3 thin (1/2 inch) rib-eye steaks
2 tablespoons PW Steak Rub, recipe follows
Butter, for frying
2 tablespoons coriander seeds
2 tablespoons fennel seeds
1 tablespoon mustard seeds
1/4 cup sugar
2 tablespoons garlic powder
2 tablespoons onion powder
2 tablespoons kosher salt
2 tablespoons ground black pepper
1 teaspoon red pepper flakes

Steps:

  • Season the steaks with the PW Steak Rub.
  • Heat a cast-iron skillet over high heat. Add some butter and let it sizzle and start to brown. Fry the steaks for 1 minute per side. Serve.
  • Heat a skillet over medium heat until hot. Toast the coriander, fennel and mustard seeds until aromatic, 2 to 3 minutes. Grind in a spice grinder until finely ground, then add to a bowl. Add the sugar, garlic powder, onion powder, salt, black pepper and red pepper flakes and mix to combine.

Chuck eye steak (6 oz, 1/2-inch thick*)
1/4 teaspoon Diamond Crystal kosher salt (divided)
1/4 teaspoon freshly ground black pepper (divided)
Avocado oil spray
2 large eggs
Pinch red pepper flakes
Pinch dried parsley (for garnish)

Steps:

  • Preheat your grill. Remove the steak from the fridge and season it with a pinch of kosher salt and black pepper.
  • Spray the grill with oil. Grill the steak, 2 minutes per side for medium-rare, or a total of 3 minutes in a dual contact grill.
  • While the steak is cooking, heat a nonstick skillet over medium heat, 3-4 minutes.
  • When the steak is done cooking, transfer it to a plate, loosely cover with foil and allow to rest.
  • While the steak is resting, cook the eggs. Spray the skillet with oil. Break 2 eggs into the skillet and fry them over medium heat until the whites are set, about 5 minutes.
  • Place the cooked eggs on the plate. Season them with a pinch of salt and pepper. Season the steak and the eggs with red pepper flakes, garnish with chopped parsley, and dig in!

600g medium-sized King Edward potatoes or Maris Piper potatoes
sunflower oil , for frying
2 x 200g/8oz beef steaks
2 handfuls mixed leaves
dressing of your choice, to serve
50g butter , softened
small handful parsley leaves, finely chopped
1 small garlic clove , minced (optional)
small squeeze lemon juice

Steps:

  • First make the butter: mash all the ingredients together with lots of cracked black pepper. Pat the butter flat between cling film (it'll chill quicker when thinner) and put in the fridge or freezer to harden.
  • Cut the potatoes into neat chips, rinse under hot water, then dry on a tea towel. Place the chips in a deep saucepan (they should only come up a third of the way) and just cover with cold oil. Place the pan on a medium heat, bring the oil to a simmer and give the chips a stir with a wooden spoon. Increase the heat so the oil bubbles really quickly and fry the chips, stirring occasionally so they don't stick, until crisp and golden - the whole process will take 15-20 mins. When they are done, scoop out with a slotted spoon onto a plate lined with kitchen paper and set aside.
  • Meanwhile, heat the griddle pan until smoking hot. Season the steaks with salt and pepper and rub with a little oil - how you cook your steak will depend on the cut you have chosen and its thickness. For a steak that's 2cm thick, cook it for 2 mins on each side for rare, adding 1 min more for every increasing degree of doneness. Just before lifting the steaks off the griddle, place half the butter on top of each. Serve the steaks with the chips, some mixed leaves and a tangy dressing.

1/2 onion ((white, brown or yellow))
1/2 cup panko breadcrumbs ((or 1/3 cup ordinary breadcrumbs))
1 lb/500g ground beef (mince)
1 garlic clove (, minced)
1 egg
2 tbsp ketchup
1 beef bouillon cube (, crumbled)
1/2 tsp Worcestershire sauce
3 tsp dijon mustard (OR 2 tsp dry mustard powder)
1 tbsp olive oil
2 garlic cloves (, minced)
1/2 onion (, finely chopped)
5 oz/150g mushrooms (, sliced)
2 tbsp unsalted butter
3 tbsp (35g) flour ((all purpose / plain))
2 cups (500 ml) beef broth / stock
1 cup (250 ml) water
2 tsp dijon mustard
2 tsp Worcestershire sauce
Salt and pepper

Steps:

