Cheesy Chicken Melt With All of the Onions Relish image

Perfectly cooked chicken with a big pile of caramelized onions makes an ideal chicken melt sandwich. This recipe was created by Tyler Kord.

Yield 2 large sandwiches

Number Of Ingredients 11

4 teaspoons vegetable oil
2 boneless, skinless chicken breasts, about 1 pound (450g), sliced lengthwise into 4 flat 1⁄2-inch-thick (1.3cm-thick) pieces
1 teaspoon kosher salt
1⁄2 yellow onion, sliced
1 teaspoon distilled white vinegar
1⁄2 red onion, thinly sliced
1⁄2 bunch scallions, white and green parts, thinly sliced
2 tablespoons fried shallots (store-bought is totally great)
3 tablespoons salted butter
4 slices rye bread
4 slices good melting cheese, such as Colby Jack or Muenster

Steps:

  • Heat a large sauté pan with 2 teaspoons of the vegetable oil over high heat until it is smoking. Season the chicken with 3⁄4 teaspoon of the salt and gently place it in the pan. Cook on one side until almost cooked all the way through, about 5 minutes. Flip the chicken and cook on the other side for about 30 seconds, or until it is no longer pink. Transfer the chicken to a plate to rest.
  • Immediately add the yellow onion and the remaining 2 teaspoons vegetable oil to the pan. Stir and cook for 5 minutes, or until the onion is dark and smells amazing but is not burnt. If it's getting too dark, lower the heat. Add the vinegar, along with the liquid that has collected on the plate where the chicken is resting, and turn the heat to low. Simmer the onion for 2 to 4 minutes, or until the liquid has evaporated. Transfer the onion to a bowl, using a rubber spatula to scrape the pan out completely. When the onion has cooled down a little, about 5 minutes, add the red onion, scallions, fried shallots, and remaining 1⁄4 teaspoon salt and stir to combine.
  • Melt 2 tablespoons of the butter in the same pan. Lay out two slices of bread on your work surface and place a slice of cheese on each. Top each piece of cheese with half of the onions, two pieces of chicken, and another slice of cheese, and cover with another slice of bread. Place the sandwiches in the pan with the melted butter. Cook over medium heat, about 3 minutes, until the cheese on the bottom slice is melted and the bread is nicely toasted. Add the remaining 1 tablespoon butter to the pan and flip the sandwiches. Cook them for another 1 to 2 minutes, until the cheese is melted and the bottom is toasty. Remove the sandwiches from the pan, cut them in half, and insert a frilly toothpick or cocktail sword near the top in each half and serve.

1-1/2 cups reduced-fat plain yogurt
2 tablespoons lemon juice, divided
1-1/2 teaspoons garam masala or curry powder
1/2 teaspoon salt
1/4 to 1/2 teaspoon crushed red pepper flakes
4 boneless skinless chicken breast halves (6 ounces each)
1-1/2 cups chopped cantaloupe
1/2 cup chopped seeded peeled cucumber
2 green onions, finely chopped
2 tablespoons minced fresh cilantro
1 tablespoon minced fresh mint
1/4 cup toasted sliced almonds, optional

Steps:

  • In a small bowl, whisk yogurt, 1 tablespoon lemon juice, garam masala, salt and pepper flakes until blended. Pour 1 cup marinade into a large bowl. Add chicken; turn to coat. Cover; refrigerate up to 6 hours. Cover and refrigerate remaining marinade., For relish, in a small bowl, mix cantaloupe, cucumber, green onions, cilantro, mint and remaining lemon juice., Drain chicken, discarding marinade in bowl. Grill chicken, covered, on a lightly oiled rack over medium heat or broil 4 in. from heat until a thermometer reads 165°, 6-8 minutes on each side. Serve with relish and reserved marinade. If desired, sprinkle with almonds.

1 teaspoon fennel seeds, lightly crushed
3/4 cup pitted and smashed brined green olives (such as Lucques)
1 tablespoon freshly squeezed orange juice
2 teaspoons orange zest
2 tablespoons olive oil
Salt and freshly ground black pepper
2 bone-in, skin-on chicken breast halves (about 10 ounces)

Steps:

  • Preheat oven to 450 degrees and set the rack in the center.
  • Place fennel seeds in a small frying pan and toast over medium heat until fragrant. Place seeds in a small bowl and combine with olives, juice, zest, and 1 tablespoon of the olive oil. Season with salt and freshly ground black pepper and set aside to marinate, at least 15 minutes.
  • Heat a large ovenproof 12-inch frying pan over medium heat. Rub chicken with remaining 1 tablespoon of olive oil and season with salt and pepper. Add chicken to the pan, skin side down, and cook until golden brown, about 3 minutes. Flip chicken over with tongs and put it in the oven to finish cooking. (If you're not using an ovenproof frying pan, transfer the chicken to a baking dish first). Roast chicken for about 15 minutes, or until the internal temperature registers 160 to 165 degrees on a meat thermometer.
  • Take the chicken out and let it rest for 5 minutes so that the juices settle. Transfer to a serving plate and top with reserved olive mixture. Serve.

1 1/2 lbs chicken breasts, boneless, skinless
6 sandwich buns
1 tablespoon vegetable oil
butter or mayonnaise
1/4 cup melted butter
2 teaspoons paprika
1 teaspoon onion powder
1 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1/2 teaspoon white pepper
1/2 teaspoon black pepper
1/2 teaspoon salt
1/2 teaspoon dried thyme leaves
1/2 teaspoon dried oregano leaves

Steps:

  • Freeze chicken and sandwich rolls until ready to serve.
  • Mix spices and store in a covered container; label it "Blackened Chicken Spices".
  • To prepare, thaw rolls and chicken.
  • Coat each piece of chicken with spice mix (adjust to taste of each person, as the mixture is spicy!).
  • Using a pastry brush, baste each piece of chicken with the melted butter. Grill chicken, basting with butter after turning once.
  • Grill about 10 minutes or until no longer pink in the middle, or cook in a large nonstick skillet in hot oil over medium heat for about 10 minutes.
  • Serve on sandwich rolls spread with butter or mayonnaise.
  • Suggested sides: chips, watermelon salad.

1-1/2 cups reduced-fat plain yogurt
2 tablespoons lemon juice, divided
1-1/2 teaspoons garam masala or curry powder

Steps:

  • For relish, in a small bowl, mix cantaloupe, cucumber, green onions, cilantro, mint and remaining lemon juice.
  • Drain chicken, discarding marinade in bag. Moisten a paper towel with cooking oil; using long-handled tongs, rub on grill rack to coat lightly. Grill chicken, covered, over medium heat or broil 4 in. from heat 6-8 minutes on each side or until a thermometer reads 165°. Serve with relish and reserved marinade. If desired, sprinkle with almonds.
  • Yield: 4 servings.
  • Editor's Note: To toast nuts, bake in a shallow pan in a 350° oven for 5-10 minutes or cook in a skillet over low heat until lightly browned, stirring occasionally.
