Roasted Eggplant and Lamb Recipe image

This easy aromatic lamb-stuffed roasted eggplant is a great all-in-one meal perfect for any occasion.

Provided by Jas

Categories     Main Course

Time 1h15m

Number Of Ingredients 14

2 large eggplants (halved)
3 tablespoons olive oil (divided)
1 teaspoon sea salt
1 onion (chopped)
3 garlic cloves (minced)
1 pound ground lamb
1 teaspoon ground cloves
1/2 teaspoon ground cinnamon
1 teaspoon ground cardamom
1/2 teaspoon crushed red pepper flakes
1 teaspoon ground black pepper
2 cups diced tomatoes
1/4 cup pine nuts (toasted (omit if following keto diet))
Chopped fresh parsley for garnish

Steps:

  • Preheat the oven to 425 degrees Fahrenheit.
  • Arrange the eggplant halves cut side up in a large baking dish. Brush with two tablespoons of oil and sprinkle with some of the salt. Bake until the skin is browned and the flesh is soft, for about 20 minutes.
  • Meanwhile, in a large cast iron or non-stick skillet, heat the remaining one tablespoon of oil. Add the onions and garlic, season with salt and saute over medium heat, stirring often, until softened.
  • Add the ground lamb and the spices. Brown, breaking up the meat with a wooden spoon until the meat is cooked through, about 5-10 minutes. Stir in the crushed tomatoes and pine nuts, if using, reserving a tablespoon for topping.
  • Reduce the oven temperature to 350 degrees Fahrenheit.
  • Cut the eggplant down the middle, making sure not to tear the skin on the bottom. Spoon the lamb mixture onto the eggplants in the baking dish. Cover the dish with foil and bake for 30 minutes.
  • Garnish the eggplants with parsley and reserved pine nuts and serve immediately.

Categories     Entree

Time 1h20m

Yield 4

Number Of Ingredients 14

1 large eggplant
3 tablespoons extra-virgin olive oil
1/2 teaspoon grey sea salt
1/4 teaspoon black pepper
1/2 lb ground beef
1 onion, diced small (about 1 cup)
1 red bell pepper, diced small (about 1 cup)
3 cloves garlic, finely chopped
1/2 cup chopped fresh parsley
1/2 cup chopped fresh basil leaves
1 1/4 cups grated pecorino Romano cheese
1/2 cup Progresso™ plain panko crispy bread crumbs
1 whole egg
2 small tomatoes, chopped

Steps:

  • Heat oven to 350°F.
  • Cut the eggplant in half and scoop out the center, leaving enough meat inside the skin so that it holds its shape when baked. Chop eggplant that has been scooped out of the inside; place in saucepan, cover with water and boil until very soft, 10 to 12 minutes.
  • Meanwhile, in a medium sauté pan, heat 1 tablespoon of the olive oil over medium heat. Salt and pepper the beef. Add the seasoned ground beef to the pan, and sauté until all of its liquid is evaporated and the beef begins to brown slightly. Let cool briefly, and chop the cooked beef so that there are no large chunks of meat. In another medium sauté pan over medium heat, add the remaining 2 tablespoons olive oil, and sauté the onion, pepper and garlic together in the oil.
  • In a bowl, mix together the cooked eggplant, vegetables, beef, herbs, 1 cup of the cheese, 1/4 cup of the bread crumbs and the egg. Fill the scooped-out eggplant halves with this mixture, dividing it evenly between the two halves.
  • Top with chopped tomatoes, the remaining 1/4 cup cheese, remaining 1/4 cup bread crumbs, and season with salt and pepper. Place on an oiled oven tray or baking dish, and bake for 50 minutes. Let cool briefly; slice widthwise and serve.

Stuffed aubergine full of flavour! Great as an appetiser or as part of a main course

Provided by Slow The Cook Down

Categories     Appetizer     Main Course

Time 1h20m

Number Of Ingredients 16

5.3 ounces lamb fillet (finely diced (150g))
1 eggplant
olive oil
salt and pepper
1.75 ounces feta cheese (finely diced (50g))
1 onion (finely diced)
seeds of 1/2 pomegranate
squeeze of lemon juice
handful of fine breadcrumbs
1 garlic clove
1/2 tsp salt
1 tbsp cracked black pepper
1/2 tbsp cumin seeds ((or ready ground))
1/2 tbsp coriander seeds ((or ready ground))
2 tbsp olive oil
juice 1/2 lemon

Steps:

  • In a mortar and pestle, press the dry ingredients for the marinade. When crushed, add the oil and lemon juice and combine. Put the diced lamb into a bowl and cover with the marinade. Cover the bowl with cling film and pop in the fridge for at least two hours.
  • Pre heat the oven to 200º.
  • Cut the aubergine in half, keeping the stalk intact. With a knife cut a border in the flesh, leaving about 1/2 cm and scoop out with a spoon and keep the removed aubergine. Be careful not to cut down to the skin as you need some flesh to help keep the structure. Brush with a little olive oil and a pinch of salt and pepper and put on to a baking tray and into the oven for 20 minutes. Once cooked, leave to one side.
  • Take half of the aubergine flesh and finely dice, the rest won't be needed.
  • Once the lamb is ready, heat a large frying pan over a medium high heat, once hot, add in the lamb, with a little of the marinade, for 3-4 minutes, stirring occasionally until it is browned. Add in the onion and diced aubergine and a squeeze of lemon juice and cook for another 5 minutes, still stirring.
  • Once the onions have turned translucent, turn off the heat and stir in the feta and pomegranate seeds until combined.
  • Spoon the lamb mix into the aubergine boats and top with a handful of breadcrumbs and a drizzle of olive oil. Put back in the oven and cook for 25-30mins until the breadcrumbs are golden.
  • Serve with pomegranate seeds and some fresh coriander.

