SOUR CREAM NOODLE BAKE

- Preheat the oven to 350 degrees F.
- Brown the ground chuck in a large skillet. Drain the fat, and then add the tomato sauce, 1/2 teaspoon salt and plenty of freshly ground black pepper. Stir, and then simmer while you prepare the other ingredients.
- Cook the egg noodles until al dente. Drain and set aside.
- In a medium bowl, combine the sour cream and cottage cheese. Add plenty of freshly ground black pepper and a pinch of red pepper flakes. Add to the noodles and stir. Add the green onions and stir.
- To assemble, add half of the noodles to a baking dish. Top with half the meat mixture, and then sprinkle on half the grated Cheddar. Repeat with noodles, meat and then a final layer of cheese. Bake until all the cheese is melted, about 20 minutes.
- Serve with crusty French bread.
- To freeze: Assemble the Sour Cream Noodle Bake in a disposable aluminum oven-proof pan and seal the top of the container with the lid or heavy foil. Seal the edges to prevent freezer burn and place in the freezer.
- To cook from frozen: Place directly in a 375-degree F oven and bake, covered, for 45 minutes. Remove the lid and bake until lightly brown and bubbly, about 20 minutes more.
BEEF NOODLE SKILLET

- Heat the butter in a large skillet over medium heat. Add the onion and garlic and cook for 1 minute. Add the ground chuck and sprinkle with salt and pepper. Cook the meat, crumbling as you go, until cooked through, about 5 minutes. Add the tomato paste and cook for about 30 seconds.
- Add the noodles, broth, 1 cup hot water, the mustard, paprika and Worcestershire sauce. Give a big stir and bring to a simmer. Cover and allow everything to simmer, stirring occasionally and adding up to 1/2 cup more water if necessary, until the pasta is al dente and the sauce has thickened, about 12 minutes. Stir in the sour cream and heavy cream and cook for 1 additional minute or until the pasta is tender.
- Remove from the heat. Sprinkle over the chives and serve directly from the pan.

- Start by browning the ground beef in a large skillet over medium-high heat. Once the beef is ready, add in the onion and celery and cook for about five minutes, or until the vegetables are tender.
- Next, add in the garlic and tomato sauce and stir to combine. Then, add in both the soups and the milk. Stir until everything combines well and heated through.
- Now, it's time to add in the potatoes. Peel and dice two or three large russet potatoes into bite-sized pieces. Add them to the casserole and stir to combine.
- Next, add in the frozen tater tots; you'll need a two-pound bag. Finally, add in the shredded cheddar cheese and the freshly chopped parsley. Stir to combine and then season with salt and pepper to taste.
- Bake the casserole at 350 degrees for about 45 minutes, or until it is hot and bubbly. Check it halfway through and if it seems to be getting too brown, cover with foil for the remainder of the cooking time. Once it's ready, serve; this casserole is sure to become a new family favorite.

- Grease a 9x13 inch casserole dish lightly and preheat the oven to 375°F.
- In a large, deep skillet over medium heat, cook beef with dried onion, garlic powder, salt, and pepper until browned; breaking it up as it cooks. Drain.
- Bring skillet back to medium-high heat. Stir in 3.5 cups of beef broth, scraping any browned bits from the bottom of the pan.
- Add the egg noodles and corn. Bring to a boil once, then reduce heat to a simmer and cook for 5-8 minutes, stirring frequently, until noodles are just tender (if noodles seem too dry, add up to 1/2 cup more broth).
- Once noodles are cooked (don't overcook!) and most of the broth has been used, turn off the heat.
- Stir in both soup cans, sour cream, and 1 cup of shredded cheese. Transfer to a prepared casserole dish and top with remaining cheese.
