This simple recipe is perfect to prepare on a busy Thanksgiving day and it adds just the right touch to a wonderful Thanksgiving feast.

3 cups all-purpose flour
2 cups white sugar
2 teaspoons baking soda
2 teaspoons pumpkin pie spice
1 teaspoon salt
½ teaspoon baking powder
2 cups pumpkin puree
⅔ cup vegetable oil
3 eggs, beaten

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease two 9x5 inch loaf pans.
  • Mix together flour, sugar, baking soda, pie spice, salt and baking powder. Add pumpkin, oil and eggs; mix well.
  • Pour into loaf pans and bake for 1 hour or until inserted toothpick comes out clean.
  • Allow to cool for 15 minutes before removing from pans.

This is a very similar tasting bread to Starbucks pumpkin loaf, but it is organic, low fat, cholesterol free, sugar free, and uses only whole wheat flour. This recipe will not be as good if non organic ingredients are used. High quality ingredients make for a high quality product.

1 (16 ounce) box organic pumpkin puree
3/4 cup liquid organic egg whites or 8 organic egg whites
1 tablespoon liquid organic egg white
1 cup organic plain icelandic style nonfat yogurt
2/3 cup organic fat-free evaporated milk
1 tablespoon organic vanilla extract
3 cups xylitol sugar substitute
2 tablespoons organic stevia
3 cups organic whole wheat flour
2 teaspoons baking soda
1 teaspoon fair trade organic ground nutmeg
1 teaspoon fair trade organic ground ginger
1/2 teaspoon fair trade organic ground cloves
1 teaspoon fair trade organic ceylon ground cinnamon

Steps:

  • Pre-heat oven to 350.
  • Measure xylitol and pulse in blender or food processor until powdered.
  • Measure out earth balance and melt it.
  • Mix together pumpkin puree, egg whites, yogurt, earth balance, evaporated milk, vanilla, xylitol, and stevia until well blended.
  • Whisk or sift all remaining ingredients together in separate bowl.
  • Add dry ingredients to wet ingredients and mix until just blended.
  • Pour into greased and floured baking pans.

My daughter recieved this recipe on a Kindergarten field trip to pick pumpkins and I have been making it ever since. She is now 12 years old and it is the only pumpkin bread I will make. It is the most moist bread I have ever eaten!

2 1/2 cups flour
3 cups sugar
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon cinnamon
1 teaspoon nutmeg
2/3 cup water
2 cups pumpkin (fresh cooked or canned, I use canned)
3/4 cup oil
4 eggs
3/4 cup walnuts (optional)

Steps:

  • Sift together the flour, sugar, baking soda, salt, cinnamon and nutmeg.
  • Mix the dry ingredients well Mix the wet ingredients and add to the dry.
  • Beat together for 5 minutes.
  • Pour into 2 greased and floured loaf pans.
  • Bake in a preheated 350 degree oven for 1 hour.
  • Enjoy!

1 (15 ounce) can pumpkin (not filling)
5 eggs
2 cups sugar
3 cups flour
1 1/4 cups vegetable oil
2 (1 1/2 ounce) packages sugar free fat free French vanilla pudding and pie filling mix
2 teaspoons coconut extract
3 teaspoons cinnamon
1/2 teaspoon mace
1/4 teaspoon allspice
1 tablespoon orange zest
2 teaspoons baking powder
3/4 cup nuts, chopped
1/2 cup mini chocolate chip

Steps:

  • In a large bowl beat eggs and pumpkin until smooth.
  • Add sugar and oil and beat to combine.
  • Combine all dry ingredients, except nuts and choc. chips.
  • Add to egg mixture and beat to combine well.
  • Stir in nuts and choc. chips.
  • Spoon into three 8x4-inch greased and floured pans.
  • Bake at 350°F for 60-65 minute.
  • Cool on rack for 10 minute Remove from pans and let cool completely.
  • They freeze well. Enjoy, Ingrid/Koechin/Chef.
  • P.S. If you can find Instant Coconut Pudding use it and leave off the extract then.

1 medium red chili pepper
1 large onion, peeled & chopped
1 large leek, trimmed and chopped
3 liters chicken stock
1 liter water
1 tablespoon black pepper
2 teaspoons coriander
1 teaspoon thyme
2 teaspoons garlic salt
1 teaspoon mixed Italian herbs
1 teaspoon oregano
1 teaspoon tarragon
1 teaspoon cayenne pepper
5 garlic cloves

Steps:

  • Place all ingredients nto a large soup pot.
  • Bring to the boil, reduce heat to simmer.
  • When vegetables are tender, blend with a stick blender until smooth.
  • Serve with sour cream, and chives.
