1/4 cup olive oil
2 onions, sliced thin
2 garlic cloves, chopped
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
1 teaspoon dried oregano
2 tablespoons pimientos, drained and chopped (one 4-ounce jar)
1 cup canned tomato, crushed in thick puree (from a 15-ounce can)
1 butternut squash, peeled, halved lengthwise, seeded, and cut into 1-inch dice (about 2 pounds)
1 1/2 cups water
2 teaspoons salt
2 cups kidney beans, drained and rinsed (1 19-ounce can)
2 cups corn kernels (fresh or frozen)
1/2 cup fresh basil, chopped (optional)

Steps:

  • In a Dutch oven, heat the oil over moderately low heat. Add the onions and cook, stirring occasionally, until translucent, about 5 minutes. Add the garlic, paprika, cayenne and oregano and cook, stirring, until fragrant, about 1 minute.
  • Stir in the pimientos, tomatoes, squash, water and salt and bring to a simmer. Cook the stew, covered, stirring occasionally, until the squash is almost tender, about 15 minutes. Uncover and simmer vigorously until almost no liquid remains in the pan, about 5 minutes. Add the beans and corn and cook until the corn is just tender, about 5 minutes. Stir in the basil.

1/4 cup olive oil
1 red pepper, seeded and cut into 1/4-inch dice
1 teaspoon cumin seeds
2 cloves minced garlic
1 teaspoon oregano
1/4 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1 teaspoon paprika
2 cups thawed frozen corn kernels
2 cups winter squash like pumpkin or acorn, cut into 3/4-inch dice
1 (16 ounce) can (2 cups) plum tomatoes, chopped, juices reserved
2 cups chicken broth
2 (16 ounce) cans black beans drained and rinsed
Salt and pepper
12 ounces medium wide egg noodles cooked and drained
2 jalapeno peppers, seeded and finely minced
1/4 cup toasted sunflower or pumpkin seeds, optional

Steps:

  • Heat olive oil until hot. Add red pepper and saute for 5 minutes or until somewhat tender. Add the cumin seeds and saute a few seconds until you get a whiff of their aroma. Add garlic, oregano, cinnamon, cloves and paprika and saute for a few seconds or until aromatic. Add corn, winter squash, tomatoes with their juices, the broth and bring to a boil. Cover and simmer for 15 minutes or until squash is almost tender. Add beans, cover and simmer another 5 to 10 minutes or until squash is completely tender. (If liquid seems to be evaporating too much, add more water.) Season to taste with salt and pepper and spoon over noodles. Garnish with jalapeno pepper and toasted sunflower seeds.

Andean Bean Stew with Winter Squash and Quinoa image

This savory, filling pot of beans is inspired by a Chilean bean stew. I've substituted quinoa for the corn that the authentic version calls for. Make it a day ahead for the best flavor.

Number Of Ingredients 12

1 pound dried pinto beans, rinsed and picked over, soaked in 2 quarts water overnight or for 6 hours
Salt
1 tablespoon extra virgin olive oil
1 medium onion, chopped
1 tablespoon sweet paprika
4 large garlic cloves, minced
1 bay leaf
1 (14-ounce) can chopped tomatoes, with liquid
1 pound winter squash, such as butternut, peeled and cut into 3/4-inch cubes
1/2 cup quinoa, rinsed thoroughly
Freshly ground pepper
3 tablespoons chopped fresh basil or parsley

Steps:

