This is a Very Old Family recipe. Its been in My Family for as Long as I can remember, over 85 yrs for Sure. My granny used to make a meal on this

STEWED TOMATOES & RICE SIDE DISH BY FREDA
1 lg onion diced and chopped
1/2 chopped green bell pepper
1/2 C chopped & diced celery
5 Tbs cooking oil ( approx)
1 C long grain, uncooked rice
2 C water or chicken broth
1 tsp garlic pdr or fresh garlic if desired
2 cans (16oz) stewed tomatoes chopped
option: season with salt & pepper if desired

Steps:

  • 1. Heat Oil on Med-High heat Add: Onions, Bell Pepper, Celery, Garlic Saute only until slightly tender, But not cooked all the way.
  • 2. Add: Rice and Saute with Vegies, only till Rice slightly changes its Color, Toss frequently, so as to not Burn.
  • 3. Add: Water or Broth to rice Mixture. Bring to Boil; Reduce Heat to Simmer, Cover Cook for 25-30 Min. (DO NOT STIR) or cook till rice is Tender and Fluffy. Then, Fluff with Fork.
  • 4. Heat Tomatoes to Hot, in sperate Pan or in Bowl in Microwave.
  • 5. Serve STEWED Tomatoes over this Cooked Rice. Enjoy this as a side Dish and addition to any meal.

BREADED STEWED TOMATOES
CMBINE IN A SAUCEPAN;
2 lbs peeled and chopped fresh tomatoes
1/4 tsp cloves, ground
2 Tbs sugar
1/2 tsp salt ( to taste)
4 slices day old stale bread, cut in 1/2 inch cubes
4 Tbs butte ( not margarine) melted
#2 GRANDMA'S OLD FASHIONED BREADED TOMATOES
1 Lg Can whole tomatoes in their juice, cut and diced
1 Sm onion chopped fine
1/4 Stk butter
1 Tbs sugar
salt and pepper ( to taste)
1 slice white (stale or day old bread) not fresh bread
#3 STEWED TOMATOES HOMEMADE BY GRANDMA
12 med tomatoes, scalded & peeled
1 med green bell pepper, cut and diced
1 Large onion chopped
1-2 stks celery, chopped & diced
2 Tbs oil
1 Tbs brwn ugar
1 tsp salt and dash of pepper (to taste)

Steps:

  • 1. RECIPE # 1. Breaded Stewed Tomatoes Old Fashioned. Preheat the Oven @ 400 degrees F.
  • 2. Combine Tomatoes, Cloves, Sugar and salt in Saucepan. Cook overMed. Heat till tomatoes are tender. Pour into Shallow Baking dish. Top tomatoes with the Stale Bread Cubes. Pour Melted Butter over Bread Cubes. Bake in 400 degree oven, till bread Crumbs are golden Brown. This is a good way to get rid of Old bread heels and get Your Vegies too. A Very thrifty recipe.
  • 3. RECIPE # 2 My Grandmas Stewed tomatoes Saute Onion Very well in the butter over Med Heat.(do Not Brown) Add: Tomatoes,I let this simmer about 15-20 min. At the very End, I add the Bread Cubes and stir Carefully. I use I think (1) piece but may need a little more. Depends on how you remember your looking, and tasting. It is served in a little glass side Dish per prson, topped with a tiny dab more of Butter on top. NOTE: Some Recall & Use a cream in theirs, My grandmother Did not use any cream in hers. Enjoy. . .My Grandmother would thank You for using this recipe. . . if she Knew.
  • 4. RECIPE #4 My Grandma's Homemade Stewed Tomatoes Heat the Oil in a saucepan. Chop Onion, Pepper, & Celery, Add to Oil and Cook over Med Heat till good and tender. Cut p the Scalded and Peeled Tomatoes, and add to the same pan. Add: the Sugar, Salt and Pepper. Reduce the Heat to Med Low (Simmer) and Cook for about 45 Min. This makes 6-8 servings.

