These delicious little appetizers are always a hit. Serve warm or at room temperature with a good quality mustard. These can be frozen unbaked and popped into the oven when unexpected guests pop in.

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, mix the frozen chopped spinach, Italian-style seasoned bread crumbs, Parmesan cheese, butter, green onion, eggs, salt and pepper. Shape the mixture into 1 inch balls.
- Arrange the balls in a single layer on a large baking sheet. Bake in the preheated oven 10 to 15 minutes, until lightly browned.

BAKED SPINACH BALLS WITH PARMESAN

- Preheat the oven to 350F. Line a baking sheet with parchment paper.
- In a large pan, melt the butter over medium-high heat. Add the onions and cook until soft. Add the garlic and stir. Remove from heat and set aside.
- In a large bowl, combine the spinach, breadcrumbs, eggs, Parmesan cheese, salt, pepper, and butter mixture. Stir to thoroughly combine.
- Using a small cookie scoop or spoon, scoop the mixture into your hands and roll into a ball, and place them on the baking sheet.
- Bake for 15 to 20 minutes, until lightly browned.

SPINACH-ARTICHOKE PANINI BITES

- Put a rimmed baking sheet in the oven and preheat to 450 degrees F.
- Combine the cream cheese, sour cream, garlic, lemon zest, salt, spinach and artichoke hearts in a food processor. Pulse until evenly combined. Add the mozzarella and Parmesan; pulse to combine.
- Spread 1/4 cup of the mayonnaise over half of the bread slices. Place the slices, mayo-side down, on a second rimmed baking sheet and spread evenly with the spinach filling, all the way to the edges. Top with the other 6 slices of bread. Spread the top slices with the remaining 1/4 cup mayonnaise. Carefully, remove the hot baking sheet from the oven and place it directly on top of the sandwiches. Transfer the double-stacked baking sheets to the oven and bake until the sandwiches are golden brown and the filling is melted, about 15 minutes.
- Let sit for 5 minutes before slicing into bite-size squares or triangles. Serve warm.
SPINACH BITES
Brilliant green, fresh and clean tasting, these Spinach Bites get a salty kick from Parmesan and a sweet finish from toasted pine nuts.

- Heat oven to 400F degrees. Add raw greens to the bowl of a food processor and pulse repeatedly until finely chopped. Transfer to a mixing bowl.
- Add cottage cheese, eggs, garlic, pepper and nutmeg to spinach bowl and stir to combine.
- Mist a mini muffin pan with nonstick spray and divide the spinach mixture among 24 cups. Cups will be full. Garnish with a pinch of Parm shreds and a couple of pine nuts on each muffin.
- Bake the spinach bites until set, about 20-22 minutes. Let stand in the pan for 10 minutes. Loosen the edges gently with a knife and pop them out onto a large plate. Serve warm or at room temperature.
- Makes 24 bites.

SPINACH AND FETA PUFF PASTRY BITES

- Preheat the oven to 375 degrees F.
- Thaw frozen spinach in microwave according to package directions or by running under warm water. Drain spinach, squeezing the excess liquid from it. In a bowl, mix the spinach, feta, garlic, pepper, and nutmeg together.
- Flour a clean, dry countertop or other flat working surface. Lay out the puff pasty on the floured surface. Flour the top of the dough. Roll out the puff pastry until it is half as thick (about 1/8-inch) and about 24 by 12 inches. Trim edges to size if necessary. Cut into 3-inch strips crosswise and lengthwise, making 32 (3-inch) squares. Make sure the squares are well floured then stack them in a little pile.
- Fill a little dish with some room temperature water. Imagine each square you work with is separated in half by a diagonal. Place a couple teaspoons of filling in the top half. Dip a finger into the water and moisten the edges of the top half with water. Fold the bottom half to meet the edges of the top half. Use a fork to seal the edges.
- Place finished pockets on a nonstick baking sheet and bake about 15 minutes until golden brown and puffy. Serve warm.
SPINACH PARMESAN BALLS

Steps:
- Set the oven to 375 degrees.
- On a lightly floured surface, with a 1-1/2-inch biscuit cutter, cut out 12 rounds from the thawed pie crust.
- Press each of the rounds into the bottom, and up the sides of ungreased mini muffin cups.
- Repeat with the second pie crust.
- In a skillet, cook the bacon until brown and very crisp; drain.
- Add in the onions to the same skillet with the bacon drippings, cook for 5 minutes, or until tender, stirring constantly; drain.
- Place the onions in a medium bowl.
- Crumble the bacon into small pieces, and add in with the cooked green onion.
- Add in the eggs to the bacon and onions; beat well.
- Stir in the cream, salt, nutmeg and the Parmesan cheese.
- Add in the squeezed spinach; mix well to combine.
- Divide the mixture evenly into crust-lined cups.
- Bake for 20-25 minutes, or until puffed and golden brown.
- Cool in pan on wire rack for 10 minutes.
- Loosen quiches from pan with tip of knife.
- Serve warm or cool.
- Store in the refrigerator.
