1 package (10 ounces) frozen spinach, thawed and squeezed dry
1 large egg, beaten
1-3/4 cups ricotta cheese
4 tablespoons grated Parmesan cheese, divided
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon ground nutmeg
8 thin slices deli ham, halved lengthwise
8 lasagna noodles, cooked and drained
1 jar (14 ounces) spaghetti sauce

Steps:

  • In a bowl, combine the spinach, egg, ricotta cheese, 2 tablespoons Parmesan cheese, salt, pepper and nutmeg. Place 2 pieces of ham on each noodle. Spread with 1/3 cup spinach mixture. Roll up and place seam side down in a greased 13x9-in. baking dish. Top with spaghetti sauce., Cover and bake at 350° for 40-45 minutes or until heated through. Uncover; sprinkle with remaining Parmesan. Let stand for 15 minutes before cutting.

4 teaspoons all-purpose flour
1 1/4 cups whole milk
1/4 teaspoon salt
1/8 teaspoon ground black pepper
Pinch ground nutmeg
1 (15-ounce) container whole milk ricotta cheese
1 (10-ounce) package frozen chopped spinach, thawed, squeezed dry
1 cup plus 2 tablespoons grated Parmesan
3 ounces thinly sliced prosciutto, chopped
1 large egg, beaten to blend
3/4 teaspoon salt, plus more for salting water
1/2 teaspoon freshly ground black pepper
1 to 2 tablespoons olive oil
12 uncooked lasagna noodles
2 cups marinara sauce
1 cup shredded mozzarella (about 4 ounces)

Steps:

  • To make the sauce: Melt the butter in a heavy medium saucepan over medium-low heat. Add the flour and whisk for 3 minutes. Whisk in the milk. Increase the heat to medium-high. Whisk the sauce until it comes to a simmer and is thick and smooth, about 3 minutes. Whisk the salt, pepper, and nutmeg into the bechamel sauce.
  • Preheat the oven to 450 degrees F.
  • Whisk the ricotta, spinach, 1 cup Parmesan, prosciutto, egg, salt, and pepper in a medium bowl to blend.
  • Add a tablespoon or 2 of oil to a large pot of boiling salted water. Boil the noodles until just tender but still firm to bite. Drain. Arrange the noodles in a single layer on a baking sheet to prevent them from sticking.
  • Butter a 13-by-9-by-2-inch glass baking dish. Pour the bechamel sauce over the bottom of the prepared dish. Lay out 4 lasagna noodles on a work surface, then spread a large spoonful (about 3 tablespoons worth) of ricotta mixture evenly over each noodle. Starting at 1 end, roll each noodle like a jelly roll. Lay the lasagna rolls seam side down, without touching, atop the bechamel sauce in the dish. Repeat with the remaining noodles and ricotta mixture. Spoon 1 cup of marinara sauce over the lasagna rolls. Sprinkle the mozzarella and remaining 2 tablespoons of Parmesan over the lasagna rolls. Cover tightly with foil. Bake until heated through and the sauce bubbles, about 20 minutes. Uncover and bake until the cheese on top becomes golden, about 15 minutes longer. Let stand for 10 minutes. Meanwhile, heat the remaining marinara sauce in a heavy small saucepan over medium heat until hot, and serve alongside.

  • In a skillet, cook beef, onion and garlic until meat is no longer pink; drain. 3 tablespoons plus 1 teaspoon olive oil
5 lasagna noodles, preferably with ruffled edges
9 ounces hot Italian sausage, casings removed
1 cup whole milk ricotta, at room temperature
2 cups baby spinach, roughly chopped
1/2 cup shredded whole milk mozzarella (about 2 ounces)
2 tablespoons plus 1/4 cup grated Parmesan (about 1 ounce)
3/4 cup marinara sauce

Steps:

