1 cup sugar
1/2 cup butter or 1/2 cup margarine
1 teaspoon baking soda
1 tablespoon sour milk or 1 tablespoon orange juice
2 eggs, beaten
3 ripe bananas, mashed
2 cups flour
1/4 cup chopped nuts

Steps:

  • Preheat oven to 350.
  • Mix butter and sugar together until smooth.
  • Mix baking soda and sour milk or orange juice, and set aside.
  • Add eggs, bananas, baking soda mixture, and flour to butter and sugar mixture, mixing well after each addition.
  • Stir in nuts.
  • Pour into greased or buttered loaf pan.
  • Bake at 350 for 1 hour.
  • Cool completely before slicing.

4 cups all-purpose flour
1 cup sugar
1/2 cup brown sugar
1 ½ teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
6 bananas, mashed (about 3 cups)
1 cup sour cream
2 sticks unsalted butter, melted and cooled
2 teaspoons vanilla
4 eggs

Steps:

  • Preheat oven to 350°. Grease and flour two 9x5 loaf dishes.
  • Whisk flour, sugars, soda, salt and baking powder in large bowl.
  • In a separate large bowl, mash bananas. Add sour cream, butter, vanilla, and eggs to the bananas. Whisk until well blended.
  • Gently fold the bananas into the flour just until all flour has been incorporated. Pour into prepared dishes and bake for about one hour.
  • Check after an hour with a toothpick and if still gooey then add 5 minutes, checking each time to see if the bread is done.
  • When ready, the loaves will be a dark, golden brown.

1/2 cup butter
1/2 cup granulated sugar
1/2 cup brown sugar
1 egg
2 bananas, mashed
2 tablespoons milk
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 pinch salt
1/2 cup walnut pieces (optional)

Steps:

  • Cream butter; gradually add sugars. Beat in egg until mixture is light. Sitr in bananas mashed together with milk. Sift together flour, baking soda and salt and add to banana mixture. Sitr only until combined. Add walnuts.
  • Turn batter into a greased loaf pan and bake at 350F for 1 1/2 hours or until a toothpick inserted in the centre comes out clean.
  • Makes 1 loaf.

1/2 cup light brown sugar, lightly packed
1/2 cup vegetable oil
2 extra-large eggs, at room temperature
1/2 cup sour cream
1 teaspoon pure vanilla extract
Grated zest of 1 orange
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon kosher salt
1/2 cup coarsely chopped walnuts (optional)
Cream Cheese Frosting, recipe follows
Walnut halves, for decorating (optional)
6 ounces cream cheese, at room temperature
6 tablespoons (3/4 stick) unsalted butter, at room temperature
1 teaspoon pure vanilla extract
2 1/2 cups sifted confectioners' sugar (1/2 pound)

Steps:

  • Preheat the oven to 350 degrees. Grease and flour a 9 by 2-inch round cake pan.
  • In the bowl of an electric mixer fitted with the paddle attachment, mix the bananas, granulated sugar, and brown sugar on low speed until combined. With the mixer still on low, add the oil, eggs, sour cream, vanilla, and orange zest. Mix until smooth.
  • In a separate bowl, sift together the flour, baking soda, and salt. With the mixer on low, add the dry ingredients and mix just until combined. Stir in the chopped walnuts, if using. Pour the batter into the prepared pan and bake for 45 to 50 minutes, until a toothpick inserted in the center comes out clean. Cool in the pan for 15 minutes, turn out onto a cooling rack, and cool completely.
  • Spread the frosting thickly on the top of the cake and decorate with walnut halves, if using.
  • Mix the cream cheese, butter, and vanilla in the bowl of an electric mixer fitted with the paddle attachment on low speed until just combined. Don't whip! Add the sugar and mix until smooth.

1/4 teaspoon freshly grated nutmeg
2 large eggs, lightly beaten

4 soft, very ripe, darkly speckled medium bananas, mashed (about 1 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan.
  • Whisk together the flour, pecans, granulated sugar, baking soda, cinnamon, 1/2 teaspoon salt and nutmeg in a large bowl. 5 large ripe bananas
1/2 cup buttermilk
3/4 cup granulated sugar
2 cups whole wheat flour
4 -5 cups bread flour
2 teaspoons salt

1 (7 g) packet instant yeast (2 teaspoons)
1 cup chopped walnuts

Steps:

  • Mash the bananas in a medium bowl. Stir in the buttermilk. Heat the mixture to 100 to 110 degrees Fahrenheit.
  • Mix the granulated sugar, whole wheat flour, four cups of bread flour, salt and cinnamon in another bowl.
  • Transfer the banana concoction to the bowl of your stand-type mixer. Add the yeast and stir. Add the flour mixture. With the dough hook, mix the ingredients together. Continue kneading, adding more flour as needed until the you have a soft, barely sticky bread dough. Continue kneading for five minutes or until the gluten is well formed. Remove the dough to a greased large bowl and cover with plastic wrap and let rise until doubled.
  • Deflate the dough and form two loaves. Grease and flour two 9 x 5-inch bread pans. Place the dough in the pans and cover with plastic wrap. Let rise until doubled.
  • Preheat the oven to 350 degrees. Bake for 25 minutes or until done. The bread will have a brown tone and the interior of the loaf will be at 190 degrees or higher.