  • Place the beans and soaking water in a large pot. Add water if necessary to cover the beans by about 2 inches, and bring to a boil. Skim off foam, reduce the heat to low, cover and simmer gently for 60 minutes, or until the beans are tender but intact. Add salt to taste.
  • Heat the oil over medium heat in a large, heavy nonstick frying pan and add the onion. Cook, stirring, until the onion is tender, about 5 minutes, and add the paprika. Stir together for about a minute, and add the garlic. Cook, stirring, for a minute or two, until the garlic and onions are very fragrant but not brown, and stir in the tomatoes and 1/2 teaspoon salt. Cook, stirring often, until the tomatoes have cooked down slightly and smell fragrant, 5 to 10 minutes. Remove from the heat and scrape the contents of the pan into the pot of beans.
  • Bring the beans back to a simmer, add the bay leaf and winter squash, and simmer, covered, for 30 minutes, or until the squash and beans are thoroughly tender. Add the quinoa and simmer for another 20 to 30 minutes, until the quinoa is translucent and displays an opaque thread. Taste and adjust salt. Add a generous amount of freshly ground pepper. Stir in the basil or parsley, simmer for a couple of minutes more, and serve, with cornbread or crusty country bread.

1 28-ounce can diced tomatoes in juice
2 pounds Kabocha or butternut squash, halved, seeded, peeled, cut into 1-inch pieces
4 ounces green beans, trimmed, cut into 1-inch pieces
1 15- to 16-ounce can black beans, rinsed, drained
1 tablespoon minced seeded jalapeño chili
1/2 cup chopped fresh cilantro

Steps:

  • Heat oil in heavy large pot over medium heat. Add onion and sauté until tender and golden, about 7 minutes. Add garlic, chili powder and cumin and stir 1 minute. Add tomatoes with juices; bring to boil. Stir in squash and green beans. Reduce heat; cover and simmer until vegetables are almost tender, about 12 minutes. Stir in black beans and jalapeño. Cover and simmer until vegetables are tender, about 5 minutes longer. Stir in cilantro. Season with salt and pepper.

The sisters in this recipe are the Native American staples beans, corn and squash, which together offer a delicious main course for vegan diners. It comes from Maria Marlowe, a Times reader in New York, who said that she used the dish to help convince her family that eating vegan didn't have to mean sacrificing flavor.

1 tablespoon olive oil
3 cloves garlic, minced
3 acorn or carnival squash
1 cup red onion, diced
2 to 3 serrano chiles, minced
3 cups cooked black beans
2 cups corn kernels
2 cups broccoli florets, diced
1 1/2 cups cooked wild or brown rice (optional)
1/2 cup fresh parsley, minced
1 teaspoon paprika
Salt and pepper, to taste

Steps:

  • Heat oven to 400 degrees. Combine olive oil and 1/3 of the minced garlic in a small bowl; set aside.
  • Remove stem from squash and cut each in half from top to bottom. Scoop out seeds and reserve for another use. Brush inside of each squash with the garlic oil. Place squash flesh side up on a baking sheet and roast for about 35 minutes.
  • Meanwhile, prepare the filling: Heat olive oil in a skillet over medium-low heat. Add onion and chile and sauté for about 2 minutes. Add the remaining garlic, the beans, the corn, the broccoli and the rice, if using. Cook for 3 to 5 minutes, until corn is bright yellow and broccoli is bright green. Stir in parsley, paprika, salt and pepper and continue to cook for about a minute. Adjust seasonings if needed.
  • Remove squash from oven. Scoop corn and bean mixture into center of each squash. Serve right away.

  • In a small saucepan, heat the remaining 1/4 cup of oil. Add the remaining 1 teaspoon of paprika and cook over low heat until fragrant. Transfer to a small bowl.
  • Ladle the stew into bowls. Swirl in the paprika oil, sprinkle with the remaining 1/4 cup of chopped basil and serve.

  • Heat the oil in a soup pot. Add the onion and sauté over medium-low heat until translucent. Add the garlic and continue to sauté until the onion is golden.
  • Add all the remaining ingredients except for the salt and pepper and cilantro and bring to a slow boil. Lower the heat, then simmer gently, covered, until all the vegetables are tender, about 25 to 30 minutes. Check the water level from time to time. It should be thick and stew-like, not soupy, but if need be add a small amount of extra water for the ingredients to simmer in and not get dry.
  • Season with salt and pepper. If time allows, let the stew stand for 1 to 2 hours before serving, then heat through. Just before serving, stir in the cilantro. Serve in shallow bowls, and pass around extra cilantro for topping individual servings.
