A delicious chocolate and peanut butter cereal treat. A simple twist on traditional Rice Krispie treats. Kids love them and they are a great portable snack!

5 Tbs. butter, melted in a large pot
16 oz bag of marshmallows - melt in the butter and stir until all melted and smooth.
1 13 oz box of Reeses Puffs cereal (or any puffed cereal!!)

Steps:

  • Melt butter at low-medium heat. You don't want to brown it.
  • Stir in 16 oz bag of marshmallows. They will melt into the butter. Stir continually until the marshmallows are all melted and the mixture is smooth.
  • Add the full 13 oz box or Reeses Puffs cereal (chocolate and peanut butter flavor, of course!)
  • Press into a 9 x 13 pan (I use a casserole dish)
  • I like to cut the pieces after the cereal treats have cooled a bit but are still warm.

4 tablespoons unsalted butter, plus more for greasing
One 10-ounce bag mini marshmallows
1/2 cup smooth peanut butter
1 teaspoon pure vanilla extract
Kosher salt
6 cups puffed chocolate and peanut butter flavored cereal, such as Reese's Puffs
6 cups puffed chocolate and peanut butter flavored cereal, such as Reese's Puffs
2 cups crushed pretzel sticks
1 cup sweetened shredded coconut flakes
2 ounces semisweet chocolate, chopped
1 teaspoon virgin or extra-virgin coconut oil

Steps:

  • Line a 9-by-13-inch baking dish with enough foil so that there's a 2-inch overhang on all sides. Grease the foil with butter.
  • Melt the butter in a large pot set over medium heat. Add the marshmallows and cook, stirring occasionally, until the marshmallows melt completely, about 5 minutes. Remove from the heat and stir in the peanut butter, vanilla and a pinch of salt. Add the cereal, pretzels and coconut. Stir with a rubber spatula, making sure to scrape up the bottom, until the cereal is completely coated. Transfer to the prepared baking dish and pat down into an even layer (use the bottom of a measuring cup to help). Let sit at room temperature until firm, about 30 minutes.
  • Melt the chocolate and coconut oil together in a small microwave safe bowl for 30-second increments in the microwave, until smooth. Drizzle over the bars, cover and refrigerate until the chocolate hardens, about 15 minutes.
  • Cut into 24 bars. Store at room temperature in an airtight container for up to 3 days.

Peanut butter and chocolate puffed rice treats are a slightly healthier version of rice crispy treats. Only requires 6 ingredients and 15 minutes to make.

1/4 cup unrefined coconut oil
1/4 teaspoon kosher salt
1/4 cup honey, (or sub agave nectar)
3/4 cup natural peanut butter
¾ cup (3.50 ounces) dark chocolate chips (or dark chocolate bar, chopped)
3 3/4 cup rice crispy cereal (or puffed rice cereal) - (see notes)

Steps:

  • Prepare a 9X13 baking dish by lining it with parchment paper, leaving some overhang on two sides. Grease the parchment paper and the remainder of the exposed sides of the pan with a neutral tasting oil (such as avocado or grape seed oil). Set the prepared pan aside. Also at this time measure all of your ingredients and have them ready, this recipe moves fast.
  • To a medium sized sauce pot add the coconut oil, salt, honey (or agave nectar), and peanut butter in the sauce pot. Turn on the heat to medium low and stir just until everything is melted and well combined. Add the chocolate and stir until all the chocolate is melted and well combined. Remove from the heat.
  • Once off the heat immediately stir in the rice crispy cereal until all the cereal is well coated.
  • Transfer the mixture to the prepared baking dish. Use a spatula to evenly distribute the mixture into the pan so that it's in a smooth layer. Press gently, just so that everything is well compacted.
  • Allow the pan to cool at room temp for 15 minutes. Then pop it in the freezer for 15 minutes, or just until everything is firm.
  • Run a butter knife around the edges of the puffed rice treat to loosen it. Use the parchment paper tabs to help pull the entire thing out of the pan. Use a sharp knife to cut into squares.
  • Enjoy immediately or store in an air tight container at room temp. If you kitchen is too hot you might want to pop them in the freezer to firm up for about 10 minutes, before eating them - however, you don't want to store them in the fridge otherwise the cereal might get soggy.

These cereal treats are like rice krispy treats but different and yet very tasty!... you can use any type of cereal you like and can add in dried fruit, chocolate chips, marshmallows, etc. I have made these with many different combinations (such as grape nuts, honey & Nutella and omitting the sugar because it is just sweet without, but play around with it and Just have fun with this recipe!

4 cups of your favorite cereal
1/2 cup corn syrup or 1/2 cup honey
1/2 cup peanut butter (like Nutella) or 1/2 cup chocolate hazelnut spread (like Nutella)
1/2 cup sugar, if using corn syrup (or if you want an added sweetness to your recipe)

Steps:

  • Line an 8 or 9-inch square baking pan with plastic wrap.
  • Pour cereal into a large bowl.
  • In medium saucepan, combine sugar & corn syrup.
  • Stir occasionally and bring to a boil over medium heat; boil 1 minute.
  • Remove from heat.
  • Stir in peanut butter until smooth.

