This sweet streusel-topped strawberry cookie bar is the perfect treat for summertime.

Steps:
- Heat oven to 375°F. Spray 9-inch square pan with cooking spray.
- In large bowl, place cookie mix. Cut in butter and cream cheese, using pastry blender or fork, until mixture is crumbly (do not overmix). Press 3 cups mixture in bottom of pan. To remaining cookie mixture, stir in oats; set aside. Bake cookie base 20 minutes. Cool 10 minutes.
- In medium bowl, mix Filling ingredients. Spread mixture on partially baked crust. Sprinkle reserved oat mixture over filling.
- Bake 26 to 30 minutes or until light golden brown and bubbling along edges. Cool on cooling rack 30 minutes. Refrigerate 2 hours before cutting. Cut into 4 rows by 4 rows. Cover and refrigerate any remaining bars.

- For the strawberry shortcake: Preheat the oven to 350 degrees F. Grease and flour an 8-inch cake pan.
- Sift together the flour, cornstarch, baking soda and salt. In a stand mixer fitted with a paddle attachment, cream the butter with 1 1/2 cups of the granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Add the sour cream and vanilla, and mix until combined. Add the sifted dry ingredients and mix on low speed until just barely combined.
- Pour the batter into the prepared cake pan. Bake until no longer jiggly like my bottom, 45 to 50 minutes. Remove the cake from the pan as soon as you pull it out of the oven. Place the cake on a cooling rack and allow it to cool completely.
- Stem and halve the strawberries, and mash then them. Sprinkle the strawberries with the remaining 2 tablespoons granulated sugar and allow to sit for 30 minutes.
- For the icing: Combine the powdered sugar, cream cheese, butter, vanilla and dash of salt in a mixing bowl. Mix until very light and fluffy.
- Slice the cake in half to make 2 smaller cakes. Spread the strawberries evenly over each cut side of the cake halves, pouring on all the juices as well. Place the cake halves into the freezer for 5 minutes, just to make icing the cake easier.
- Remove the cake halves from the freezer. Use a little less than one-third of the icing to spread over the top of the strawberries on the bottom layer. Place the second cake layer on top. Add half of the remaining icing to the top, spreading it evenly. Spread the remaining icing around the sides of the cake.
- Leave plain or garnish with strawberry halves. Serve slightly cool.

- Preheat oven to 350°F. Prepare a standard muffin tin with nonstick cooking spray or liners.
- In a small bowl, combine streusel ingredients with a fork until a crumbly mixture forms and set aside.
- In a medium bowl, whisk together flour, baking powder, and salt; set aside.
- In a large bowl, melt 6 tablespoons butter. Whisk in the sugar and then the eggs and vanilla until well combined. Alternate adding flour mixture and milk, beginning and ending with flour. Gently fold in strawberries.
- Using a cookie scoop or large spoon, divide batter equally among prepared muffin cups (batter should completely fill cups and mound slightly). Sprinkle streusel evenly over each muffin.
- Bake until muffin tops are golden and streusel is crisp, 35-40 minutes. Cool muffins in muffin tin for 5 minutes, then transfer to wire rack and cool 5 minutes before serving.

- Set oven to 375°F (will reduce heat later).
- Line 12 muffin tins with paper liners, or sray with non stick cooking spray.
- To make topping: mix the sugar, cinnamon together, cut in the butter to make a crumbly mixture, mix in the finely chopped nuts; set aside.
- In a large mixing bowl, combine the brown sugar, egg, oil and vanilla; stir/whisk to blend well.
- Stir in orange juice and sour cream; mix well to combine.
- In another bowl, mix together flour, salt, cinnamon, baking soda and baking powder; mix well.
- Blend the dry ingredients into the wet mixture to partially combine (do not overmix, the batter should be like a thick cake batter), if still too thick add in some orange juice to loosen.
- Fold in the strawberries and rhubarb carefully not to overmix batter.
- Divide the batter evenly in prepared muffin tins (I use an ice cream scoop for this).
- Sprinkle a generous amount of streusel mix over the batter.
- Reduce heat to 350°F.
- Place the muffins immediately in the oven and bake for 25-30 minutes, or until muffins are golden and test done.

