoon any strong mustard
1 teaspoon ground ginger
1/2 teaspoon sesame oil
1/2 teaspoon black pepper
1/4 cup dry white wine (or water)
1/4 cup soy sauce
1 1/2 tablespoons lime juice

Steps:

  • Preaheat your grill or broiler.
  • Mix together all the ingredients except the tuna and greens.
  • Use a sharp, thin-bladed knife to make a small incision on any side of the tuna steak, creating a pocket, being careful not to cut through to the other side.
  • You can also make a small cut and then either wiggle the knife around gently or just start slowly easing the inside apart to create a large pocket.
  • Place the tuna in the soy mixture, covering each side.
  • Remove tuna from liquid, letting excess sauce drip off.
  • Toss the greens with the sauce, drenching it in the liquid.
  • Stuff the tuna pocket with the greens and seal the opening with toothpicks.
  • Grill or broil the tuna, turning once, about 5 minutes per inch of thickness, or however well-done you like your tuna.
