STEAMED PORK PATTY (榨菜蒸豬肉餅)

Steps:
- We'll first trim the fat off of our pork shoulder. Then, we'll cut the pork into strips, slices, and finally, dice them into small bits.
- We'll be preparing a few different vegetables:
- Before mixing flavors together, don't forget to squeeze the extra water out of the pork!
- With chopsticks, mix the pork and flavors thoroughly for about 1 minute. The pork should start becoming stickier and pastier.
- Add oil to a plate, and spread it around the surface. This helps prevent the pork patty from sticking.
- We'll set the stove to high heat and start boiling water in a wok. Set a steamer rack on the bottom of the wok. The water level should be just above the top of the steamer rack / just touching the bottom of the dish.
- Once the 15 minutes are up, we'll carefully remove the plate from the wok. Garnish with the green onions from earlier.
ASIAN STYLE MEATLOAF
This is the most moist, fabulous tasting meatloaf--everyone loves it! The Hoisin sauce is available in the Oriental Food Section of the grocery store... it is like cross between soy and ketchup, and makes a wonderful glaze for this moist meatloaf. We love this dish. Very moist. Serve with rice and steamed broccoli. A wonderful dinner. Leftovers make great sandwiches.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, mix together the beef, pork, bread crumbs, eggs, onion, and celery. Season with 3 tablespoons soy sauce, ginger, and 2 tablespoons hoisin sauce. Pat mixture into a shallow 2 quart baking pan.
- Bake in preheated oven for 40 minutes.
- Drain grease from pan. In a small bowl, mix 1/2 cup hoisin with 2 tablespoons ketchup. Spread over top of meatloaf. Continue baking for 20 minutes or so. Remove from oven, and let rest for 5 minutes.

- With hands, mix all ingredients. (Other seasonings that might also be good: 1/4 t white or red pepper, chopped green onions.).
- Press into shallow, heat-proof bowl (pasta bowl or something similar--glass, ceramic, or metal).
- Steam 20 minutes until done and serve as part of a Chinese meal: rice, a soup, and a balanced variety of dishes--one per person.

- Preheat oven to 350degrees F.
- In medium bowl, combine beef, pork, wheat germ, 1/2 cup hoisin sauce, onions, water chestnuts, celery,pepper flakes, basil,garlic, egg, and salt.
- Mix thoroughly,but lightly.
- Shape into loaf and place in greased loaf or meat loaf pan.
- Bake 40 minutes or until center is no longer pink (160F).
- Combine ketchup and remaining half cup of hoisin sauce; Spoon over top the last 5 minutes of baking.

STEAMED TAIWANESE MEATLOAF
Got this recipe from my friend's mom, who makes it with pork. I haven't tried it with the pork, only turkey. Kids love this recipe - it goes well over rice. Best part is that it takes no time at all to make. On days when I don't have time, I simply mix everything together beforehand, cover it in saran wrap and throw the Corel bowl (which I can put directly into a steamer) into the fridge until 30 minutes before dinner time. To avoid using the chicken bouillon I have tried using chicken broth, but I really see no difference in taste. So I normally just make it using water and skipping the chicken bouillon altogether.

- Stir soy sauce, water, garlic, sugar, tofu and meat together in ceramic bowl
- HINT: 8 ounces tofu is half a regular pack you'd buy at the store.
- Meanwhile, back at the ranch, boil water in a steamer.
- Chop up your green onion and stir it into the mix.
- Put bowl into steamer for 20 minutes over medium heat. Serve hot over rice.
