Stewed Spicy Chicken With Lemongrass And Lime image

This wildly flavorful chicken dish is inspired by the bright flavors found in Thai cooking - garlic, galangal (or ginger), chiles, turmeric, cilantro and lemongrass. While its flavor profile is complex, it is blessedly easy to make. Just sauté the savories, herbs and spices and add the chicken to the pan. Allow it to cook, covered, for about 20 to 30 minutes. Remove the lid, let the chicken brown a bit, and that's it. Serve over rice so you don't miss out on a single drop of the exquisite sauce.

2 tablespoons peanut or vegetable oil
1/2 cup minced shallot
1 tablespoon minced garlic
1 tablespoon minced galangal or ginger
1 teaspoon minced hot chili, or crushed red pepper flakes, or to taste
1 teaspoon turmeric
1 teaspoon ground dried cilantro
1 teaspoon sugar
2 stalks lemongrass
1 3-pound chicken, cut into serving pieces
Salt and freshly ground black pepper
1 tablespoon minced lime leaves or zest
2 tablespoons nam pla
1/4 cup minced cilantro leaves

Steps:

  • Place the oil in a large, deep skillet and turn the heat to medium. Add the shallot, garlic, ginger and chilies and cook, stirring frequently, until the vegetables are tender and the mixture pasty. Add the turmeric, cilantro and sugar and cook, stirring, for another minute. Trim the lemongrass stalks of their toughest outer layers, then bruise them with the back of a knife; cut them into sections and add them to the mixture along with 1 cup water.
  • Add the chicken and turn it once or twice in the sauce, then nestle it in the sauce; season with a little salt and pepper. Turn the heat to low and cover the skillet. Cook, turning once or twice, until the chicken is cooked through, 20 to 30 minutes.
  • Uncover the skillet and raise the heat to medium-high; turn the chicken skin-side down. Let most (but not all) of the liquid evaporate and brown the chicken just a little on the bottom. Stir in the lime leaves and nam pla; taste and adjust seasoning as necessary, then garnish and serve with white rice.

Steps:

560 g chicken wings, cut in half at the joint, discard wing tips
1 cup fresh coconut juice
1 long red chili, cut into 2cm pieces
1 long green chili, cut into 2cm pieces
3 spring onions, cut into 3cm pieces
2 lemongrass, white part only, chopped (for the marinade)
2 shallots, chopped (for the marinade)
2 garlic cloves, chopped (for the marinade)
1 tablespoon sesame oil (for the marinade)

2 tablespoons fish sauce (for the marinade)

Steps:

  • Process garlic, lemongrass and shallots in the food processor until finely chopped. Place the chicken in a large non-metallic bowl. Add all the marinade ingredients and mix using your hand until combined. Cover with plastic wrap and place in the refrigerator for 2 hours or overnight.
  • Heat oil in a wok or a large non-stick frying pan over medium-high heat. Fry the chicken pieces with the marinade and cook for 5-6 minutes or until browned.

1/4 cup oyster sauce
1/4 cup Thai seasoning sauce, such as Golden Mountain

3 to 4 slices fresh turmeric
3 kaffir lime leaves

Steps:

  • Put the chicken in a large bowl. Add the lemongrass, tamari, oyster sauce, seasoning sauce, soy sauce, sugar, pepper, turmeric, lime leaves and cilantro roots to a blender and blend until combined. 3 tablespoons grapeseed oil or 3 tablespoons other neutral oil
6 stalks lemongrass, trimmed, halved lengthwise, and smashed

lime wedge

Steps:

  • Sprinkle the chicken with salt and pepper.
  • Put oil in a deep skillet over medium high heat.
  • Spread the lemongrass in the skillet.
  • Cover.
  • When lemongrass begins to fry and is fragrant, place the chicken, skin side down over the lemongrass.
  • Turn the heat to medium, cover.
  • Cook, turning and basting with the soy sauce every 10 minutes or so until the chicken is cooked through, about 30 minutes.

1 jalapeno pepper
4 cloves garlic
1 shallot
3 tablespoons olive oil, divided
salt and ground black pepper to taste
½ teaspoon dried parsley
½ teaspoon dried thyme
6 skinless, boneless chicken thighs
½ cup white wine
1 lime, juiced
1 tablespoon honey, or more to taste
½ cup chicken broth

Steps:

  • Puree jalapeno pepper, garlic, shallot, and 1 tablespoon olive oil, salt, and black pepper in a food processor. Add parsley and thyme; process again to integrate.
  • Rub the jalapeno pepper mixture evenly onto the chicken thighs, place onto a platter and cover with plastic wrap; marinate in refrigerator at least 1 hour, up to 24 hours.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat 2 tablespoons olive oil in an oven-safe skillet over medium-low heat. Cook chicken thighs in hot oil until golden brown, about 5 minutes per side. Transfer chicken to a platter, retaining drippings in the skillet.
  • Reduce heat under the skillet to low. Pour wine into the pan; bring to a boil while scraping the browned bits of food from the bottom of the pan with a flat-edged wooden spoon. Stir lime juice and honey into the wine; bring to a simmer and cook until the volume of the liquid reduces slightly, about 5 minutes. Return chicken to the skillet. Pour broth over the chicken.
  • Transfer skillet to preheated oven and bake until the sauce has thickened and the chicken is no longer pink in the center and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

  • Heat oil in a heavy based frying pan or wok.

  • Take care not to burn the mixture or it will become bitter.

2 stalks lemongrass
1 garlic clove, finely sliced
1 teaspoon fresh gingerroot, grated

250 g broccoli florets
1/2 teaspoon cornflour, mixed with
2 tablespoons cold water
1/4 cup toasted almond

Steps:

  • Mix the lemon grass, garlic and ginger together, season with salt and freshly ground black pepper and rub over the chicken. Leave to marinate for 20 minutes.
  • Put just enough water into a steamer or pan and place the rack or steamer basket on top. Place the chicken and seasoning inside, cover and steam for 15-20 minutes.
  • Scatter over the broccoli florets and cook for another two minutes. Remove the steamer tray and set aside.
  • Whilst cooking the fragrant chicken juices should have dripped down into the water to make a stock and evaporated to leave approximately a glass full of liquid (about 80-100ml - if you find you have too much liquid, bring to a fast boil and reduce).
  • Thicken the stock with cornflour and season if necessary.
  • To serve, arrange the chicken on a plate and scatter over the broccoli, and toasted almonds then drizzle with the sauce. Serve with steamed rice.
