STRAWBERRY TIRAMISU CONES

Strawberry Tiramisu Cones image

Chef's note: A great way to serve these, and keep the cones upright, is to pour some coffee beans into the bottom of a glass and place the cones in the glass.

Provided by Michael Chiarello : Food Network

Categories     dessert

Time 4h5m

Yield 8 servings

Number Of Ingredients 9

8 ounces bittersweet chocolate, chopped, plus another 1-ounce chunk for garnish
8 sugar cones (the dark brown ones)
30 espresso beans, crushed or 4 tablespoons ground espresso
3 pints ripe strawberries
3 tablespoons fresh lemon juice
7 tablespoons granulated sugar
Pinch salt
1 cup heavy cream
1 cup mascarpone cheese

Steps:

  • In a small microwave-safe bowl, melt 8 ounces of chocolate in 30 second intervals in the microwave until smooth. Dip the top of each cone into the chocolate so there is a 1-inch rim, then roll in the crushed or ground espresso. Place the dipped cones on a wax paper-lined plate and refrigerate. When firm, about 20 minutes, remove from the refrigerator and set cones, dipped side up, inside small glasses so they stand upright. Spoon the remaining melted chocolate evenly into the sugar cones and return (glass and all) to the refrigerator.
  • Meanwhile, hull and quarter 2 pints of strawberries and puree them in a food processor with 2 tablespoons of the lemon juice, 5 tablespoons of the sugar and a pinch of salt. Strain the puree through a fine-mesh strainer into a small saucepan. Bring to a simmer over medium-high heat, and cook until reduced by half, about 35 minutes, stirring frequently. Pour into a small bowl and chill the puree until cold.
  • In the bowl of a stand mixer fitted with a whisk attachment, whip the heavy cream and mascarpone to stiff peaks and then fold in the puree in 2 batches. Refrigerate until firm and set, 1 to 2 hours.
  • Just before serving, hull the remaining 1 pint of strawberries and cut them lengthwise into 1/4-inch slices. Toss with the remaining 1 tablespoon of lemon juice and 2 tablespoons of sugar.
  • To assemble: Spoon strawberries into the cones until they are 1/4 full. Top that with approximately 1/4 cup of the mascarpone mixture, using an ice cream scoop that has been dipped in warm water. Garnish with shaved bittersweet chocolate and refrigerate until ready to serve.

STRAWBERRY TIRAMISU

Strawberry Tiramisu image

Slightly sour taste of the strawberry complements the creamy flavour of the tiramisu, creating dessert heaven!--- by my husband.

Provided by tartanjuda

Time 40m

Yield Serves 4

Number Of Ingredients 17

500g fresh strawberry, washed, trimmed and cut in half
1/2 lemon, juiced
1 tbsp granulated sugar
1 tbsp cointreau or dark rum
2 large egg whites
50g granulated sugar
2 large egg yolks
250g mascarpone cheese, at room temperature
1 tbsp honey
150ml single cream
1/2 lemon, juiced
10 Savoiardi or sponge fingers, roughly crushed
1 tbsp instant coffee
2 tbsp amaretto
100ml hot water
1 tbsp cocoa powder
*Transparent glasses to serve would be more attractive. I used the glasses with 9cm across each.

Steps:

  • To marinate the strawberries, mix all the ingredients together gently and put in the fridge for 24 hours.
  • To make the sponge, arrange the crushed sponge fingers into the bottom of each glass. Mix the remaining ingredients and allow to cool.
  • To make cheese cream, in a bowl, place the egg yolks and honey lightly beaten, add the mascarpone cheese and stir until smooth. Pour the single cream and lemon juice into the bowl and mix together well.
  • For the meringue, in a separate bowl, whisk the egg whites with half of the sugar (25g) until well mixed , add the remaining sugar, continue whisking till the stiff peaks form, then fold them into the cream cheese mixture.
  • Pour the cooled coffee mixture over the crushed sponge finger in the serving dishes. Line the marinated strawberry along the inner-side of glasses (the cut facing against the glass, see photo), spread the mascarpone mixture over the coffee soaked sponge and the strawberries. Put in the fridge for at least 3 hours. Dust with cocoa powder just before you serve.

STRAWBERRY MOSCATO TIRAMISU

Strawberry Moscato Tiramisu image

Enjoy this no bake dessert recipe, Strawberry Moscato Tiramisu that is made with ladyfingers, an easy mascarpone whipped cream, and topped with fresh strawberries.

Provided by Nicole Nared-Washington

Categories     Dessert

Time 20m

Number Of Ingredients 9

7 oz. Package of Lady Fingers Cookies (you may need half of another package depending on your dish)
1 c. Moscato
8 oz. Mascarpone Cheese
2 c. heavy whipped cream
⅓ c. powdered sugar
1 ½ tsp. Vanilla extract
4 oz. strawberry preserves
8 oz. Whipped topping
2 c. fresh strawberries, diced

Steps:

  • Pour the Moscato into a shallow bowl. Dip the ladyfinger cookies in the Moscato for a few seconds on each side and line side by side in a shallow 8X9 casserole dish making one layer.
  • In a large mixing bowl, add the mascarpone cream and, using a handheld or standing mixer, mix the cheese until creamy. At low speed, slowly pour the heavy whipping creaming until mixed into the mascarpone cheese. Add the vanilla extract and powdered sugar and mix until blended. Turn on high and beat until firm peaks, about 3 minutes.
  • Once you have laid down the first layer of ladyfingers, add half of the mascarpone whipped cream on top of the ladyfinger, take 2-3 spoonfuls of strawberry preserves, and spread on top of the whipped cream.
  • Repeat by dipping the remaining ladyfingers in the Moscato and add on top of the first layer of mascarpone cheese and strawberry preserves. Spread the rest of the mascarpone cheese whipped cream on top of the final layer of ladyfingers. Cover the final layer with strawberry preserves spread across the top.
  • Add the whipped cream topping on top of the final layer of the strawberry preserves. Finally, top off the chopped strawberries. Place inside the refrigerator until ready to serve.

  • To make the strawberry juice: Clean and chop the strawberries into small pieces sprinkle with sugar, place strawberries, lemon juice and water in a blender, blend until smooth, pour into a bowl and set aside.
  • To make the cream mixture: In a medium bowl beat the egg (if using) for approximately 30 seconds then add the sugar, mascarpone and cream, beat on medium until thickened. (approximately 5-10 minutes, you don't want it to be too thick or too thin, nice and creamy ).
  • Putting it all together: Lady Finger Cookies (approximately 30 or more if needed) 1 baking dish (I used 10 x 7 inch / 26 x 17 cm).
  • In a small bowl add half the strawberry juice to start,(you may have left over strawberry juice, which is great over ice cream or even add a little more sugar and it makes a great drink) dip the lady finger cookies in the juice (turning to coat all the cookie with juice, but don't leave them submerged in the juice) then arrange cookies on bottom of baking dish and cover with half the cream mixture, cover with the sliced strawberries, repeat cookies for another layer and cover with remaining cream mixture.