  • Place breadcrumbs in a bowl. Use a box grater and grate the onion over the breadcrumbs. Mix with fingers, leave to soak for a few minutes.
  • Add remaining Salisbury Steak ingredients into the large bowl. Use your hands to mix until just combined. Mix well for a couple of minutes until the mixture becomes a bit "pasty" which will ensure your patties hold together well.
  • Divide into 5 and pat firmly into oval patties around 3/4" / 1 2/3 cm thick.
  • Heat oil in a skillet over high heat. Add the steaks and cook the first side for 1 minute or until browned, then flip and brown the other side (they will still be raw inside). Remove onto plate.
  • If skillet is looking dry, add a touch more oil. Add chopped onion and garlic and cook for 2 minute until onions are a bit translucent.
  • Add the mushrooms into the skillet and cook for 2 - 3 minutes until golden.
  • Turn heat down to medium. Add butter. Once melted, add flour and cook for 30 seconds, stirring constantly.
  • Gradually add in beef broth, stirring as you go. Once mostly lump free, whisk in remaining Gravy ingredients.
  • Add steaks along with the juices on the plate. Cook for 5 - 7 minutes, or until gravy is thickened, stirring occasionally around the steaks. If the gravy thickens too quickly, add more water.
  • Remove steaks onto a plate. Taste gravy and adjust salt and pepper to taste.
  • Serve salisbury steaks topped with the mushroom gravy - over mashed potato is ideal! Sprinkle with a bit of parsley if desired.

1 teaspoon Worcestershire sauce

2 large cloves garlic (minced)
1/3 cup red wine
1/2 cup beef broth

Steps:

  • Gather the ingredients.
  • Rub Worcestershire sauce evenly on both sides of filet mignon steaks, then sprinkle with salt and pepper.
  • Heat a large heavy skillet or cast iron pan over high heat until very hot, but not smoking. Add 1 tablespoon butter and swirl to coat the pan.
  • Brown steak 3 to 5 minutes on one side, then turn and cook an additional 3 to 5 minutes on the other side to medium-rare doneness. Turn only once, and remove steaks.
  • Make a tinfoil tent over filet mignon to rest the meat and keep warm.
  • Add the shallots and garlic to the same skillet you used to cook the meat (without cleaning it), stirring for 30 seconds.
  • Carefully pour in the wine and stir, scraping up the browned bits from the bottom, for about 2 minutes.
  • Add broth and bring to a slow boil. Cook for 3 minutes.
  • Add heavy cream and cook until sauce begins to thicken, from 3 to 5 minutes.
  • Whisk in Dijon mustard until smooth.

10 ounces top sirloin
Freshly ground black pepper

1 cup sliced mushrooms*
1 green onion (thinly sliced)
1 clove garlic (diced)
1 cup beef broth
2 tablespoons sour cream
1 tablespoon Dijon mustard
Steamed green beans

Steps:

  • Preheat your broiler on high and line a rimmed baking sheet with foil and lightly grease.
  • Lightly score 4 shallow cuts on both sides of the steak, two in each direction (per piece of meat if your sirloin is in smaller pieces).
  • Sprinkle both sides generously with freshly cracked pepper and salt.
  • Place steak on the prepared baking sheet and broil for 4 to 6 minutes per side, until steak reaches your desired level of doneness. Remove from oven, tent with foil, and allow to rest for at least 5 minutes before slicing across the grain.
  • While your steak is cooking, heat a medium skillet over medium heat and lightly grease with cooking spray or a small drizzle of olive oil. Add mushrooms and sliced green onions. Saute until mushrooms are lightly browned, 3 to 4 minutes. Add garlic and cook for 30 seconds.
  • Transfer vegetables to a plate and return pan to heat.
  • Add beef broth to your pan and bring to a simmer. Simmer for 3 to 4 minutes until reduced by half. Remove from heat and whisk in sour cream and mustard. Add salt and pepper to taste (if you use full-sodium beef broth, you probably wont need salt). If not ready to serve, you can keep the mixture warm over very low heat--do not boil.
  • Serve steak alongside steamed green beans, with mustard sauce spooned over both. Enjoy!

Steps:

  • Season the steak on both sides with salt and pepper.
  • Heat the olive oil in a large cast iron skillet over medium-high heat. Add the steak and cook, undisturbed, until browned on the bottom, 5-6 minutes. Flip and cook on the other side for 4 minutes for medium-rare doneness, or until cooked to your liking. Transfer the steak to a plate.
  • Return the skillet to medium heat and add the onion, garlic, and rosemary. Cook, stirring to scrape up any browned bits from the bottom of the pan, until the onion is soft and caramelized, about 6 minutes. 1 3/4 lbs round steaks, sliced 1/2 inch thick or 6 cube steaks (about 1-3/4 lbs.)
2 eggs
2 tablespoons water
1/3 cup all-purpose flour
1/3 cup cornmeal
1 teaspoon salt
1/2 teaspoon pepper
flour
4 -6 tablespoons vegetable oil
2 tablespoons flour
1 1/2 cups milk (about)
1/2 teaspoon salt

Steps:

  • Pound steak to 1/4" thick or ask butcher to tenderize; cut into 6 pieces, if using round steak.
  • Beat eggs and water together in pie plate.
  • Mix flour, cornmeal, salt and pepper on wax paper.

  • Dip in seasoned flour mixture to coat well.

