2 cups fresh strawberries, tops removed and sliced thin top to bottom
8 slices honey oat bread
1 1/2 cups shaved iceberg
Mauro Method Bacon, recipe follows
Balsamic Black Pepper Mayo, recipe follows
12 slices thick-cut bacon
1 cup mayonnaise
1 tablespoon balsamic glaze
1 tablespoon fresh basil chiffonade
1 teaspoon freshly ground black pepper
Kosher salt

Steps:

  • Arrange an even layer of strawberry slices on 4 slices of bread. Pile shaved iceberg on top. Place 3 pieces Bacon on top of each. Spread a nice crust-to-crust schmear of the Balsamic Black Pepper Mayo on the remaining slices of bread. Top with another even layer of strawberry slices, right on the mayo. Close sandwiches, slice in half and eat!
  • Preheat the oven to 375 degrees F.
  • Line a sheet tray with parchment paper overlapping each side by 1 to 2 inches. Place the bacon on the sheet pan. Bake, rotating once, until desired crispiness, 15 to 20 minutes. Remove the bacon and let drain on paper towels.
  • Whisk together the mayo, balsamic glaze, basil and pepper in a bowl. Season to taste with salt.

3 tablespoons sugar
1 1/2 tablespoons balsamic vinegar
Black pepper to taste

Steps:

  • Rinse, hull , and slice the strawberries
  • Place the sliced berries in a medium nonreactive bowl (such as a glass bowl).
  • Sprinkle the berries with the sugar and balsamic vinegar, and toss gently to coat.
  • Allow the berries to macerate in the vinegar and sugar mixture for about 15 minutes.
  • Add 4 to 5 grinds of coarse black pepper to the berries, and toss to coat.
  • Allow the flavors to blend about 5 minutes more before serving.

Steps:

  • Wash the strawberries and remove the green stems. Cut the strawberries and place them in a bowl. Toss them with the sugar and cover the bowl with plastic wrap and place it in the refrigerator for at least 2 hours and even overnight. The sugar will draw moisture out of the berries and naturally make a sweet strawberry syrup.

2 limes
100g golden caster sugar
5 medium-sized 'long' peppercorns , one crushed and rest left whole (or use 2 tsp crushed black peppercorns)
450g ripe strawberry , hulled and halved, or quartered if large
vanilla or coconut ice cream , to serve

Steps:

  • Using a vegetable peeler, pare the zest from 1 lime in long strips. Shave away any white pith from the back of the zest (this can make it bitter), then put the zest in a medium pan. Squeeze both of the limes and add the juice to the pan with 3 tbsp water, the sugar and the crushed and whole peppercorns. Heat gently until the sugar dissolves, boil, then take off the heat.
  • Spread out the strawberries in a serving dish, then pour over the hot syrup and allow to cool. As this happens, the syrup will become rosy pink. Serve at room temperature with scoops of ice cream.

For the strawberry puree:
10 ounces (about 1 pint) ripe strawberries, hulled and halved
¼ cup honey
Heat the oven to 300°F. Line a sheet pan with parchment paper.
For the ice cream base:
½ cup granulated sugar
2 tablespoons dry milk powder
¼ teaspoon xanthan gum
2 tablespoons light corn syrup
1⅓ cups whole milk
1⅓ cups heavy cream
For the ice cream:
¾ cup Strawberry Puree (recipe follows), very cold
¼ cup honey balsamic vinegar, like Honey Ridge Farms or O Olive Oil
⅛ teaspoon freshly (and very finely) ground black pepper
3 cups Ice Cream Base (recipe follows), very cold
¾ cup your favorite strawberry jam

Steps:

