1 package (10 ounces) frozen chopped spinach
2-1/2 cups herb-seasoned stuffing mix
1 medium onion, finely chopped
3 eggs, beaten
1/4 cup grated Parmesan cheese
6 tablespoons butter, melted
1/2 teaspoon garlic salt
1/4 teaspoon pepper

Steps:

  • Cook spinach according to package directions; drain well, squeezing out excess liquid. Combine spinach with remaining ingredients in a large bowl. Shape into 1-in. balls; place on an ungreased baking sheet. Bake at 350° for 10 minutes or until very lightly browned. Balls can be made ahead and refrigerated overnight before baking.

2 cups finely crushed herb-seasoned dry bread stuffing mix
½ cup grated Parmesan cheese
2 teaspoons garlic powder
½ teaspoon ground black pepper

½ cup melted butter
3 eggs, beaten

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl combine spinach, stuffing mix, Parmesan cheese, garlic powder, black pepper, Italian seasoning, melted butter and eggs. Shape into walnut-sized balls and place on a baking sheet.
  • Bake in preheated oven for 20 minutes, or until heated through and browned.

2 cups seasoned stuffing mix (Pepperidge Farms)
2 tablespoons onion powder
7 eggs, beaten
1/2 cup butter, melted
1/2 cup parmesan cheese
1 cup feta cheese
1 tablespoon dill
1 tablespoon garlic
1/4 teaspoon pepper
1 tablespoon accent flavor enhancer

Steps:

  • Defrost and squeeze all water from spinach.

2 (10 ounce) packages frozen chopped spinach, defrosted (or 2 pounds fresh cooked, drained and chopped)
6 -7 medium potatoes (coarsely shredded and soaked in cold water until ready to use)
3 large eggs, slightly beaten
1/4 cup melted butter
seasoning salt or salt
pepper
1/2-1 teaspoon garlic powder (optional, or use 1-2 teaspoons fresh minced garlic)
1 small onion, chopped
3 tablespoons chopped fresh parsley (can use 1 teaspoon dried)
1 tablespoon fresh finely chopped dill (can use 1/2 teaspoon dried dill)
1 cup feta cheese, crumbled (or to taste)
1/2 cup grated parmesan cheese (or to taste)
3 -4 tablespoons butter

Steps:

  • Set oven to 350 degrees.
  • Butter a shallow 2-quart casserole dish.
  • Squeeze out as much moisture from the spinach as possible with your hands; set aside.
  • Drain the potatoes from the cold water and squeeze out any excess water with your hands, and place the potatoes into a large bowl.
  • To the potatoes add in eggs, 1/4 cup melted butter, salt, pepper, chopped onion, parsley, garlic powder (if using) and dill; mix well to combine.
  • Transfer HALF of the mixture into the prepared baking dish.
  • Top/sprinkle with all of the spinach, and then the feta.
  • Top/spread with remaining potato mixture.
  • Cover with foil and bake for about 30 minutes.
  • Uncover and sprinkle with Parmesan cheese and dot with butter, place back in oven covered or uncovered (if you prefer a crispy top on your casserole then leave uncovered).
  • Bake for another 30 minutes.
  • Delicious.

I got this recipe from my mother-in-law, who says these were my veggie-hating husband's favorite childhood snack. They are a great way to get kids to eat spinach!! Prep time includes chill time. This can be a little salty depending on the butter, cheese and bread crumbs you use, if you are concerned about saltiness use unsalted butter and garlic powder in place of the garlic salt. I have also made these with only 1/2 cup of melted butter (1 stick) and they are just as good but you need to spray the cookie sheet because they will stick.

1 (10 ounce) package frozen chopped spinach, thawed and drained
1 (6 ounce) container crumbled feta cheese
½ teaspoon paprika
½ teaspoon onion powder

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 24-cup mini muffin tin with cooking spray.

My own invention that I took to a party yesterday and got asked for the recipe aseveral times. Aus puff pastry comes as interleaved sheets of which there are 6 in a 1kg packet.

Number Of Ingredients 12

200 g feta cheese, crumbled
1 small onion, finely chopped
200 g frozen spinach, defrosted and squeezed dry
1/2 cup dried breadcrumbs
2 lightly beaten eggs
1 tablespoon lemon juice
2 tablespoons pine nuts, toasted
1 tablespoon chopped of fresh mint
1/2 teaspoon dried dill
salt and pepper (lots of pepper)
2 sheets puff pastry, defrosted and cut in half
2 tablespoons milk

Steps:

  • Preheat oven to 200c.
  • Mix all ingredients together (except pastry sheets).
  • Lay pastry sheets (with plastic attached) out on your counter.
  • Fill a large piping bag (no nozzle) with the mix and squeeze out a long line of mix down the long edge of the pastry-about 1/2 an inch in from that edge.
  • No piping bag? Divide mix in 4 and spoon this along the long edge.
  • Roll up, peeling the plastic away as you roll.
  • Seal the inner edge with a little water.
  • Cut each of these rolls into three, then cut each smaller roll ALMOST through in the middle (leave the bottom intact). When they are cooked, I cut them right through to make a bite sized roll, but cooking them this way keeps them moister.
  • Place on a baking tray, brush each with a little milk, then cook in pre heated oven for about 20 minutes or until golden brown on top and cooked through.