  • Bring a large pot of salted water to boil. Position an oven rack in the middle of the oven and preheat to broil. Rub 1 teaspoon olive oil on the bottom of a baking sheet to prevent the noodles from sticking.
  • Cook the lasagna according to the package directions for al dente.
  • Meanwhile, heat 1 tablespoon olive oil in an oven-safe medium skillet over medium-high heat. Add the sausage and cook until sausage is browned, breaking it into crumbles with a wooden spoon, 4 to 5 minutes. Set aside to cool. Reserve the skillet for assembling the lasagna.
  • Combine the ricotta, spinach, mozzarella and 2 tablespoons grated Parmesan in a medium bowl.
  • When the lasagna noodles finish cooking, drain them, then rinse them with cold water. Lay the noodles on the prepared baking sheet in a single layer so the edges touch each other. Cut the noodles in half lengthwise with the tip of a paring knife.
  • Spread the ricotta mixture evenly over the noodles with an offset spatula. Evenly sprinkle the sausage on top of the ricotta mixture.
  • Spread the marinara sauce on the bottom of the medium skillet used to cook the sausage. Carefully roll each noodle into a pinwheel starting from the short end, using your fingers to keep the ricotta and sausage contained. Rotate the pinwheels so the frilling ends are on top, then transfer them to the prepared skillet with the marinara sauce in a snug, even layer.
  • Brush the tops of the lasagna roll ups with the remaining 2 tablespoons of the olive oil and sprinkle evenly with the remaining 1/4 cup grated Parmesan. Put the skillet of over medium heat and cook until the sauce simmers and the filling is warmed through, 2 minutes. Broil until the top is dark golden, 2 to 3 minutes.
  • Serve the lasagna roll ups with the sauce.

20 lasagna noodles
Kosher salt
2 tablespoons olive oil
1 medium onion, diced
1 cup finely chopped mushrooms (about 3 ounces)
1 green bell pepper, diced (about 1 cup)
3 cloves garlic, minced (about 1 1/2 tablespoons)
2 pounds ground beef
Freshly ground pepper
1 28-ounce can diced tomatoes
1 6-ounce can tomato paste
4 tablespoons minced fresh parsley
4 tablespoons minced fresh basil
1 30-ounce container whole-milk ricotta cheese (about 3 1/3 cups)
1 pound mozzarella, grated (about 3 1/2 cups)
1 cup grated parmesan cheese
2 large eggs

Steps:

  • Cook the lasagna noodles in a large pot of salted boiling water until al dente. Drain, rinse with cold water to cool and lay flat on a sheet of foil. Set aside.
  • Make the sauce: In a large pot, heat the olive oil over medium-high heat. Add the onion, mushrooms, green pepper and garlic and saute 4 to 5 minutes, until the vegetables are starting to soften. Remove the veggie mixture from the pan, then add the ground beef to the pan and cook, stirring occasionally, until it's totally browned. Drain the excess fat, then add 1/2 teaspoon each salt and pepper, the diced tomatoes, tomato paste, the veggie mixture and 1 tablespoon each parsley and basil and stir to combine. Let the mixture simmer over low heat, 30 minutes.
  • Make the filling: Combine the ricotta, 1/2 cup mozzarella, 3/4 cup parmesan, the eggs, 1/2 teaspoon each salt and pepper and the remaining 3 tablespoons each parsley and basil. Stir to combine.
  • Assemble the lasagna: Spoon a thin layer of sauce onto the bottom of a 9-by-13-inch pan or five 6-inch disposable foil loaf pans. Spread 2 to 3 tablespoons ricotta filling on each lasagna noodle, then roll them up so that the cheese is on the inside of the roll. Lay them sideways in the pan(s). (Four roll-ups will fit in each loaf pan, or you can fill a 9-by-13-inch pan.) Top with the remaining sauce and plenty of grated mozzarella and parmesan.
  • If you're making the roll-ups right away, place the pan(s) on a baking sheet and bake at 375 degrees F for 20 minutes, until hot and bubbly.
