1 1/2 cups flour
2 teaspoons baking soda
1 teaspoon baking powder
1 pinch salt
1/8 teaspoon cinnamon
6 tablespoons butter, at room temperature
2/3 cup sugar
2 eggs
1/2 cup milk
1/2 cup watermelon juice
1/2 cup watermelon, pulp
1/2 cup raisins

Steps:

  • Preheat oven to 350 degrees.
  • Sift flour, baking powder, baking soda, salt and cinnamon in large bowl.
  • Cream butter and sugar; add eggs.
  • Whip in milk, juice, pulp and raisins.
  • Add wet mixture to dry ingredients; blend until just mixed.
  • Fill greased muffin cups 2/3 full.
  • Bake 25 minutes or until tester comes out clean.
  • Transfer to wire racks; cool.

1-1/4 cups all-purpose flour
1/4 cup sugar
1/2 teaspoon baking soda
1/2 teaspoon each ground ginger, cinnamon and nutmeg
1/4 teaspoon salt
1 egg
1/2 cup water
1/4 cup vegetable oil
1/4 cup molasses

Steps:

  • In a large bowl, combine the dry ingredients. In another bowl, beat egg, water, oil and molasses. Stir into dry ingredients just until moistened. , Fill greased or paper-lined muffin cups two-thirds full. Bake at 325° for 20-25 minutes or until muffins test done. Cool in pan for 5 minutes before removing to a wire rack to cool completely.

  • In a medium bowl, whisk oil, yogurt, watermelon juice, and egg substitute until thoroughly blended. Add cherries, lemon juice and vanilla.
  • Add liquid mixture to flour mixture. Gently toss until flour is incorporated into liquid. Do not over-beat or muffins will be flat and tough. Spoon evenly into 12 muffin cups. Top each muffin with 1 /2 teaspoon of sugar. Bake for 15 to 17 minutes, or until toothpick inserted into middle comes out clean. Remove from oven, allow to sit for 5 minutes, then transfer muffins to a cooling rack.