STUFFED EGGPLANT WITH LAMB

Stuffed Eggplant with Lamb image

Provided by Food Network

Categories     main-dish

Time 1h30m

Yield 4 to 6 servings

Number Of Ingredients 10

6 Italian or Japanese eggplants
1 cup olive oil
2 tablespoons unsalted butter
2 onions, finely chopped
1 pound ground lamb
3 tomatoes, peeled, seeded and chopped
2 green bell peppers, seeded and chopped
Salt
1/2 cup finely chopped fresh parsley
2 tablespoons fresh lemon juice

Steps:

  • Peel the eggplants lengthwise in 1/2-inch strips "zebra-style," leaving a 1/2-inch strip of skin between each peel. Trim off long stems so eggplant will fit in pan. Heat oil in a large, deep frying pan. In batches, fry eggplant until golden all over and beginning to soften, turning frequently. Transfer eggplant to a baking dish, placing them side by side, and cut a deep slit lengthwise in each eggplant. Set aside.
  • Heat the butter in the skillet, add the onions and saute until soft, 5 to 7 minutes. Add the lamb and cook for 10 minutes. Add the tomatoes, bell peppers and salt, and saute until all the juices are absorbed, about 5 more minutes. Stir in the parsley, and lemon juice, adjust seasonings and remove from heat.
  • Preheat oven to 350 degrees.
  • Stuff the eggplants tightly with the ground lamb mixture, enlarging the opening with your hand. Add a little water to the baking dish, cover, and bake for 30 to 40 minutes, or until eggplants are very tender.

SPICED LAMB-STUFFED EGGPLANTS

Spiced Lamb-Stuffed Eggplants image

Provided by Ina Garten

Categories     main-dish

Time 1h40m

Yield 4 servings

Number Of Ingredients 16

4 baby eggplants (6 to 7 inches long and 8 to 10 ounces each)
Good olive oil
Kosher salt and freshly ground black pepper
1 1/2 cups chopped yellow onion
4 teaspoons minced garlic (4 cloves)
1 pound lean ground lamb
1 tablespoon dried oregano
1 teaspoon ground cinnamon
1/2 cup dry red wine
1 (14.5-ounce) can diced tomatoes, such as San Marzano, undrained
1 cup marinara sauce, such as Rao's
1/3 cup minced fresh parsley
1 1/2 cups fresh ricotta (12 ounces)
4 ounces fresh goat cheese, such as Montrachet
2 extra-large egg yolks
1 1/2 tablespoons julienned fresh mint leaves, plus extra for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • Cut the eggplants in half lengthwise, including the stems. Using a sharp paring knife, scoop out some of the flesh, leaving a shell that is 1/3 inch thick and reserving the scooped-out eggplant. Place the eggplant shells snugly in a single layer in a large (10-by-14-inch) rectangular baking dish. Brush the eggplant all over with 1/4 cup olive oil (use it all!) and sprinkle with 1 1/2 teaspoons salt and 3/4 teaspoon pepper. Pour 1/4 cup water in the baking dish, cover tightly with aluminum foil, and bake for 30 minutes, until the shells are tender when pierced with a small knife. Remove from the oven, discard the foil, and leave the oven on.
  • Meanwhile, for the lamb filling, in a large (12-inch) skillet, heat 3 tablespoons olive oil over medium heat. Add the onion and saute for 5 minutes, tossing occasionally, until tender. Cut the reserved scooped-out eggplant into 1/2-inch dice (you should have about 2 cups). Add the eggplant to the onion and cook for 5 minutes, adding more oil if it seems dry. Add the garlic and cook for 30 seconds, until fragrant. Add the ground lamb and cook, mashing lightly with a fork, for 5 to 7 minutes, until no longer pink. Add the oregano and cinnamon and cook for one minute. Add the wine, tomatoes, marinara, parsley, 2 teaspoons salt, and 1 teaspoon pepper. Bring to a boil, lower the heat, and simmer uncovered for 25 to 30 minutes, until the liquid evaporates. Spoon the filling into the eggplant halves in the baking dish. (You may have a little extra filling.)
  • In a medium bowl, mash the ricotta, goat cheese, egg yolks, mint, 1 teaspoon salt, and 1/2 teaspoon pepper with a fork. With a spoon, place large dollops of the ricotta mixture on the lamb filling and bake for 30 to 40 minutes, until the filling is hot and the topping is lightly browned. Serve warm, sprinkled with extra mint.