Black pepper
3 tablespoons vegetable oil
2 medium onions, chopped
1 bell pepper, chopped
1/2 cup water, divided
2 tablespoons cornstarch
Serving suggestion: Steamed rice

Steps:

  • Sprinkle both sides of the steak with the salt, cayenne, and black pepper. Rub seasoning into meat. In a large skillet, heat oil over high heat until hot. Add steak and cook on high until browned, turning steak every 3 to 4 minutes. (Lower heat if necessary.) The steak should be well browned on both sides. Remove steak and add onions and bell peppers to pan. Cook until wilted. Place steak on top of onions and bell peppers and add 1/4 cup of water. Lower heat to medium, cover and simmer for 1 1/2 hours, turning steak every 20 minutes. (Note: when lifting lid of pot, let the water from the lid drain into the pot.) When steak is tender, remove steak and place on a platter. Mix cornstarch with 1/4 cup of water and add to the pot. Stir to make a gravy. Serve gravy over hot rice with steak.

extra virgin olive oil, for drizzling (EVOO)
3 tablespoons butter, plus some for buttering toast, divided
1 shallot, very finely chopped
1 teaspoon dried thyme leaves
1 tablespoon flour
1/2 cup white wine or 1/2 cup red wine
1 tablespoon Worcestershire sauce
1 cup beef stock
lots black pepper
salt, to taste
3 tablespoons grainy mustard
1/4 cup half-and-half or 1/4 cup heavy cream
2 slices white bread or 2 slices rye bread
4 large eggs
1 small bunch watercress, trimmed and cleaned

Steps:

  • Bring the steaks to room temperature.
  • Rub a cast iron skillet or heavy pan with EVOO and heat over a medium-high flame. When the pan is very hot, add the steaks and cook for 4 minutes on the first side, then 3 minutes on the second side for medium doneness. The steaks should be deeply caramelized before turning.
  • Place a skillet on the stovetop for the eggs and heat over medium-low flame.
  • Meanwhile, to a small skillet over medium heat add a drizzle of EVOO and 2 tablespoons butter. Add the shallot and sprinkle in the thyme leaves and sauté until soft, 2-3 minutes. Sprinkle with flour and stir a minute. Add the wine and stir to evaporate, 30 seconds. Add the Worcestershire sauce, stock, lots of pepper and a pinch of salt. Stir in the mustard and incorporate. Then stir in the half-and-half or cream and stir for 1 minute more. Turn off the heat.
  • Toast the bread while the sauce cooks and butter it while it's hot.
  • Add 1/2 tablespoon of the remaining butter to the hot egg skillet over medium-low heat and cook the eggs to desired doneness, two eggs at a time. Repeat with the remaining butter and two eggs.
  • Serve the steaks on halved buttered toast with eggs on top. Pour the sauce over the steak and eggs and garnish with watercress.

  • Cheat's peppercorn sauce. 20 mins. This classic, creamy steak sauce can be ready in no time. Put 2 tbsp red wine vinegar into a large, non-stick frying pan and bring to a simmer.
  • Chimichurri. 10 mins. Chimichurri is a South American steak sauce similar to salsa verde – but with a little kick. It's the perfect balance for a rich steak.
  • Béarnaise sauce. 20 mins. If you like thick, creamy, mayonnaise-like sauces, opt for a tarragon-tinged Béarnaise. Put 2 egg yolks in a mini food processor and season with salt, pepper and a pinch of cayenne, then add 1 tsp tarragon vinegar.
  • Black bean & sesame sauce. 25 mins. Team the umami flavour of steak with a deeply savoury Asian-style sauce, thickened with hardy black beans.
  • Salsa verde. 10 mins. This piquant Italian green sauce doesn’t require any cooking. Chop a bunch of tarragon and 2 packs of parsley into small pieces and mix in a bowl with 1 tsp sea salt, 40g small capers, 3 tsp Dijon mustard and 2 crushed garlic cloves.
  • Quick red wine sauce. 20 mins. Opt for a bistro classic by making a rich, boozy jus. Put 250ml beef stock into a saucepan and reduce by half. Add 125ml red wine, 2 tsp dark brown sugar and 1 tsp balsamic vinegar.
  • Teriyaki sauce. 15 mins. This Japanese sauce has the sweet/savoury balance honed to a tee. Pour 350ml water into a small saucepan with 85g light brown sugar, 70ml light soy sauce, 1 large crushed garlic clove, and a 4cm piece of finely grated ginger.
  • Super-swift mustard sauce. 10 minutes. It doesn't get much simpler than a two-component sauce. Mix 2 tbsp Dijon mustard with 100g crème frâiche in a saucepan and heat gently until simmering.
  • Blue cheese sauce. 5 mins. Steak and blue cheese is a match made in heaven. The addition of stilton in this speedy recipe really packs a punch.
  • Mushroom sauce. 15 mins. We’d never turn our noses up at retro-style grilled mushrooms, but this creamy sauce is a little more refined. Pour 1 tbsp olive oil into a saucepan over a high heat and add 6 sliced chestnut mushrooms.
