STEAKS WITH CHIMICHURRI

Steaks with Chimichurri image

I think steak really is the perfect solution for a quick dinner. First, there's a steak to fit any budget, from pricey filets and rib-eyes (if it's a special dinner) to sirloin and bottom round for a regular weeknight meal. Second, steaks can so easily be changed up with different serving sauces. If you haven't ever tasted the bright-green magic of chimichurri sauce (a South American specialty) spooned over a medium-rare steak...oh, boy. You're in for a treat! I like to pile whole or sliced steaks on a cutting board next to a bowl of chimichurri, then let everyone serve themselves. So fresh and fun.

Categories     main-dish

Time 30m

Yield as many steaks as you like, with enough sauce for 8 to 10 steaks

Number Of Ingredients 10

2 cups packed cilantro leaves
2 cups packed flat-leaf parsley leaves
Small handful mint leaves
2 garlic cloves, grated
2 tablespoons red wine vinegar
1 teaspoon red pepper flakes
Kosher salt and black pepper
3/4 cup plus 2 tablespoons olive oil
Any steak of your choice: rib-eye, filet, sirloin, and so on, about 1 1/2 inches thick
2 tablespoons butter

Steps:

  • First, make the chimichurri by placing the herbs and garlic into a food processor (or blender). Add the vinegar, red pepper flakes, salt and black pepper to taste.
  • Pulse it a few times then continue pulsing while adding 3/4 cup of the olive oil. Keep pulsing until the mixture is pulverized, leaving just a little texture from the herbs. Transfer to a bowl, then cover and refrigerate until you need it (you can make it up to 1 day ahead, though it's best to make it the same day).
  • Season the steak on both sides with salt and pepper. Heat a cast-iron skillet over medium-high heat and add the butter and remaining 2 tablespoons olive oil. When it's melted and starting to brown, add a steak. Fry until medium rare, 3 to 4 minutes per side. Remove the steak and let it rest for 3 minutes. (If you're frying more steaks, just add a little more butter and oil to the pan as needed.)
  • Slice the steak. Serve it with the chimichurri on the side.

FLANK STEAK WITH CREAMY PEPPERCORN SAUCE RECIPE

Flank Steak with Creamy Peppercorn Sauce Recipe image

Flank steak is taken up a notch with the peppercorn cream sauce in this recipe. The secret to the thick and creamy sauce is the use of cream cheese.

Provided by Wayne Ortiz

Categories     Steak

Time 1h40m

Yield 3

Number Of Ingredients 13

For Steak:
1 lb flank steak
¼ cup or safflower oil canola oil
2 tbsp balsamic vinegar
4 cloves minced garlic
freshly ground black pepper
For Peppercorn Cream Sauce:
½ cup beef broth
1 tsp cornstarch
3 tbsp (any color) peppercorns
1 tbsp finely-chopped fresh sage
½ tsp garlic powder
4 oz Philadelphia cream cheese

Steps:

  • Steak:
  • Place the steak in a large zip top bag, and use a meat mallet to pound the steak to even thickness.
  • In a separate bowl, whisk together olive oil, balsamic vinegar, and garlic until well-combined. Pour the marinade into the zip top bag with the steak, seal, and then rub the marinade all around until it has evenly covered the steak
  • Refrigerate for at least 30 minutes, or up to 24 hours. When you're ready to cook, remove steak from the refrigerator, and let rest until it reaches room temperature. Then season both sides with salt and pepper.
  • To cook on the grill, preheat grill to medium-high heat. Then place the steak on the grill, and cook about 6 to 7 minutes per side for medium done-ness. (Cook about one minute more per side for medium-well, and one minute less per side for medium-rare.)
  • Remove, and tent with aluminum foil to rest for 5 to 10 minutes before serving. Cut the steak against the grain when ready to serve, and top with peppercorn sauce.
  • To cook on the stove, heat an extra 2 tablespoons of canola or safflower oil in a skillet (preferably cast-iron, but any will work) over high-heat.
  • Add steak, and cook about 4 to 5 minutes per side for medium doneness. (Cook about 1 minute more per side for medium-well, and 1 minute less per side for medium-rare.)
  • Remove steak, and tent with aluminum foil to rest for 5 to 10 minutes before serving. Cut the steak against the grain when ready to serve, and top with peppercorn sauce.
  • Peppercorn Cream Sauce:
  • In a small saucepan, whisk together (cold) beef broth and cornstarch. Turn heat to medium, and cook for 4 minutes, stirring occasionally.
  • Add in the peppercorns, sage, and garlic powder, and stir to combine. Then add in the cream cheese, and break it up with a bit with a spoon.
  • Continue stirring slowly until the cream cheese has fully melted, and the sauce is smooth and well-combined. Season with extra salt if needed, and remove from heat.
  • Serve immediately over steak.

