This recipe came from a card that was handed out with my weekly Weight Watchers materials. It's comfort food for 6 points per serving. Note: substitute turkey for chicken if desired.

2 cups cooked macaroni
2 cups chicken breasts, chopped
2 cups cream of mushroom soup, undiluted
2 cups skim milk

Steps:

  • Preheat oven to 350 degrees.
  • In a large casserole, combine all ingredients, mixing well.
  • Bake,covered, 35-45 minutes.
  • Remove cover; bake 10-15 minutes longer.
  • Serve immediately.

2 cups rotini noodles
1 1/2 cups diced cooked chicken breasts
1 teaspoon butter
1/2 cup onion, chopped
1 cup celery, chopped
1 (10 ounce) can cream of mushroom soup
1/2 cup skim milk
1 3/4 cups light cheddar cheese, grated, divide into 1 cup and 3/4 cup
1 teaspoon ground pepper

Steps:

  • Oven at 375f.
  • Cook noodles as per package directions. Drain and set aside.
  • In a small saucpan, melt butter and sautee onions and celery, until onions are tender. Add cream of mushroom soup and milk.
  • Stir until bubbling. Add one cup of grated cheese and pepper. Stir until melted.
  • In a casserole dish, combine noodles, chicken and cream of mushroom soup mix. Stir until blended. Top with 3/4 cup of cheese.
  • Bake for 30-35 minutes.

2 tablespoons Salted Butter
1 sml Onion (sliced)
2 teaspoons Garlic Powder
2 teaspoons Dried Oregano
1 teaspoon Smoked Paprika
1 teaspoon Mustard Powder
1 teaspoon Salt
½ teaspoon White Pepper (ground)
3 cups Mushrooms (sliced)
8 ounces Cream Cheese
½ cup Heavy Cream
3 cups Baby Spinach
1 Rotisserie Chicken (shredded (600g/21oz of meat))
1 cup Cheddar Cheese (shredded)
Fresh Oregano (finely chopped, to serve)

Steps:

  • Preheat your oven to 200C/390F.
  • Place a large saucepan over high heat. Add the butter and onion and saute for 3 minutes.
  • Add the herbs, spices, and salt, and pepper and mix well. Saute for another 2 minutes before adding the mushrooms, mix well.
  • Cook the mushrooms until they have softened.
  • Add the cream cheese and heavy cream and heat until the cream cheese has melted.
  • Bring to a simmer then mix through the spinach, once it has wilted, add the shredded chicken, and mix well.
  • Pour the mixture into a casserole dish, smooth out, and top with the cheddar cheese.
  • Bake for 20-25 minutes, until the cheese is golden brown.
  • Spoon into bowls and top with freshly chopped oregano. Enjoy!

This casserole is super satisfying and creamy and uses a great trick to cut out extra butter and oil: Instead of making the traditional roux with butter, the cream sauce is thickened with a little flour.

1/4 cup all-purpose flour
2 cups low-sodium chicken broth
Kosher salt and freshly ground black pepper
3/4 cup shredded sharp Cheddar
4 cups medium broccoli florets
Cooking spray
3 cups frozen brown rice, thawed
1 rotisserie chicken, skinned, white and dark meat shredded (about 4 cups)
1/2 cup grated Parmesan

Steps:

  • Preheat the oven to 400 degrees F. Put the flour and broth into a large saucepan and whisk until the flour is dissolved. Place the saucepan over medium heat and whisk continuously until the mixture comes to a boil; continue to whisk until the mixture is thick enough to coat the back of a spoon, 10 to 12 minutes. Remove the saucepan from the heat and whisk in 1 1/2 teaspoons salt and 1/2 teaspoon pepper. Add the Cheddar and whisk until melted. Add the broccoli florets and stir to coat.
  • Spray a 3-quart flameproof casserole dish with cooking spray. Toss the brown rice and chicken in a large bowl. Pour the broccoli-cheese sauce on top and mix well. Spread the mixture in the casserole dish and top with the Parmesan. Cover with foil and bake until bubbling and hot, about 25 minutes. Remove the foil and broil until the top is nicely browned, 2 to 5 minutes Serve hot.

15 oz. Diced tomatoes, canned

16 oz. American processed cheese product, cubed
1 tbsp. Butter
1/2 cup Yellow onion, diced
16 oz. Chicken breast, cooked, shredded
30 oz. Black beans, canned, drained, rinsed
1½ cups Cheddar cheese, shredded

Steps:

  • 1. Pre-heat oven to 350°F. Spray a 9x13 inch baking dish with non-stick cooking spray. 2. In a saucepan, heat the butter over medium high heat until melted. Add the onions and cook until translucent, about five minutes. Once onions are cooked, add the undrained diced tomatoes, tomatoes with green chilies, and the American processed cheese product. Reduce the heat to medium-low and cook until warm and melted. 3. In a mixing bowl, combine the shredded chicken and the black beans. 4. To start building the casserole, spoon a small amount of the cheese /tomato mixture into the bottom of the prepared baking dish and spread evenly, lay out four tortilla shells on top of the cheese, covering the bottom of the pan. Top with ½ the chicken & bean mixture and ½ of the remaining cheese sauce, spreading each layer evenly. Sprinkle ½ of the cheddar cheese over. Repeat layers. Top with the crushed tortilla chips. 5. Bake for 15-20 minutes, or until heated through and bubbly. Cut and serve.
  • - For those who prefer more spice, this recipe can be prepared with 20 oz. of diced tomatoes and green chilies.

4 tablespoons butter
1/3 cup Gold Medal™ all-purpose flour
1 teaspoon onion salt
1 teaspoon garlic salt
1 teaspoon pepper
3 cups milk
4 cups shredded Cheddar cheese (16 oz)
2 cups chopped cooked chicken
1 bag (16 oz) frozen broccoli florets
1 1/2 cups Progresso™ panko crispy bread crumbs
4 tablespoons butter, melted

Steps:

  • Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Cook and drain macaroni as directed on package, using minimum cook time.
  • In 5-quart Dutch oven, melt 4 tablespoons butter over medium heat. Beat in flour, onion salt, garlic salt and pepper with whisk until thickened. Cook 1 minute longer. Beat in milk. Heat to boiling over high heat, stirring frequently; boil and stir 1 minute. Remove from heat. Stir in 3 cups of the cheese until melted. Stir in macaroni, chicken and frozen broccoli. 2 medium onions, chopped

1 can (10-3/4 ounces) condensed cream of chicken and mushroom soup, undiluted

1/2 teaspoon celery salt

2 cups shredded part-skim mozzarella cheese

Steps:

  • Preheat oven to 350°. Cook spaghetti according to package directions. , Meanwhile, in a Dutch oven, saute onions and peppers in butter until tender. Stir in flour until blended; gradually add milk. Bring to a boil; cook and stir 2 minutes or until thickened. 1 jar (6 oz.) sliced mushrooms, undrained
1-1/2 cups KRAFT Shredded Four Cheese, divided
4 slices white bread
4 tsp. butter or margarine, softened
1 Tbsp. KRAFT Shredded Parmesan Cheese

Steps:

  • Heat oven to 350ºF.
  • Cook noodles in large saucepan as directed on package, omitting salt and adding peas to the boiling water the last minute. Meanwhile, microwave cream cheese, milk, onion powder and thyme in microwaveable bowl on HIGH 1-1/2 to 2 min. or until cream cheese is melted and mixture is well blended, stirring after 1 min.