- Prepare strawberry purée: In a blender, combine strawberries and jam. Make a paste of cornstarch and vanilla, and add to blender. Purée until smooth.Set aside.
- Prepare cake: Heat oven to 375 degrees. Oil a 9-inch springform pan and set aside. In a large bowl, combine sugar, flour, baking powder and baking soda. - Prepare crumble topping: In a medium bowl, combine reserved 1/2 cup dough and Demerara sugar. Stir with a fork to mix. Sprinkle evenly over cake.
- Bake cake until lightly golden, about 45 minutes. Cool completely before serving.

- TO MAKE THE STREUSEL, cut the butter into small chunks and let sit at room temperature for 5 minutes.
- In the bowl of a stand mixer fitted with the paddle attachment, combine the flour, sugar, salt, and zest. Add the butter and mix on low speed until the mixture resembles coarse beach sand, about 2 minutes. Add the pistachios and mix just until the streusel begins to clump together and look like gravel, being careful not to let it come together to form a dough. If not using the streusel right away, store it in an airtight container in the refrigerator for up to 3 days or in the freezer for up to 1 month.
- TO MAKE THE CAKE, preheat the oven to 350°F (175°C). Butter and flour the bottom and sides of a 9-inch (23 cm) springform pan.
- Sift the flour and baking powder into a small bowl.

- Scrape down the sides of the bowl, then add the flour mixture. Mix on low speed just until uniform in texture. Use a rubber spatula to gently fold in the fruit until evenly incorporated.
- TO ASSEMBLE AND BAKE, pour the batter into the prepared pan, smooth it with an offset or rubber spatula, and sprinkle the streusel evenly over the top. Bake for 55 to 60 minutes, until the streusel is dry and golden and the buckle is firm and springs back when gently pressed in the center, rotating the pan midway through the baking time.
- Let the cake cool in the pan on a wire rack for 30 minutes, then remove from the pan. Serve warm or at room temperature. Stored in a covered container at room temperature, it will keep for up to 3 days.

- Heat oven to 350°F; spray bottom and sides of 10 to 11 inch springform pan with no stick cooking spray.
- Combine muffin mix and butter in medium bowl. Cut in butter with pastry blender or fork until mixture is crumbly. Reserve 1-1/3 cup of crumb mixture. Place in refrigerator.

- Sprinkle reserved crumb mixture and walnuts on top of pie filling.
- Bake 40 to 45 minutes longer, or until golden brown on cookie sheet.
- Cool about 30 minutes.
- Chill 2 hours or overnight (this is the hard part, waiting -- but worth it!).
- Remove sides of pan and place on serving plate to serve! YUMMY!

- Preheat oven to 350°F.
- In the bowl of a standing mixer beat the sugar and margarine until smooth and creamy.
- Beat in the tofu and mix again until well mixed.
- Add the flour and beat into the sugar mixture. If your mixer can't handle the job, just mix the rest of the flour until combined.
- Stir in the pecans.
- Reserve 1 cup of the pecan mixture.
- Press the rest of the pecan mixture into a 9x9x2-inch baking dish.
- Spread the strawberry preserves on top of the pecan mixture leaving a one half inch border with no filling from the edge of the baking pan.
- Put your reserved pecan mixture on top of the strawberry preserves and press lightly.

- If you choose the glaze stir the milk and vanilla into the powdered sugar and beat until creamy. If this isn't liquid enough add more milk until it is at the consistency you like.

- Preheat oven to 357°F Spray a 9.5" springform pan. Set aside.
- Combine flour, sugar, salt, baking powder, cinnamon in a mixer bowl. Add eggs, and beat on medium speed. Add milk, oil, vanilla and beat until smooth.

- Use to top muffins, quick breads, crisps or ice cream. Store in an airtight container, in the refrigerator, for up to a month.

- STREUSEL: Blend walnuts, sugar, cinnamon and shortening until crumbly; reserve.

Pinch the open ends together as you go to avoid filling coming out the ends. As you near the end, rather than rolling the turn, pull the bare edge up towards you and pinch the dough together along the length. Rotate your dough so the seam is down.
