From Country Fair food and crafts. This is another of my Christmas gift basket recipes. There are so many things you can do with this. I use the chocolate and coconut as a base for finishing off whatever bits are left in the kitchen. In the picture are coconut roughs with just coconut, some with added walnuts, some with added candied orange. The chocolate covers everything, so you can't really see the difference, but you can taste it! I haven't done it yet, but assume green and red cherries would be delicious too. Have fun with them, they're so simple.

185 g desiccated coconut, toasted
410 g milk chocolate, melted
chopped nuts (optional) or chopped glace fruit (optional)

Steps:

  • Place coconut and chocolate in a bowl and mix well to combine.
  • Line a baking tray with non-stick baking paper and drop rounded teaspoons of coconut mixture onto tray.
  • Refrigerate until set.

1 cup coconut
3/4 cup icing sugar (sifted)
1/2 cup cocoa (sifted)
1/3 cup powdered milk (sifted)
125 g Copha (melted)
1/4 cup coconut (extra)

Steps:

  • Place the first four ingredients in a bowl.
  • Mix well.
  • Pour over the cooled copha.
  • Blend well.
  • Place teaspoonfuls on lightly greased tray.
  • Sprinkle extra coconut on top.
  • Refrigerate until set.

1 cup flour
4 teaspoons baking powder
1 tablespoon cocoa
1 cup coconut
1/2 cup sugar
60 g butter, melted
1 egg
1 cup milk
1/2 teaspoon coconut extract
3/4 cup icing sugar
1/2 cup coconut
1 teaspoon cocoa
1 tablespoon butter
vanilla essence
2 teaspoons hot water

Steps:

  • Preheat oven to 200°C Lightly grease 12 muffin tins.
  • Sift together flour, baking powder and cocoa into a bowl.
  • Stir in the coconut and sugar and make a well in the centre.
  • In another bowl, lightly whisk together the melted butter, egg, milk and coconut essence.
  • Fold egg mixture into dry ingredients and stir quickly to combine.
  • Spoon mixture into prepare muffin tins and bake for 12 - 15 minutes or until muffins spring back when lightly pressed.
  • To make coconut rough:.
  • mix together topping ingredients in a small pot. Gently warm on element and stir until butter melts into ingredients. Remove from heat and allow to cool slightly before icing muffins.

This one comes from my old handwritten recipe book which I have had since I was a teenager :) If you like the confectionery "Chocolate Coconut Roughs" then I hope you will like this. My slice tin size is 30cm long, 20cm wide and 2.5cm high.

125 g butter
1 cup flour
1 cup coconut
1/2 cup brown sugar
1 tablespoon cocoa
1 teaspoon baking powder
1 pinch salt
1 cup icing sugar
1 cup coconut
1 teaspoon vanilla
1 tablespoon cocoa
1 tablespoon butter (melted)

Steps:

  • BASE:.
  • Cream butter and sugar.
  • Add sifted flour, baking powder and cocoa.
  • Add coconut.
  • Mix well and spread into slice tin.
  • Bake at 350'F/175'C for 25minutes.
  • Remove from oven and while hot ice with the topping.
  • TOPPING:.
  • Melt butter and add other ingredients.
  • Add a little milk to mix if necessary.
  • Stir over a low heat to dissolve and spread over hot base.
  • Cut into bars before completely cold.