2 cups uncooked white rice
2 unpeeled potatoes, diced
1 (12 ounce) can tomato paste
1 (15 ounce) can tomato sauce
1 teaspoon dried basil
1 tablespoon white sugar
1 tablespoon salt
2 bay leaves
1 (13.5 ounce) can whole leaf spinach, drained
1 (14.5 ounce) can stewed tomatoes, drained and sliced
½ tablespoon fresh lemon juice

Steps:

  • In a large saucepan, mix the water, rice, potatoes, tomato paste, and tomato sauce. Stirring constantly, bring to a boil. Reduce heat to medium, and stir in basil, sugar, salt, and bay leaves. Cook about 15 minutes, stirring often, until potatoes and rice are tender but firm.
  • Mix spinach, stewed tomatoes, and lemon juice into the saucepan. Reduce heat, and simmer 15 minutes, or until rice has finished cooking and the mixture has thickened.

Beef Stew With Tomatoes and Rice image

From Low Fat One Dish Meals from Around the World, posted for ZWT III, France. "This dish comes from the western Meditteranean corner of France", according to the cookbook. Depending on how you look at it, this is a really wet casserole or a very thick stew. I like it with a bit of crushed red pepper mixed in.

2 slices bacon (or turkey bacon)
1 tablespoon olive oil
1 1/2 lbs lean top round steaks, cut into 1-inch cubes
1 1/2 cups chopped onions
1 cup long grain white rice
1/2 cup water
1/2 cup dry white wine
3 cups beef stock, as needed
salt
2 cups thinly sliced carrots
1 cup thinly sliced celery
1/4 teaspoon pepper
2 garlic cloves, crushed
1 teaspoon dried thyme
1 bay leaf, crumbled
1 1/2 cups chopped tomatoes
1/2 cup parmesan cheese

Steps:

  • In a heavy dutch oven with a lid, fry the bacon over medium heat till just cooked. Drain and cut into 1-inch pieces. Set aside.
  • Pour off any excess fat from the pot, add the oil and warm it over medium high heat.
  • Add the meat and cook it till browned.
  • Reduce heat to medium, stir in the onion and brown it slightly.
  • Remove the meat and onion to a large platter.
  • In the oil in the same pot, add the rice and cook, stirring over medium heat till it turns a milky color (about 3 minutes).
  • Spoon rice into a bowl and set aside.
  • Pour any remaining oil out of the pot, add the water and stir for a moment to dissolve the juices.
  • Add the wine, stir, then return the meat and onion to the pot.
  • Pour in the stock almost to the height of the meat and salt it lightly.
  • Add the carrot, celery, pepper, garlic, thyme, bay leaf and reserved bacon.
  • Bring to a simmer, cover tightly and simmer slowly for 1 hour.
  • Stir in the chopped tomato and simmer till the meat is fork tender (1 hour or more). Drain off the cooking liquid and add stock or water to make 2 1/2 cups.
  • Return the liquid to the pot and bring to a boil.
  • Stir in the reserved rice, cover and simmer for about 20 minutes, without stirring.
  • The rice should be tender and have absorbed almost all the liquid.
  • Taste and correct seasonings.
  • Just before serving, fold in the grated cheese.
  • Serve from the pot.

Great side dish for your Mexican fiesta. Try with Recipe #17130! It is as good as you'll find in any Mexican restaurant. Update: 1 teaspoon cumin was added to original recipe. I took some of my reviewers suggestion and added 1 teaspoon of cumin to the recipe. They were right. Cumin definitely adds to the taste.

1 1/2 cups chicken stock
1 1/4 cups rice
1 tablespoon butter or 1 tablespoon margarine
2 teaspoons chili powder
3/4 teaspoon oregano
1/2 teaspoon garlic salt
1 teaspoon cumin

Steps:

  • In medium saucepan, combine all ingredients (I usually mash tomatoes with potato masher or give them a quick spin in food processor).
  • Bring to a boil; reduce heat to low.
  • Cover and simmer 25 minutes or until rice is done. (Unless you like sticky, gooey rice, don't take off the lid and stir at all until it is done).
  • Garnish with green onions and/or cheddar cheese.

  • In a large pot with a tight fitting lid, melt the bacon grease over medium high heat. Add the onions and cook until translucent and tender. Add the garlic and cook for 1 minute.
  • Add the chicken broth and tomatoes. Bring to a boil. Add the rice and stir well. Add salt to taste. Reduce the heat to a low simmer and cover. Cook for 20 to 25 minutes or until tender and most of the liquid has been absorbed. Turn off the heat and allow the rice to rest for an additional 5 minutes to allow the remaining liquid to be absorbed. Fluff the rice with a fork and serve.
