Green Beans with Lemon and Garlic image

2 pounds green beans, ends trimmed
1 tablespoon extra-virgin olive oil
3 tablespoons butter
2 large garlic cloves, minced
1 teaspoon red pepper flakes
1 tablespoon lemon zest
Salt and freshly ground black pepper

Steps:

  • Blanch green beans in a large stock pot of well salted boiling water until bright green in color and tender crisp, roughly 2 minutes. Drain and shock in a bowl of ice water to stop from cooking.
  • Heat a large heavy skillet over medium heat. Add the oil and the butter. Add the garlic and red pepper flakes and saute until fragrant, about 30 seconds. Add the beans and continue to saute until coated in the butter and heated through, about 5 minutes. Add lemon zest and season with salt and pepper.

3 pounds green beans or snow peas, trimmed
3 lemons
4 tablespoons extra virgin olive oil or butter

Steps:

  • Bring a large pot of water to a boil, and salt it (for this, the same water may be used as that in which the potatoes have been blanched); add the beans, and cook until they are just bright green and tender, about 5 minutes.
  • Drain the beans, then plunge them into a large bowl filled with ice water, to stop the cooking. When they're cool, drain them again. Zest the lemons, and julienne or mince the zest. Juice the lemons.
  • To serve, place the oil in a large skillet, and turn the heat to medium high. Add the beans, and cook, tossing or stirring, until they are hot and glazed with the oil, 3 to 5 minutes. Toss the beans in a serving bowl with the lemon juice, top with the zest, and then serve.

I love this bean recipe it looks good and tastes very good! I love beans still quite crisp but if you like them well done it's your call! The touch of cardamom gives a slightly mysterious flavor hint. For a Vegetarian version use vegetable stock

1 2/3 cups chicken stock
2 tablespoons lemon juice, fresh
2 teaspoons lemons, zest of, grated
1 teaspoon fresh ginger, grated
1/2 teaspoon mixed peppercorn, coarsely grated
1/4 teaspoon cardamom, ground
coarse salt
2 lbs fresh green beans, trimmed
1/2 lemon, rind and white pith removed

Steps:

  • Combine the stock,lemon juice, lemon zest& ginger in a saucepan.
  • Bring to a boil and continue boiling until reduced to apprx 1/3 cup (apprx 10 minutes).
  • Stir in the pepper corns, cardamom& salt, set aside.
  • Meanwhile steam the beans until tender crisp apprx 7 minutes or you may place them in boiling water for apprs 5 minutes- Do not over cook they should still be crisp and bright green.
  • Chop the 1/2 lemon quite fine (you have already removed it from the rind and the pith).
  • Heat the glaze (chicken stock et al) so it is piping hot just as the beans are finished cooking.
  • Drain the beans, place on heated serving platter.
  • Pour glaze over the beans& scatter the chopped lemon on top.

Steps:

  • Grate the zest of 1/2 lemon, and squeeze 1 1/2 tablespoons lemon juice.
  • In a saucepan of boiling salted water, cook beans until tender, about 10 minutes. Drain, and return to pan. Remove from heat. Toss with oil, 3/4 teaspoon salt, and lemon juice. Serve sprinkled with lemon zest.

I made this recipe for Dîner en Blanc, because it is great served cold or hot. The veggies are layered in a Dutch oven and cooked without stirring until the beans are soft and tender.

3/4 lb green beans (3 cups cleaned)
2 cups onions, thinly sliced
3/4 cup parsley, minced
1/4 cup dill, minced
1/4 cup mint, minced
1 1/2 tablespoons garlic, minced
salt
fresh ground black pepper
1/4-1/2 cup olive oil
1/8-1/4 cup fresh lemon juice
lemon wedge

Steps:

  • Wash the beans, break off both ends, and break them in half.
  • Mix the herbs and garlic together.
  • In a Dutch oven, layer 1 cup of onions on the bottom of the pan, top with beans, then herb mix, season with salt and freshly ground black pepper, and drizzle with 1/2 of the olive oil.
  • Finish with the remaining cup of onions before drizzling with the last 1/2 of olive oil.
  • Cover and cook over medium high heat until the pan lid is hot. As soon as the lid is hot, turn the heat down to low and simmer for 1/2 hour, or until the beans are very soft and tender.
  • Stir in 1/8 cup lemon juice.
  • Taste and add more lemon juice, salt, or freshly ground black pepper, as needed.

