STRAWBERRY OATMEAL PANCAKES

Number Of Ingredients 13

1 cup old fashioned oats
1 cup buttermilk
2 eggs
4 Tbsp. canola oil
1 1/2 tsp. vanilla extract
1/2 cup all purpose flour
1/2 cup whole wheat flour
2 1/2 Tbsp. sugar
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1 cup finely chopped fresh strawberries

Steps:

  • In a large mixing bowl, combine the oatmeal and the buttermilk and let sit for 20 minutes.
  • After the 20 minutes, add the eggs, vanilla and oil and mix well.
  • Add the flours, sugar, powder, soda, salt and cinnamon and mix until incorporated.
  • Gently mix in the fresh strawberries.
  • Heat your griddle to 350 degrees.
  • Drop the thick batter (about 3/4 cup size) onto the griddle, kind of spread into a circle shape and cook for 3 minutes, flip and then cook for 2 or 3 more minutes or until batter is not raw.
  • * I find that on my non stick griddle, not greasing it works best to not burn the pancakes. I do however spray my spatula with non stick cooking spray for easy flipping ????
  • Serve warm with fresh whipped cream, maple syrup or both.
  • Makes about 8 larger sized pancakes.
  • *To freeze: prepare as usual, let cool completely on a cooling rack, place in freezer friendly plastic gallon sized bags, with parchment paper in between each pancake. To reheat: remove from the freezer and warm in the microwave or oven.
  • Enjoy!

2 cups Hood Calorie Countdown fat free dairy beverage or 2 cups skim milk
1 egg, lightly beaten
1 1/2 tablespoons Splenda brown sugar blend or 1 1/2 tablespoons brown Sugar Twin
3/4 cup all-purpose flour
3/4 cup whole wheat flour
1 tablespoon baking powder
1 cup sliced fresh strawberries

Steps:

  • Place oatmeal, milk, egg and brown sugar blend together in a bowl and stir until blended. Allow to rest for 10 minutes.
  • Gently stir in flours and baking powder.
  • Fold in strawberries.
  • Heat lightly oiled griddle and drop pancake batter by 1/2 cup per pancake.
  • When bubbles form all over the pancake, flip the pancake and brown other side. Repeat with remaining batter.
  • Serve with butter and sugar-free syrup or no sugar added strawberry preserves, if desired.

1 cup buttermilk
2 large eggs
¼ cup canola oil or melted butter
1 ½ teaspoons vanilla extract
½ cup all-purpose flour
½ cup whole wheat flour
3 tablespoons granulated sugar
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
½ teaspoon fine sea salt
½ cup finely chopped fresh strawberries
Whipped cream for serving
Maple syrup for serving

Steps:

  • In a large bowl stir together the oats and buttermilk. Let sit for 20 minutes.
  • Add the eggs, vanilla, and oil to the bowl, and whisk to combine.
  • Add the flour, whole wheat flour, sugar, baking powder, baking soda, cinnamon, and salt. Stir together until combined.
  • Fold in the strawberries.
  • Place a large skillet over medium heat. Lightly spray with cooking spray.
  • Add ½ cup of the batter to the skillet and spread it out into a circle shape.
  • Cook for 3 minutes on the first side until bubbles come up in the center and burst.
  • Flip and cook for an additional 3 minutes or until the bottom is browned.
  • Serve immediately with whipped cream and maple syrup.
