- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Combine butter and chocolate in a large saucepan over medium-low heat. Melt chocolate, stirring frequently. Remove from heat and stir in white sugar. Stir in eggs and vanilla extract. Mix in flour until batter is smooth and pour brownie batter into the prepared baking dish.
- Bake in the preheated oven until top is dry and edges have started to pull away from the sides of the pan, 25 to 30 minutes. Let cool completely, about 30 minutes.
- Cream butter and brown sugar together in a bowl. Stir in flour, salt, vanilla extract, and chocolate chips. Add water, 1 tablespoon at a time, stirring after each addition until dough reaches cookie dough consistency. Spread cookie dough on top of cooled brownies.

- Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom and sides of 13x9-inch pan with shortening or cooking spray. (See Kitchen Tip regarding disposable foil pan.) Set caramel pouch from brownie mix aside. In large bowl, stir brownie mix, water, oil and egg with spoon until well blended. Spread half of batter in pan.

- Make the shortbread layer: Preheat the oven to 350˚. Line a 9-by-13-inch baking pan with foil, leaving a 2-inch overhang on the two short sides; lightly coat with cooking spray. Arrange the shortbread cookies in a single layer in the prepared pan.
- Make the cookie-dough layer: Whisk the flour, baking soda and salt in a medium bowl. Beat the butter and brown sugar in a large bowl with a mixer on medium-high speed until pale and fluffy, 3 to 5 minutes. Beat in the egg and vanilla until smooth. Reduce the speed to low and beat in the flour mixture until just combined. Stir in the baking chips and M&M's.
- Make the brownie layer: Melt the butter and chocolate in a medium saucepan over medium heat, stirring occasionally. Let cool slightly. Stir in the granulated sugar and eggs until smooth and glossy. Stir in the flour, cocoa powder and salt until no lumps remain.
- Spoon about half the brownie batter over the shortbread cookies and spread gently to cover. Flatten handfuls of the cookie dough mixture into small patties and lay on top of the brownie batter in a single layer. Spread the remaining brownie batter on top to cover.
- Bake until a toothpick inserted into the center of the brownies comes out clean, 55 to 60 minutes. Transfer to a rack and let cool 1 hour in the pan. Carefully remove from the pan using the foil overhang; transfer the brownies to the rack to cool completely. Cut into pieces.
PEANUT BUTTER COOKIE DOUGH BROWNIES
Steps:
- Heat the oven to 350 degrees F. Spray the bottom and sides of an 8 by 8-inch pan with cooking spray.
- For the brownies, microwave the butter and unsweetened chocolate in a microwavable bowl at high power until the butter is melted, about 2 minutes. Stir until combined, then mix in the vanilla extract. Meanwhile, beat the sugar and eggs in a large bowl and add in the chocolate mixture. Stir in the flour, baking powder, salt and chocolate chunks. Spread the brownie mixture evenly into the prepared pan. Bake until the brownies are set and a toothpick inserted in the center of the brownies comes out clean, about 22 to 28 minutes. Continue stirring until the chips are melted and the mixture is smooth. Spread the ganache over the peanut butter layer and sprinkle with the chopped peanuts. Refrigerate until the dough and ganache are set, about 1 hour. Cut into 16 squares and arrange on a serving platter to serve.

- For brownies, melt shortening and chocolate.
- Transfer to large mixing bowl.
- Blend in sugar, eggs and vanilla.
- Add flour, salt and baking powder.
