Steps:

  • Combine sugar, berries, and 1/2 cup water in a saucepan; bring to a boil over medium-high heat. Reduce heat to medium low; cook until sugar is dissolved, about 8 minutes. Use a pastry brush dipped in water to brush down any sugar crystals on the side of the pan. Remove from heat; cool completely. Place mixture in the jar of a blender; puree until smooth. Pass through a fine-mesh colander, and discard solids.

  • Put all the ingredients in a small food processor or use a stick blender to blitz until very smooth.
  • Set a sieve over a jug. Tip the mixture into the sieve and push through the liquid using a spatula. Discard the seeds. The coulis is ready to use. Will keep refrigerated in an airtight jar for up to two days.

6 tablespoons sugar
2 one-by-three-inch slices orange peel
1 stick cinnamon

Steps:

  • In a small saucepan, combine all ingredients with 1 1/2 cups water; bring to a boil. Reduce heat to medium low; cook until cranberries have burst, 8 to 10 minutes. Remove and discard orange peel and cinnamon stick.
  • Pass mixture through a food mill, then through a fine sieve to remove all seeds; cool.

2 cups whole wheat pastry flour
2 tablespoons baking powder
2 tablespoons baking soda
1 teaspoon sea salt
1 cup maple syrup
1 cup corn oil
6 ounces tofu, pressed dry
3/4 cup vanilla soy milk
1 tablespoon pure vanilla extract
1 tablespoon orange juice
1 cup non-dairy, grain-sweetened chocolate chips
Glaze:
1 cup Dutch cocoa
1/4 cup corn oil
1/4 cup vanilla soymilk
2 tablespoons pure vanilla extract
Strawberry Coulis, recipe follows
2 cups of fresh strawberries, hulled or thawed frozen strawberries (12 ounces)
2 tablespoons of maple syrup, unless you have freshly picked berries in season
2 tablespoons of organic apple juice, plus additional as needed to thin sauce
2 teaspoons of Grand Marnier, or your favorite orange liqueur
Fresh strawberry slices for garnish

Steps:

  • Preheat oven to 350 degrees. In a large bowl, sift cocoa, pastry flour, baking powder, baking soda, and sea salt. In a blender, combine maple syrup, corn oil, tofu, soy milk, vanilla extract and orange juice. Blend until the mixture achieves a smooth and even consistency. Add the wet ingredients to the sifted dry ones. Spoon the batter into oiled a floured star-shaped individual cake pans, filling them no more than 3/4 of the way full. Place about 10 chocolate chips in the center of the batter in the mold to form a "gooey" center. Bake the cakes for 15 to 18 minutes.
  • Glaze: Sift the cocoa. Whisk it together with maple syrup, corn oil and vanilla. On a low flame, stirring constantly, heat for 3 to 5 minutes. Refrigerate until glaze cools.
  • In a food processor combine the strawberries, maple syrup, and apple juice. Process until mixture is smooth, being careful not to over-process the berries or they will discolor. Add more apple juice as necessary if sauce is too thick.
  • Strain mixture through a fine sieve into a nonreactive bowl. Stir in the liqueur. This coulis will keep in the refrigerator for up to 3 days.

1/2 cup cranberry sauce (make by cooking 1 cup fresh cranberries, 1/4 cup sugar and 1/4 cup water then puree and sieve)
1/2 cup confectioners' sugar
1/4 cup satsuma orange juice
1 pint louisiana strawberry, washed, hulled and quartered
1 1/2 cups all-purpose flour
2 tablespoons granulated sugar
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
6 tablespoons cold unsalted butter, cubed
1/2 cup milk
1/2 cup sour cream
1/2 teaspoon vanilla
1 teaspoon freshly grated satsuma orange zest
2 -3 tablespoons turbinado sugar
1 cup heavy cream, whipped

Steps:

  • To prepare Cranberry Coulis: In blender container, combine cranberry sauce, confectioners' sugar, and satsuma juice; purée until smooth. Combine coulis and strawberries; toss to mix. Refrigerate until ready to serve.
  • To prepare Drop Biscuits: Preheat oven to 425 degrees. Line a sheet pan with parchment paper.
  • In the bowl of a food processor, combine flour, sugar, baking powder, baking soda, and salt; pulse together for 30 seconds. Add butter and pulse two to three times in 10-second intervals until butter is cut into the flour. Transfer mixture to a large mixing bowl.
  • In a separate mixing bowl, whisk together milk, sour cream, vanilla, and satsuma zest. Fold milk mixture into flour mixture and mix well. Drop tablespoonfuls of the batter onto prepared sheet pan, then sprinkle with turbinado sugar. Bake at 425 degrees for 12 to 15 minutes or until golden brown. Cool on a wire rack.
  • To serve, split biscuits and fill with marinated berries. Top with whipped cream.
  • Note: The cranberry coulis can also be used to garnish many Christmas pies and cakes-or to sweeten champagne cocktails (1 to 1-1/2 tablespoons per glass).
