Spinach Raspberry Salad with Balsamic Reduction image

A fresh and vibrant spinach raspberry salad is finished with a sweet and tangy balsamic reduction for a side dish full of flavor. Ready to serve in minutes!

½ cup balsamic vinegar
Juice of ½ lemon
1 tablespoon extra virgin olive oil
1 teaspoon honey
pinch black pepper
8 ounces baby spinach leaves ((227g))
6 ounces raspberries ((170g))
¼ cup slivered almonds ((25g))
shaved parmesan
black pepper to taste

Steps:

  • Place the balsamic vinegar in a small pot. Bring to a simmer for 5 to 10 minutes to reduce it. Let cool.
  • Mix together the lemon juice, oil and honey with a pinch of pepper. Set aside.
  • Place the spinach in a large serving bowl, pour over the lemon and honey dressing and toss the leaves.
  • Place the raspberries and slivered almonds on top of the spinach and top with shaved parmesan.
  • Use a spoon to drizzle over the balsamic reduction and finish with a little freshly grated black pepper.

This was served at our wedding and it was really delicious. I thought all spinach salads were pretty much the same until I tried this dressing.

6 cups spinach
1 cup raspberries
1/2 red onion, sliced very thinly
1 cup pecans, candied if you have them
2 tablespoons poppy seeds
2 tablespoons Dijon mustard
2 tablespoons honey
1 cup canola oil or 1 cup safflower oil
1/3 cup raspberry vinegar

Steps:

  • Mix the oil into the poppyseeds, dijon and honey.
  • Add vinegar.
  • Shake well-- this dressing stays emulsified very well.
  • You can toss with the rest of the salad ingredients or toss with just the spinach and then garnish the top with the other ingredients, or plate each serving and pour dressing over, whatever you choose.

1/4 cup olive oil
2 teaspoons Dijon or honey mustard
2 teaspoons raspberry-flavored vinegar
Freshly ground black pepper, to taste
1 teaspoon garlic salt
1 teaspoon dried basil
2 teaspoons sugar
1/8 teaspoon salt
4 cups baby spinach, washed well
4 mushrooms, sliced
4 strawberries, sliced
1/2 medium red onion, halved and sliced
Candied Almonds, recipe follows
1/2 cup sugar
1 cup slivered almonds

Steps:

  • In a large bowl, whisk together olive oil, mustard, vinegar, pepper, garlic salt, dried basil, sugar, and salt until dressing is well combined.
  • In another large bowl, combine the spinach, mushrooms, strawberries, and red onion. Add the dressing and toss well. Sprinkle with the Candied Almonds.
  • In a saute pan over medium heat, add the sugar and heat until it melts, about 6 minutes. Add the slivered almonds and cook until the sugar has caramelized, stirring constantly. Remove from the pan to a parchment lined sheet pan and cool. Once it has cooled, break into small pieces and set aside.

This is a sweet and tart condiment that is designed to be savored much like fine caviar. The flavors are so intense that a little goes a long way. This makes a great "from my kitchen" gift! This recipe can be enjoyed three ways: The delicious aromas produced will overtake any odors while you are cooking the reduction; the recipient of the gift will appreciate the homemade gift; you will be overwhelmed with praise when they taste it! Serve as an appetizer on a sweet cracker, smoked Gouda or both; slice of apple or pear; peach half or slice of mango. Serve on lamb chops or London broil. Don't stop there! There are too many serving possibilities to list. Serving size is ¼ tsp. Servings per batch: 192

1 1/2 cups good quality balsamic vinegar
1 1/2 cups fresh ripe raspberries
3 tablespoons granulated unbleached cane sugar

Steps:

  • Wash raspberries and pat dry with a lint-free cloth.
  • In a sauce reduction pan or 9" skillet, pour in vinegar and rapidly bring up to temperature. (about 175°f) Add sugar and dissolve. Raise temperature to near boil. Add raspberries and stir mixture until reduced by about 2/3.
  • Be careful not to scorch. You must continue stirring until complete.
  • This can be canned in 4 ounce jars for gift giving.
  • Canning instructions: While still hot; dip reduction into sanitized 4 ounce canning grade jars, leaving ½" headspace. Place sanitized sealable lids onto jars and place in water bath canner and process for 10 minutes.

1 tsp honey

1 clove garlic, minced
1/2 small shallot, minced
1/4 cup canola oil
8 cups baby spinach
1 cup fresh raspberries
2 oranges, peeled, membranes removed, segmented
1 red bell pepper, cored, seeded and cut into 2-inch strips
1 medium carrot, peeled and coarsely grated

Steps:

  • Heat oven to 350°F. Toast sunflower seeds on a cookie sheet for 4 minutes. Whisk together vinegar, honey, herbs, garlic, and shallot. Slowly whisk in oil. Season with salt and pepper and set aside. In a bowl, toss spinach with 2 tbsp vinaigrette. Season with salt and pepper. Toss with sunflower seeds and remaining ingredients and serve.

This recipe came from a neighbor, and I adapted it to my family's tastes. It's a nice special salad to serve anytime-and, with fresh spinach from the garden, it's great for summer picnics! I've long enjoyed cooking...ever since my mother put me in charge of my first Sunday roast when I was 12.

2 tablespoons raspberry vinegar
2 tablespoons raspberry jam
1/3 cup vegetable oil
3/4 pound fresh spinach, rinsed well and drained
3/4 cup whole toasted pecans, divided
1 cup fresh raspberries, divided
2 large kiwifruit, peeled and sliced 1/4 inch thick

Steps:

  • With whisk or a blender, blend vinegar and jam. Add salad oil in thin stream while whisking. Set aside. Mix spinach, half of nuts, half of raspberries and all of the dressing. Top salad with remaining nuts, berries and kiwifruit. Mix again before serving.

  • Drizzle balsamic vinaigrette over top. Grind a little black pepper over salad and serve. Makes 4 servings.