  • Remove the stems from a handful of parsley and chop. In a medium bowl, whisk the olive oil and vinegar together. Add the Chimichurri spice and parsley, and whisk until completely coated.
  • Preheat grill. When the grill is hot, add the steak and cover grill. Cook for 5-6 mins per side on Med heat (or if charcoal grill, slightly less) for Medium Rare. Or cook longer until desired doneness.
  • (Note: if using your oven broiler instead of a grill follow these instructions instead of step 3.) Place metal rack 6 inches below top broiler, and preheat oven. Line a pan with foil and then add steak to pan then oven. Cook for 4-6 mins per side then flip. Watch oven closely as these steak cuts are thin and can burn easily in a broiler. 10 STEAK SAUCES YOU CAN MAKE IN MINUTES | BBC GOOD FOOD

From bbcgoodfood.com
  • Cheat's peppercorn sauce. 20 mins. This classic, creamy steak sauce can be ready in no time. Put 2 tbsp red wine vinegar into a large, non-stick frying pan and bring to a simmer.
  • Chimichurri. 10 mins. Chimichurri is a South American steak sauce similar to salsa verde – but with a little kick. It's the perfect balance for a rich steak.
  • Béarnaise sauce. 20 mins. If you like thick, creamy, mayonnaise-like sauces, opt for a tarragon-tinged Béarnaise. Put 2 egg yolks in a mini food processor and season with salt, pepper and a pinch of cayenne, then add 1 tsp tarragon vinegar.
  • Black bean & sesame sauce. 25 mins. Team the umami flavour of steak with a deeply savoury Asian-style sauce, thickened with hardy black beans.
  • Salsa verde. 10 mins. This piquant Italian green sauce doesn’t require any cooking. Chop a bunch of tarragon and 2 packs of parsley into small pieces and mix in a bowl with 1 tsp sea salt, 40g small capers, 3 tsp Dijon mustard and 2 crushed garlic cloves.
  • Quick red wine sauce. 20 mins. Opt for a bistro classic by making a rich, boozy jus. Put 250ml beef stock into a saucepan and reduce by half. Add 125ml red wine, 2 tsp dark brown sugar and 1 tsp balsamic vinegar.
  • Teriyaki sauce. 15 mins. This Japanese sauce has the sweet/savoury balance honed to a tee. Pour 350ml water into a small saucepan with 85g light brown sugar, 70ml light soy sauce, 1 large crushed garlic clove, and a 4cm piece of finely grated ginger.
  • Super-swift mustard sauce. 10 minutes. It doesn't get much simpler than a two-component sauce. Mix 2 tbsp Dijon mustard with 100g crème frâiche in a saucepan and heat gently until simmering.
  • Blue cheese sauce. 5 mins. Steak and blue cheese is a match made in heaven. The addition of stilton in this speedy recipe really packs a punch.
  • Mushroom sauce. 15 mins. We’d never turn our noses up at retro-style grilled mushrooms, but this creamy sauce is a little more refined. Pour 1 tbsp olive oil into a saucepan over a high heat and add 6 sliced chestnut mushrooms.
