CHERRY BONBON COOKIES
This is a very old recipe from my grandma. The sweet cherry filling surprises folks trying them for the first time. -Pat Habiger, Spearville, Kansas

- Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Add milk and vanilla. Combine flour and salt; gradually add to the creamed mixture. , Divide dough into 24 portions; shape each portion around a cherry, forming a ball. Place on ungreased baking sheets. Bake 18-20 minutes or until lightly browned. Remove to wire racks to cool., For glaze, combine sugar, butter and cherry juice until smooth. Drizzle over cookies. Dust with confectioners' sugar.

- Preheat the oven to 425°F, coat 2 baking sheets with nonstick cooking spray.
- Place the vegetables on the baking sheets in a single layer, lightly spray with nonstick cooking spray and season with salt and pepper om both sides, bake for 16-20 minutes, or until tender.
- Remove from the oven and reduce the oven temperature to 350°F, coat an 8 inch square baking dish with nonstick cooking spray, place 3 slices of the roasted eggplant in the bottom of the baking dish, spread half of the ricotta cheese, half of the chopped basil,and 1/4 cup shredded mozzarella cheese over that.
- Continue to layer with zucchini slices, yellow squash slices, and strips of red peppers, spread the remaining half of the ricotta cheese and basil, and 1/4 cup mozzarella cheese on top.
- Place the remaining 3 slices of eggplant over that and top with tomato sauce and the remaining 1/4 cup mozzarella cheese, bake for 10-12 minutes, or until heated through and the cheese is melted, cut into 4 squares and serve.

VEGAN CHERRY BON-BON COOKIES
Taste of Home's Cherry Bon Bon cookies were a holiday and gift staple in my house--So imagine how I, now a vegan trying to inspire others to adopt a plant-based and cruelty free diet, felt daunted by the idea of not being able to continue my holiday traditions. So instead of giving it up, I put on my big girl pants and worked at that recipe until it was vegan, and not one of my non-vegan coworkers would be complaining that I deprived them of butter. It is important for a vegan recipe that you use VEGAN sugar-- most people don't know that standard granulated and powdered sugar is refined with animal bone char, therefore making it non-vegan. If you can't find vegan powdered sugar at your grocery store, opt for an equal amount of unrefined CANE sugar and pulverize it in your blender until it becomes a powder. (Worst comes to worst, order vegan powdered sugar online from a reputable source and have it sent to your doorstep.) When cooking for someone with a soy allergy, opt for almond milk. If allergic to almonds, you may also find rice and hemp milk work just as well.

- 1. Preheat oven to 350 degrees.
- 2. Drain maraschino cherries in a collander, reserving the liquid in a small cup, bowl or jar. Dry off cherries with a paper towel, tossing around to remove all excess juice that may gather at the bottom of the collander. Set aside.
- 3. In a large bowl, cream Earth Balance and vegan powdered sugar until light and fluffy. Add soymilk and vanilla extract. In a seperate bowl combine flour and salt; gradually add to the creamed mixture.
- 4. Gather any loose moist crumbs with your hands and press together to form a ball of dough. Divide dough into 24 portions; shape each portion around a cherry. Try to handle lightly and as quick as possible to prevent your hands from getting greasy. Dough should fit around each cherry with no air bubbles inside. Pinch and smooth the dough together and roll around in palms. For a more perfect domed "bon-bon" shape, press cookie into a circle tablespoon, and remove gently to retain shape. Place onto a baking sheet lined with parchment paper.
- 5. Bake at 350 degrees for 18-20 minutes or until lightly browned. Remove to wire racks to cool.
- 6. For glaze, combine the powdered sugar, melted Earth Balance and cherry juice until smooth. Drizzle over cookies. Dust with additional powdered sugar if desired.

- Preheat the oven to 325 degrees, coat an 8 inch square baking dish with nonstick cooking spray.
- In a large bowl, combine the cream cheese and 1/2 C sugar; beat well, beat in the eggs, one at a time, then beat in 1/2 tsp vanilla and 1/4 tsp lemon juice until well combined.
- Spoon mixture into the baking dish and bake for 40-45 minutes, or until golden; remove from the oven and let cool for 10 minutes, do not turn off the oven.
- Meanwhile in a small bowl, combine the sour cream and the remaining 1 TBS sugar, 1/2 tsp vanilla, and 1/4 tsp lemon juice; mix well, spread over the top of the cheesecake and bake for 10 minutes.
- Let the cheesecake cool, then cover and chill for at least 4 hours, or overnight.
CHERRY BONBON COOKIES
These cookies have become a Christmas tradition in our family. They are easy to make ahead and freeze--just let them thaw THEN roll them in the powdered sugar. The cookies look like a typical tea cookie but there is always a surprise when you bite into it and discover the yummy cherry center. You will want to make a double batch.

- Drain the cherries and place on paper towels to dry.
- Beat butter until creamy.
- Gradually add 3/4 cup powdered sugar, beating well.
- Stir in flour, salt, milk and vanilla.
- Shape into 24 balls. Press each ball around a cherry, covering completely.
- Place on ungreased cooke sheets.
- Bake at 350 degrees for 18-20 minutes. Transfer to a wire rack to cool completely.
- Roll each cookie in powdered sugar to coat.

- Preheat the oven to 350 degrees, in a medium bowl, beat the butter and 3/4°C confectioners sugar until creamy, stir in the flour, milk, vanilla and salt; mix well.
- Shape into 24 balls, press each ball around a cherry and place on an ungreased baking sheet, bake for 18-20 minutes or until light golden, cool on a wire rack.
- Place 2 TBS confectioners sugar in a shallow dish and roll the bonbons until lightly coated.
- In a small bowl, combine the remaining 1/4 C confectioners sugar and the 2 tsp reserved cherry liquid; mix well, place in a resealable plastic storage bag, cut a small corner off the bag and drizzle the glaze over the bonbons.
- Allow the bonbons to cool until the glaze is firm, then serve, or store in an airtight container until ready to serve.