  • Melt the butter in a large pan over medium-low heat. Once melted, add the marshmallows. Stir the mixture until the marshmallows are completely melted. Stir in the peanut butter and vanilla.
  • Remove from heat, then immediately fold in the cereal. Make sure each piece of cereal is coated with the peanut butter/marshmallow mixture.
  • Transfer mixture to 9 by 13-inch baking pan that has been lined with parchment paper and sprayed with nonstick spray. Gently press the mixture into the pan (lightly spray your hands with non-stick cooking spray to avoid the mixture sticking to your hands). Don't pack it in too hard.
  • Put the chocolate chips in a medium-sized heatproof bowl. Microwave for 30-second intervals, stirring in between each interval. When they are almost melted, remove and stir until smooth. Pour the melted chocolate over the mixture and let cool to harden.
  • Allow treats to set for about an hour at room temperature. Lift the Rice Krispie Treats out of the pan using the parchment paper. Cut into squares.
  • Cover and store leftover treats at room temperature for up to 3 days. To store, place in layers between sheets of parchment or wax paper.

6 tablespoons unsalted butter
One 10-ounce bag mini marshmallows
One 18-ounce box peanut butter crunch cereal, such as Peanut Butter Cap'n Crunch
1 cup honey-roasted peanuts
6 ounces semisweet chocolate chips, melted

Steps:

  • Line a 9-by-13-inch baking dish with a piece of parchment paper, leaving 1 inch of paper hanging over each side of the dish. This will help with removing the treats later. Spray the parchment paper with nonstick spray.
  • In a 6-quart Dutch oven over medium heat, melt the butter. Add the marshmallows and cook, stirring continuously, until the marshmallows are melted and the butter is incorporated, 3 to 5 minutes. Reduce the heat to low and quickly add the cereal and peanuts; stir to combine. Transfer the cereal mixture to the prepared baking dish. Steps:

  • Start by adding all of the cereal ingredients to a large bowl and mixing them well.
  • Then roll them into balls using your hands.
  • Place them on a tray with some parchment paper or aluminum foil.
  • Now combine the chocolate chips and coconut oil and melt them in the microwave in 20 second increments, taking it out to stir in between.
  • Once all of the chocolate is melted, transfer it to a plastic baggie, snip off the end, and drizzle the chocolate all over your cereal bites.
  • Refrigerate until the chocolate has hardened.

These are not your typical cereal treats. The marshmallow mixture that holds these goodies together is lightly flavored with peanut butter and chocolate, and the cereal used is a mixture of Cocoa Krispies and Honey Bunches of Oats. Frankly, I used Honey Bunches of Oats simply because I ran out of Rice Krispies, but I'm enjoying the finished product much better this way. My family gives it eight thumbs up, and I hope yours likes it too!

2 tablespoons butter, salted
1/4 cup peanut butter
1 (16 ounce) bag miniature marshmallows
3 tablespoons cocoa powder
1 teaspoon vanilla extract
5 cups Rice Krispies, Cocoa
2 cups honey bunches oats (Roasted or with Almonds)
2 teaspoons cooking spray

Steps:

  • In a large pot over medium heat, melt butter and peanut butter.
  • Coat a 9-inch x 13-inch baking pan with cooking spray. Set aside.
  • Add marshmallows and stir constantly until mixture is melted and smooth. Then add cocoa powder and vanilla and stir until fully incorporated. Remove from heat.
  • A little at a time, stir in cereal until marshmallow mixture is fully incorporated. Pour into prepared baking pan. Using your hands, lightly-sprayed with cooking spray, press cereal mixture into baking pan.
  • Allow to cool. With a sharp knife, slice into desired-sized pieces and enjoy!

2 pkg. (4-oz. each) BAKER'S Semi-Sweet Chocolate

Steps:

  • Microwave butter in large microwaveable bowl on HIGH 45 sec. or until melted. Add marshmallows; toss to coat. Microwave 1-1/2 min. or until marshmallows are completely melted and mixture is well blended, stirring after 45 sec.
  • Stir in 1/2 cup of the peanut butter. Add cereal; mix well. Press onto bottom of 13x9-inch pan sprayed with cooking spray.
  • Microwave chocolate and remaining peanut butter in microwaveable bowl 1 to 1-1/2 min. or until chocolate is almost melted, stirring after 30 sec. 1 tablespoon peanut butter (or nut/seed/legume butter of choice)
1 teaspoon refined coconut oil
1/8 teaspoon vanilla extract
4 tablespoons cereal of choice
25g vegan milk chocolate
1 tablespoon peanut butter (or nut/seed/legume butter of choice)

Steps:

  • In a microwave-safe cup, combine 15g vegan milk chocolate, peanut butter, vanilla extract, and refined coconut oil. Microwave in 10-15 second intervals until just melted; about 30 - 40 seconds. Note that the chocolate may still hold its shape but will melt when stirred. Immediately add the crispy cereal and stir to combine. Tranfer mixture to a parchment-lined ramekin or muffin tin. Compress the chocolate cereal mixture evenly with the back of a spoon. Then chill in the freezer while you make the ganache. For the ganache, combine peanut butter and vegan milk chocolate in a microwave-safe cup and heat using 10 to 15 second intervals until it's just melted enough to stir together. Get the base from the freezer and immediately pour the ganache. Again use the back of a spoon to smooth out the top. Then chill in the freezer for 10 to 15 minutes until set. Enjoy!