  • Strawberry puree:
  • Spread the strawberries out evenly on the lined sheet pan and drizzle them with the honey. Bake for 15 minutes. Stir the berries and continue baking until they just barely begin to caramelize and get a little bit of roasted color to them, about 20 minutes more. Remove the sheet pan from the oven and let them sit until they're cool enough to handle. Transfer the berries to a blender along with the yummy sticky stuff on the parchment paper and puree to make a smooth sauce. Chill in the fridge until cold.
  • Store the puree in the fridge for up to 2 weeks or in the freezer for up to 3 months.
  • Ice cream base:
  • Combine the sugar, dry milk, and xanthan gum in a small bowl and stir well.
  • Pour the corn syrup into a medium pot and stir in the whole milk. Add the sugar mixture and immediately whisk vigorously until smooth. Set the pot over medium heat and cook, stirring often and adjusting the heat if necessary to prevent a simmer, until the sugar has fully dissolved, about 3 minutes. Remove the pot from the heat.
  • Add the cream and whisk until fully combined. Transfer the mixture to an airtight container and refrigerate until well chilled, at least 6 hours, or for even better texture and flavor, 24 hours. Stir the base back together if it separates during the resting time. The base can be further stored in the fridge for up to 1 week or in the freezer for up to 3 months. (Just be sure to fully thaw the frozen base before using it.)
  • Ice cream:
  • In a bowl, combine the strawberry puree, vinegar, and black pepper with the ice cream base. Whisk as needed to get everything completely incorporated into the base. Pour the mixture into an ice cream maker and turn on the machine. Churn just until it has the texture of soft-serve.
  • Stir the jam with a fork to loosen it. Quickly alternate spooning layers of the mixture and dollops of the jam in freezer-friendly containers.
  • Cover with parchment paper, pressing it to the surface of the ice cream so it adheres, then cover with a lid. It's okay if the parchment hangs over the rim. Store it in the coldest part of your freezer (farthest from the door) until firm, at least 6 hours. It will keep for up to 3 months.

2 cups unbleached all purpose flour
5 tablespoons sugar, divided
2 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup (1 stick) chilled unsalted butter, cut into 1/2-inch cubes
1 cup chilled heavy whipping cream
1 large egg, beaten to blend (for glaze)
Filling:
2 pounds fresh strawberries (about 8 cups), hulled, quartered if small, sliced if large
6 tablespoons sugar, divided
3 tablespoons balsamic vinegar
1 large pinch of freshly ground black pepper
1 cup chilled heavy whipping cream
1 teaspoon vanilla extract

Steps:

  • For biscuits:
  • Position rack in center of oven and preheat to 425°F. Line baking sheet with parchment paper. Place flour, 4 tablespoons sugar, baking powder, and salt in processor. Using on/off turns, process to blend. Add butter; cut in using on/off turns until butter resembles large peas, about five 1-second intervals. Add cream; using on/off turns, process until moist clumps form. Transfer dough to lightly floured work surface. Gather dough into ball; flatten into 8 x 4-inch rectangle (about 1 1/4 inches thick). Cut lengthwise in half, then crosswise into 4 equal strips, forming 8 square biscuits. Transfer biscuits to prepared baking sheet and chill 20 minutes. DO AHEAD: Can be made 1 day ahead. Cover and keep chilled.
  • Brush top of biscuits with egg glaze; sprinkle with remaining 1 tablespoon sugar. Bake until biscuits are golden brown and tester inserted horizontally comes out clean, about 15 minutes. Transfer to rack and cool. DO AHEAD: Can be made 8 hours ahead. Let stand at room temperature.
  • For filling:
  • Mix strawberries, 5 tablespoons sugar, vinegar, and black pepper in medium bowl. Let macerate 30 minutes, stirring occasionally.
  • Using electric mixer, beat cream, vanilla, and remaining 1 tablespoon sugar in another medium bowl until peaks form.
  • Cut biscuits horizontally in half. Place bottom half of each biscuit, cut side up, on plate. Using slotted spoon, divide strawberries among biscuits. Spoon dollop of whipped cream atop strawberries. Cover each with top half of biscuit. Drizzle some of juices from strawberries around shortcakes.