One of my favorite desserts to prepare, this recipe is right out of Conde Nast's 1997 publication of PARTIES, page 119. I like it because it is low in gluten and not too sweet. Next time, I will try using gluten-free flour. The cardamom glaze adds a nice surprise.

1 cup natural unsalted shelled pistachio
1 cup granulated sugar
1/3 cup flour
1/2 cup unsalted butter, melted
1 teaspoon vanilla
1/2 teaspoon almond extract
3/4 cup egg whites or 5 large egg whites
1/4 teaspoon salt
1/2 cup confectioners' sugar, sifted
1 tablespoon lemon juice
1/8 teaspoon ground cardamom
2 tablespoons chopped unsalted shelled pistachios

Steps:

  • Make torte: Preheat oven to 375°F and butter a 9-inch springform pan. Line bottom of pan with a round of wax paper and butter paper.
  • In a food process or blender finely grind pistachios with 3/4 cup of sugar. Transfer mixture to a large bowl and stir in flour, butter, zest, vanilla, and almond extract. In another bowl with an electric mixer, beat whites with salt until they barely hold soft peaks and gradually beat in remaining 1/4 cup sugar until meringue just holds stiff peaks. Stir one third of meringue into pistachio mixture to lighten and fold in remaining meringue gently but thoroughly. Pour batter into pan.
  • Bake torte in middle of oven 40 minutes, or until it pulls away from side of pan and top is golden brown. Cool torte in pan on rack 10 minutes. Run a knife around edge of pan and remove side. Invert torte onto rack and remove bottom of pan. Carefully peel off wax paper and cool torte completely. Torte may be prepared up to this point 1 day ahead and kept wrapped well in plastic wrap in an airtight container at room temperature (I have found it also freezes well).
  • Make glaze: in small bowl whisk together the confectioners' sugar, lemon juice, and cardamom until smooth. Drizzle over top of torte and let drip down the side.
  • Garnish top with chopped pistachios and let glaze set. Recipe suggests serving with ice cream, but I never have.

This is posted for my sister Jac, she loves cardamom. We were playing around in the kitchen one afternoon and came up with this lovely cake, which has great texture and lots of flavor.

1 1/2 cups flour, all purpose
1 teaspoon baking powder
1/4 teaspoon salt
1 -2 teaspoon cardamom, best if freshly ground
1/4 teaspoon nutmeg, best if freshly ground
1/2 teaspoon cinnamon, best if freshly ground
6 tablespoons butter, unsalted, room temperature
1 cup sugar, white
2 eggs, large
1 lemon, grated zest
2 tablespoons lemon juice
1/2 cup buttermilk
glaze
1 cup icing sugar
2 tablespoons milk
1 lemon, juiced
1 tablespoon lemon zest

Steps:

  • Preheat your oven to 350°F.
  • Coat a 9 x 5 loaf pan, with nonstick cooking spray.
  • Sift flour, baking powder, salt, cardamom, nutmeg and cinnamon into a bowl and set aside until needed.
  • In a large bowl, beat the butter and sugar using an electric mixer on medium speed until it becomes light and fluffy, (3 - 4 min).
  • Lower mixer speed to low and add the eggs one at a time and blend for 1 minute each. Now add the grated zest, lemon juice and buttermilk, mixing well.
  • Lastly, you will add the flour mixture and blend until just combined. ( do not overmix).
  • Spoon the batter into the pan and smooth out the surface and bake in the center of the oven for 30 - 40 minutes (until a toothpick comes out almost clean, with a few moist crumbs attached).
  • Cool the cake in its pan on a wire rack for 10 minutes while you make the glaze.
  • For the glaze stir together all the ingredients until well blended. ( Make the glaze to your preference).
  • Remove cake from pan and spread the glaze on top and enjoy.
  • Make the glaze to your preference, either thick or thin.
