The perfect family pudding

Provided by Good Food team

Categories     Dessert, Dinner, Lunch

Time 1h15m

Number Of Ingredients 9

1 x Roasted rhubarb (see 'goes well with' below)
250g strawberries , hulled and halved
85g plain flour
50g golden caster sugar
25g ground almond
50g butter , room temperature, chopped
finely grated zest 1 small orange
2 handfuls pine nuts
serve with the best custard you can buy

Steps:

  • While the fruits are roasting, prepare the crumble. Mix the flour, sugar and ground almonds, then add the butter and rub together to make coarse crumbs. Stir in the orange zest.
  • Spoon the crumble loosely over the fruit, then scatter with the pine nuts. Bake straight away for 25 mins until golden and bubbly. Cool a little before serving with custard and any remaining syrup.

ELDERFLOWER AND STRAWBERRY BOMBE

Elderflower and Strawberry Bombe image

In this recipe, the elderflower concentrate gives the ice cream a delicate, fruity flavor, but 1 teaspoon vanilla stirred into 1/4 cup additional milk makes a delicious substitute.

Yield Makes 8 servings

Number Of Ingredients 10

2 cups heavy cream
1 cup whole milk
2 large eggs
3/4 cup sugar
1/2 cup elderflower concentrate
2/3 cup sugar
2/3 cup water
3 cups strawberries, hulled
1 teaspoon fresh lemon juice
Garnish: strawberries, some halved if desired

Steps:

  • Have ready a large bowl of ice and cold water. In a saucepan bring cream and milk just to a boil. In a small bowl with an electric mixer beat together eggs and sugar until thick and pale. Add 1 cup hot cream mixture to egg mixture in a slow stream, whisking. Whisk egg mixture into cream mixture in pan and cook over moderate heat, stirring constantly, until thickened slightly, just coats back of spoon, and a candy thermometer registers 170° F. (Do not let custard boil or it will curdle.) Pour custard through a fine sieve into a bowl set in bowl of ice water and stir in elderflower concentrate (or vanilla mixture; see above note). Cool custard. Chill custard, its surface covered with plastic wrap, at least 1 hour and up to 24. Freeze custard in an ice-cream maker. Transfer ice cream to an airtight container and in freezer harden until firm. Ice cream may be made 1 week ahead.
  • In a saucepan bring sugar and water to a boil, stirring until sugar is dissolved. Stir in strawberries and lemon juice and cool 10 minutes. In a food processor purée mixture until very smooth and force through a sieve into a bowl, pressing hard on solids. Discard solids and cool purée. Freeze purée in an ice-cream maker. Transfer sorbet to an airtight container and in freezer harden until firm. Sorbet may be made 1 week ahead.
  • Let ice cream and sorbet stand at room temperature until softened, about 10 minutes. Into a large bowl scoop alternating cup measures of ice cream and sorbet. Make 2 figure-eight swirls with a large metal spoon through ice cream and sorbet and pour into a 7- to 8-cup mold. Freeze bombe, covered with plastic wrap, at least 4 hours and up to 2 weeks. To unmold bombe, dip mold in a bowl of hot water 1 second and invert bombe onto a serving plate.
  • Garnish bombe with strawberries.

  • First, make the shortbread crust: Spray bottom and sides of a 9- or 10-inch tart pan (with a removable bottom) with baking spray with flour. Set aside.
  • Heat oven to 350°F. In the bowl of a food processor, pulse flour and powdered sugar until combined. Add butter; pulse until mixture resembles coarse crumbs. Press mixture evenly into bottom and sides of prepared tart pan. Freeze 7 to 10 minutes to firm up slightly. Using fork tines, poke tart crust all over (this prevents any puffing in the oven).
  • Place tart pan on a baking sheet, then place on center rack of oven. Bake tart crust 15 to 18 minutes or until lightly golden and baked through. Transfer tart pan to cooling rack; use the bottom of a drinking glass to press the crust in slightly to make room for the custard filling. Cool completely.
  • Meanwhile, prepare the tart filling/topping: In a medium saucepan over medium heat, whisk milk, egg yolks, vanilla extract, granulated sugar, cornstarch and salt. Continue to cook over medium heat, whisking constantly, until custard simmers and begins to thicken, about 10 to 12 minutes. Pour thickened custard into cooled crust. Cover tart with plastic wrap, placing directly on the surface, to prevent a skin from forming. Refrigerate tart until well-chilled, at least 4 hours.
